A Message from Rachael:

After Friday will be our first two week break of Autumn. We'll enjoy the break and you will enjoy Thanksgiving leftovers and all the great fall foods that store so well!

I sent the email yesterday and immediately after I remembered a few things I needed to let you know about!
  • Green Table Foods is back on the order form! Look for new lower prices and some new products coming soon too!
  • Gobble Gobble - I mentioned the chocolate turkeys from Anna Tolazzi. Did you see the lovely chocolate turkey at the checkout? It's equivalent to over 6 chocolate bars and brushed with lovely colours. Each one is unique! You can see a photo here. Last year we raffled one turkey off for charity and raised $110! This year you can get yours for $30 - What a deal!
  • Traditional Foods wants your feedback! Please fill out their survey at https://docs.google.com/spreadsheet/viewform?formkey=dFZHb2FmSlJxeG44VlVJZ3QxV0JkckE6MQ before Thursday October 4th for your chance to win a free cut of beef or pork! We want to know what you are looking for in GMO Free meats!
  • We are SO EXCITED to bring you local nuts (yes, some may say that we are local nuts)! This Friday we will have black walnuts (in shell or shelled), heart nuts (so pretty and fun to open) and chestnuts (the sweetest chestnuts ever!) They often run out of chestnuts, so if you want to stock up I'd suggest getting them this week. We hope to get more on the 19th, but it will depend on their supply!

These chestnuts are smaller than those you'll get in the store, but they are so much sweeter and fresher! All our nuts come from Grimo Nut Nursery in Niagara-on-the Lake. Isn't that amazing?

Now for some tips on getting to the meat of these nuts:

How to prepare and eat Sweet Chestnuts:
  1. Eat fresh using a paring knife to cut off the skin and fibrous covering
  2. Boil - Place sweet chestnuts into a pot with cool tap water. Cover pot while boiling and stir occasionally on medium high for:
    • medium size - 10-12 min
    • large size 15-20 min
      Using a slotted spoon scoop out a few nuts at a time and as soon as they are cool enough to handle, but still hot, cut them in half and pop them out of their skins.
  3. Roast - First pierce the skin to allow hot air to escape while cooking. Use a sharp paring knife to cut a slash or an "X" through the skin, but not the nut meat. The larger the cut the easier it will be to peel.
    • Chestnut Pan - Roast them by shaking the pan over medium heat for 20 minutes.
    • Microwave oven - place a dozen chestnuts around a microwave plate and cook on high for 4 minutes
    • Oven -  Place chestnuts on a cookie sheet and sprinkle with water. Bake at 400 degrees F for 15-20 minutes. Place one uncut chestnut on the sheet with the others. When it "pops" they are ready to eat.
  4. Enjoy!

It's our favourite food holiday and we love to bring you the best of the season! Where else can you get the best of local for your harvest table?

Here's some info about Snyder Heritage Farms Turkeys and Chickens:

Back on the offering list after Katharina was away for the summer are chocolate bars from Anna Tolazzi! They are my favourite chocolate treat and I love that there are vegan options!

Some meat specials from Snider's Pork Sausages and Traditional Foods:

From Carolyn:
Snider's Pork Sausage will be offering ground sausage meat (i.e without the casings) for making chili, spaghetti sauce, casseroles of various kinds, meatballs, etc. It's more flavourful than using plain hamburg/ground beef. We have 3 "flavours" -   country (same as the sausage we've been selling), garlic, and Italian (spicier than the others). and there are only
10 packages of each flavour available.

It's EXTRA VALUE week at Traditional Foods!

A Message from Maryrose:

Harvest season is such a wonderful time. There is so much produce to pick from and I don't want to miss out on any of it. We still have many vegetables available in BULK for preserving or freezing. In fact I just added half bushels of bell peppers from Edward & Selema Martin.

In addition to that we now have their colourful mums available. I can't wait to start decorating for fall. The straw bales and Indian corn will look great too. I love the cool crisp weather that comes with this time of year. Soups, stews and chili are beginning to make their way back into the menu rotation these days.

One of my favourite soups to make is out of the Simply in Season cookbook. It is in the spring section of the book but I like to make it all winter long. It is a sausage and greens soup. It's quick and easy soup to make. Here is an adaptation of the recipe.

