The Coral-star peach is a peach that is said to 'have it all'. Beautiful appearance, size and flavour. They are a large peach with attractive colour with skin 60-80% bright orange-red. It has great sweet peach flavour and aroma. This freestone peach is unique in that is does not brown when cut, making it one of the best peaches for canning and freezing!
We also have a limited quantity of the famous White Lady peaches. This peach is VERY popular with the people who dehydrate their peaches. It is a sub-acid white flesh peach which makes it seem sweeter! I bought my dehydrator based on tasting one of the dried White Ladies. It was delectable! The White Lady is fantastic just for eating too!

White Lady Peaches - $39 for 25 lbs (full box) and $19.50 for half, $7.75 for a 3L basket
The Burbank plum is a medium size plum with a red mottled yellow skin. Its flesh is deep yellow and has very good flavour! This is considered a Red Plum.
Just a reminder - All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!
Eva and Rene grow both the traditional tea roses and antique roses! The Antique rose is a little different looking then the traditional Tea Rose we are accustomed to. The Antique rose is meant to have a large center rose that opens accompanied by several side buds which may or may not open. This offers lovely contrast for bouquets! Most of the antique roses have a lovely fragrance.

A Gift from Us to You!
We'd like to offer everyone who orders this week a complimentary jar of our Pear Apple Sauce. We'll have the jars at the checkout, so be sure to pick one up on Friday.
Our Pear Apple Sauce is made for us by Naamon and Selema Martin of Orchard Hill Produce with apples from the folks at Orchard Hill and pears from Palatine. The sauce is sweet without anything but steam added in the canning process. It is tasty by the spoonful or with yogurt and even better made into freezer pops for a healthy, yummy cold treat on those hot summer days.
Last call for Blueberries
I love that the blueberry season is about a month long. What a lovely treat! It almost seems to go on forever compared to many of the summer fruit that has such a short season. But, all good things must come to an end and this is the last week for blueberries (unless we're *really* lucky). If you do not have any in the freezer or made into jam, this may be the last chance.
New Additions to the Order Form:

- We have both organic and conventional new crop apples!! Martin's Family Fruit Farm has two new varieties of apple available this week - Paula Red and Jersey Mac. Apple Creek Farm has Yellow Transparent and Vista Bella (see their note below!)
- Transpire Organics is back and has added - savoy cabbage, yellow slicer tomatoes, Roma tomatoes, ground cherries, tomatillos and crookneck squash
- Vipul has added Sweet Potato Leaves. There is a recipe below.
New Crop Organic Apples - a note from Mary at Apple Creek Farm
We have been busy picking the first of the new crop certified organic apples.
The very first variety is the Yellow Transparent or Harvest as some people call them. They are an tart apple that mellows and softens quickly in the heat of summer. These are the apples that old timers grew up with - sneaking into the neighbours tree with a salt shaker in hand to eat the apples raw and green! Many people tell us they make the best apple sauce. We always have calls from neighbours looking for pails of this sauce. I have used these apples in crisp or upside down cake but you really cannot forget to add a little sweetener to it - or add icecream to the dessert when you serve it... yummy!
We are also picking the Vista Bella apples. These are red and green apples - pretty to look at and good for eating fresh or in your favourite desert. My children are the taste testers here and they favour the vista bella over the transparent for eating raw. They have make a point of tasting lots as we pick ...
As with all apple varieties - but especially at this time of year, store the apples in the refrigerator to keep them crunchy.
Some recipes from our Suppliers:
Marigolds in Salads - A Recipe from Brenda Knechtel
Brown one cup diced bread cubes lightly in butter. Place them on a plate and sprinkle with 1 tablespoon of marigold petals, fresh or dried. Cover with waxed paper and let stand at room temperature for a few hours. Make a green salad with French dressing and pour the marigold. croutons on top. Toss the salad at the table.
Spicy Sweet Potato Leaf Stir Fry - from Vipul Savalia
Ingredients
- One bunch of sweet potato leaves (volume of the untrimmed bunch was 6-10 Qt.)
- 1-2 hot dried red chilies
- 1-2 cloves of garlic
- Salt, soy sauce, pepper to taste
Method
- Fill a pot with water and put it on the stove over high heat. The pot should be large enough to hold the leaves, and there should be enough water to cover the leaves.
- Strip the leaves from the branches. The thin stems that attach the leaves to the branch are tender enough to eat, so there is no need to remove only the leaves. Wash and drain the leaves.
- Mince 1-2 cloves of garlic.
- Chop the chilies fine, and combine with the garlic.
- When the water comes to a boil, turn off the heat and carefully add the sweet potato leaves. After 2 minutes, remove and rinse with cold water. Chop the leaves. (This step was recommended by the cookbook to remove traces of natural slime from the leaves.)
- In a large skillet or wok, heat some vegetable oil over high heat. When it is hot, add the garlic and chilies. Cook for 30 seconds, stirring often.
- Add the greens, then stir-fry the mixture until the greens are tender, about 2 or 3 minutes.
- Add salt, pepper, soy sauce, or other flavorings to taste.
Note: Separating the leaves from stems for some bunches of leaves can be a tedious chore, but with this particular batch of sweet potato leaves, the leaves were attached to the tough branch by a long stem, and I was able to quickly strip them using a pair of scissors.