Traditional Foods is has three specials this week.
They are holding over their special on smoked pork chops until the end of September. Smoked loin chops hardly need any cooking time, another quick meal solution. Get a 5 pound box for $35.
They are also offering a 5 lb and a 10 lb pork box. The 5lb box contains spare ribs and smoked ham steak for $26. The 10lb box has spare ribs, a boneless ham roast and smoked loin chops for $52.

We were lucky enough to receive a delivery of grass fed organic ground beef from Vibrant Farms this week. It could not have come at a better time as we just found out that Traditional Foods will not have ground beef in stock until near the end of October. .

The Nutty Bakers is back on the offering list. They are all staffed up at their new shop and ready to provide their great savoury pies and sweet treats.

Don't forget that this is the week to stock up on items from McKechnie, J&D Peters and Barrie's Asparagus. We'll put another order in on October 5th so they are always fresh!

More local goodness:
  • Sacred Basil, makes a healing stress relieving tea - Transpire Organics Farm
  • Mini Red Peppers, (1 inch round) red stuffing peppers - great appetizers - Garden Party
  • Tomatoes a plenty - We are nearing the end of tomato season.
  • Naked Seed Pumpkins, These seeds have a very thin see through husk they are my favourite roasted seeds. Lester & Irene grew these especially for us this year.
  • Torta - triple crème camembert - Monforte
  • Tofu is still available
  • There is still some ice cream left. The jury is still out as to if we will have it available throughout the winter.

There are some local events you may be interested in throughout the next week or so:

International Plowing Match - in Roseville, September 18 - 22nd - A "tented city" covering 100 acres will become home to some 600 exhibitors and vendors for 5 days.There will be attractions for everyone ... knowledge and education to be gained by today's decision makers, tomorrows leaders and those who are enjoying their leisure time.

Every Little Bit Helps - Thursday September 20th - An evening for the community to help raise some money for our neighbours who lost a lot due to the fire on King St. in Waterloo on Thursday August 23rd. Featuring local musicians, Shawn Kellerman, Saigon Hookers, Buns and Stagg, Daddy Long Legs and more to be announced.

Monforte is hosting The Hootenanny 2012 - Sunday September 30th - It's classic Pot-Luck.
Bring a dish for 10 people, your own plate, cutlery and glass. If you want to sit down rather than two-step bring a chair or stool. They will put up tents and Chef Mark Cutrara of Cowbell has offered to do some cooking. The Hoot is at Monforte's property on 49 Griffith Road in Stratford

Shanah Tovah! For those for you celebrating new year 5773, may it be sweet! Did you know that it is traditional to eat apples and honey during Rosh Hashanah to symbolize a sweet year? I know there were lots of people buying Honeycrisp Apples on Friday, so if you did, sit down and savour one and let that sweetness last for a whole year. Our honey from Bauman Apiaries is also very sweet and this week we added honey in the comb to our order form. Why now? Because someone asked! Thank you for asking for the amazing food you want each week!

Fall weather has arrived! This is a lovely time for slippers and blankets in the mornings and evenings while we still have lovely warm days. We will have Selema Martin's mums again soon, but we were waiting for the weather to cool at night so that the blooms emerge! They are so big and lovely that they are worth the wait!

Look for:
  • Organic Tofu is on the order form (for real this time) and will likely be in the spontaneous cooler as well
  • This week's Traditional Foods specials
    • This week only! ORDER a 5lb pack of sausages for quick school day dinners. (includes 5 -1lb packages including Ginger, Garlic, and other) for $25 AND
    • We are holding over our special on smoked pork chops until the end of September. Smoked loin chops hardly need any cooking time, another quick meal solution. Get a 5 pound box of Smoked Pork Loin Chops for $35.
  • We have frozen organic fruit (strawberries, raspberries and Saskatoon Berries) as well as frozen rhubarb from August Harvest
  • Minced and pureed garlic in jars as well as those tasty pickled garlic flowers (scapes) available from August Harvest as sampled in Waterloo last week
  • We are still able to get seedless Coronation and seeded blue table grapes through Pfenning's, even though the Palatine grapes are done for the season

  • Decorative Indian corn is available. This is a project that the child of one of our farmers has taken on. She grows the corn and sells it in bunches tied with ribbon!