Melissa's Bagel Belly Recipe
After reading this recipe from Melissa, Andrew and I both agree that we need to make these soon:
Here's one I came up with that's a favourite (I call them Bagel Bellys because they are loosely based on the veggie sandwiches from Pot Bellys in the States):
Take one multigrain bagel (from Grainharvest) and spread one half with cream cheese. Add a few slices of Millbank cheese (I like marble) to this half as well. Slice several mushrooms and cover the cheese with them. Place both bagel halves in a toaster oven and toast until the cheese melts. When done feel free to top your bagel with your favourites. I like lettuce, tomato, and a bit of mayo myself. Put both halves together and enjoy!

Despite a short delay, two types of Peaches and Red Plums are now available on the order form. We have arranged to have shelled peas on Friday again also!
The Red Haven peaches have come into their season! These are the peaches that all other peaches are compared to. They have a red flush over an orange skin. The flesh is yellow with a bit of red near the pit (lovely colour for canning). It is juicy and sweet! They are fabulous for cooking, baking, canning, freezing, dehydrating and of course, for eating fresh!
We still have the Harson peaches. It is a sweet, firm, medium to large size freestone peach that was bred here in Canada to be a similar variety to the Red Haven. We found out Harson peaches to be quite large and very full of flavour with a wonderful texture! It is also very good for all the uses mentioned for the Red Haven peach!
Just a reminder - All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!
Also, to prevent bruising, peaches are not completely ripe. Spread them out on newspaper on their side or bottom (not stem down) and not touching each other and they'll ripen over the next few days.

I ended up with an extra half box of peaches unexpectedly last week in addition to the peaches I had ordered. We ate them, put them in smoothies and froze some. I needed to find something else to do with them. There weren't enough to peel and can. They were cling stone which would have made the experience of canning a little more difficult then I wanted it to be.
I found a recipe for Peach Nectar online. I decided to freeze it instead of using a water-bath.
Peach Nectar. It is really easy!
- Peel and cut up peaches
- Add 1 cup of water to every 4 cups of peaches.
- Bring to a boil, then puree.
- Add a sweetener of your choice, to you liking (honey, maple syrup, sugar)
- Bring back to a boil
At this point I cooled the nectar and froze it. You can do the same or jar it and process it. Here is a link on Canning Safety if you are not sure how to safely do so.
I may do the same with pears later in the year.
Some highlights for this week's order:
- Stock up on Green Table Foods yumminess! They will not be available again until after Labour Day.
- If you haven't noticed, it is flower season! We have wild bouquets, glads and roses! They are in the 'plant' section.
- Peaches, pears and blue plums! Palatine is in full swing. The pears are finally ready after a small delay this week.
- We had a teaser week last week. Organic sweet corn is now available to order! To BBQ soak the full cob for 10 minutes and throw on the grill for 15 and you will have some of the best corn ever!
- We will not have Golden Hearth for the next three weeks. Stock up as they will be on vacation on August 26th and Bailey's will be closed Sept 2nd for the Labour Day weekend. The cookies and macaroons would last that long if you don't eat them first!
- Theresa from Garden Party has made Cucumber relish kits. She will supply all the veggies needed to make three pints. Also included will be the recipe with full instructions. What a great introduction for a novice canner!
- She will also have acorn squash - The first Fall squash. Can you believe it?
- Bell Peppers are ready from Lena Burkhart. She is starting with a mixed bag. I can't wait to start roasting them!

- Soiled Reputation has Fava beans for you

I've been enjoying the lovely bouquet of roses from Palatine all week! It's been a pleasure too look and and the fragrance is divine!
Here is a note about the peaches and other fruits and roses that we get from Palatine:
For Friday we have HARSON PEACHES, SHIRO PLUMS AND ROSES.
The Shiro plum has a mild flavour that is pleasently sweet and juicy! It is round yellow plum usually medium in size. Due to the harsh weather this year, their size is a bit smaller than the early golden plums.
This week kicks off the start of the freestone peaches! All the peaches we have from here on in are great for eating, cooking, canning and dehydrating!
The first of the freestone peaches we have is the Harson! Many of you will remeber from last year how amazing the taste and bouquet was of the Harson peach. It got rave reviews from you! The Harson peach is a sweet, firm, medium to large size freestone peach that was bred at the Harrow Station here in Canada. It is considered to the the Canadian Red Haven! Ever since the Red Havens were discovered back in the 30's in the United States, research stations have been trying to imitate, duplicate are create trees like the Red Haven that will survive in different climates. This is one of the varieties Agriculture Canada has developed....but of course, they cannot call it Red Haven.

Excuses Excuses...
I had all intentions to send this email on Friday night, but I was a little distracted. Saturday morning we welcomed a new little girl into the Ward Family. She doesn't yet have a name (someone has already suggested "Bailey") but she's lovely and thriving on her very own zero mile diet (breastfeeding)! We'll do our best to rest up and see you at Friday's pickup.
On to the email that was mostly written before all the excitement started:
Wow! Friday was quite the day for local food! We had lots of amazing food ordered and even more on the spontaneous table that the farmers could not anticipate would be ready! August really is an amazing month and we look forward to bringing more yumminess to you!
More Organic Produce for you!
We would like to congratulate Angie on all the hard work that goes into organic certification as Fertile Ground is now certified organic! All the farmers who are certified organic follow many steps to attain certification by a third party. Thank you to all the farmers who have taken this extra step for our health and the heath of the earth!

This week we ran out of some items. I forgot to order yogurt (so I made some myself!) and I think we used the last of our paneer from Local Dairy in a lovely curry tonight. The kids and my mom had cheese and crackers for lunch today, so I need to restock the cheese drawer! I also used the last of the Gluten Free Sunflower Bread from Green Table foods making BLTs, so Iâ€TMm really happy that it is available again this week. Weâ€TMre offering their yummy GF Multigrain Bread too, but if we donâ€TMt get 4 or 5 of each ordered we my not be able to get both types. It freezes beautifully so I often stock up!
You likely have noticed that there are peaches on the order form this week! Yay! Just a reminder that the peaches we get from Eva and Rene are †tree runâ€TM so youâ€TMll get some that are riper and some that may need a few days, the sizes will vary and the peaches will have fuzz on them! The cool thing about the fuzz? You know that they have not been through the fungicidal baths or paraffin coating that happen at the grading and sorting station.
Maryrose canâ€TMt wait to have grilled peaches with a Crème Fraiche and maple syrup drizzle. Give it a try - it is a great summer time dessert. You'll find me with peach juice running down my chin!
I wish that I could offer you organic corn on the order form and watermelon too, but with this weather the crops are very slow to start. If weâ€TMre lucky there will be some on the spontaneous table on Friday!
Farmers who had so much to sell us last year are finding it hard to fill orders, so I ask that you be patient while these little bursts of rain bring their produce back again. Thank you for supporting them through us. We ask the farmers to set their own prices and the odd time even pay them a little more than they would normally see to a wholesale customer for.
Last year one farmer was not able to fill her order for organic peas, so I asked another organic farmer if he had peas to fill the orders. Luckily he was able to help us out and when I asked him the price, I held my breath. We try not to increase the the price you are paying after youâ€TMve ordered and if his peas cost us more to buy weâ€TMd likely just reduce our markup. His price was lower than I expected so I told him Iâ€TMd rather pay himmore for his peas. I think I took him completely by surprise! Most farmers are asked to sell their produce for as little as possible.
A few weeks later the same farmerâ€TMs wife was paying Wendell the pickup fee (which we have stopped charging the old order farmers) and Wendell was absolutely surprised when she suggested paying a little more than what was suggested... When I heard this I smiled and told Wendell the story of the peas! It was a very nice gesture that went both ways.
Zucchini, Zucchini, Zucchini!
I donâ€TMt think this weather has affected the zucchini plants at all... We have lots of bulk zucchini available and Denise was nice enough to share a great recipe!
Zucchini Salsa
- 2 medium sized zucchini, finely diced
- 3 spring onions, whites only, chopped
- 1/2 bunch cilantro leaves, chopped
- 1/2 tomato, finely diced
Dressing
- Salt & Pepper, to taste
- 1 Tbsp rice vinegar
- 1 Tbsp lemon juice
- 2 Tbsp olive oil
Mix together & let chill for 1 hour.
This isn't a precise recipe as I was trying to copy this after having it at a Mexican restaurant in Vancouver. You can add garlic or diced avocado (recommended) if you like. Diced feta cheese is good too. I have also used red onion along with the white ones.