A Message from Rachael:

The weather is changing. It's been a lovely summer for spending time near water, but not everyone (including farmers) have not been so lucky. These cooler temperatures and that rain should bring some fall crops like lettuce back, but the farmers are hedging their bets if you don;t see many on the order form. It's been a hard year!

The winter squash are starting to be ready. Have you been hankering for spaghetti squash, delicata (also known as Sweet Potato Squash), acorn or any of the other amazing squash we have available?

Things to look for:
  • Green Table Foods on the order this week! Their products have long dates, so you can stock your fridge!
  • Leeks from Edward and Selema Martin! We've been waiting for these
  • Fountain Grass - a lovely purple colour. I love two at the entrance to my home!
  • Edamame - fresh from Brenda K!

  • A reading group is forming to read The Transition Handbook: from oil dependency to local resilience, by Rob Hopkins. A Message from Rachael:

Welcome back to Tuesday! (yes, ordering ends tonight!)

Amazing farmers to end our weekend!
My family had a very full and wonderful weekend!

Friday was a treat to spend with my children, as my mom usually spends the day with them while I work! We intended to do some preserving, but a walk to the library and pizza lunch tired us out. We came home, played with friends in the back yard and enjoyed a quiet fruit only pickup while socializing with fruit loving friends! Before bed, I stemmed some grapes and put them on a sheet pan in the freezer. Frozen grapes are super sweet!

Saturday was tomato day! A scant 25 lbs of San Marzano tomatoes were cored and X'ed on the bottom, scalded and shocked, peeled and seeded then packed into jars and processed. All three kids were very helpful with our 8 year old showing that canning tomatoes is in the blood... she is a natural! We now have 6 L of tomatoes and 2 L of tomato juice! Grapes were transferred into freezer bags and sliced peaches went onto the sheet pans in the freezer (they are still there).

Sunday we went to the CNE. The snowbirds did amazing stunts as part of the air show and we enjoyed the midway and the food building too! I think the highlight for the kids was the farm building where all the animals were and there were lots of interactive farming displays targeted at children. It was a long day!

Monday included my mom making sauce (yum!), visiting with family and friends and a lucky detour on the way home. We passed a lovely field of zinnias that caught my eye and stopped at the farm gate. When our 5 year old commented on the lovely tomatillos, the farmer was a bit surprised that he knew what they were! We got to talking and an hour later we had picked our own corn (best dinner ever!) and enjoyed about an hour with retired teachers turned farmers. They rent about 40 acres of their 50 acre farm to someone growing corn, and are growing food for themselves and their farm gate stand on the remaining 10 acres. We left their farm with tomatoes, flowers, watermelon and that lovely corn! A bit closer to home we came upon Candace from Transpire Organics at her CSA pickup and she shared some of her ground cherries with us (and she will share some with you on Friday, if you wish!)

Monday made me especially thankful for farmers. They are good people who are stewards of the land. They take pride in what they grow and going out to the field to pick something for dinner! I'm so glad that Mr and Mrs Stewart were so kind to give complete strangers an amazing tour!

Preserving Workshop!!
I've mentioned preserving a few times above - If you would like to join me for a hands on preserving session, please email me! We will be canning tomatoes and possibly making grape juice too (or taking suggestions on other things to preserve) on Sunday at my home. If you would like to join us, you need to bring the food to preserve, and the jars and lids and we can work together to 'put up' some tasty food. If you want to come and help, we can always use extra hands!

Now - There have been quite a few late additions to the order from the weekend. Take a look for:

  • Bulk and individual squash! Harbingers of fall
  • Naked Seed Pumpkins - the BEST for roasting!
  • Sparkling cider to celebrate the end of the first week back!
  • Cheese from Gordon's Goat Dairy!
  • New crop apples - Jersey Mac and Ginger Gold (great with cheese)
  • Curry for Friday night dinner! Butter Chicken or Chana Masala. Mmm...
  • Tortilla chips, wraps for lunches, tacos, because they are the best!
Yakne - A Middle Eastern eggplant stew recipe from Kelly!
  • 1 large eggplant cut into 1 inch cubes (I usually use 3 large eggplants to increase the amount of this dish)
  • ¼ cup of olive oil
  • 1 large onion, chopped
  • 1 lb lean ground beef
  • 15 oz of tomato sauce (I usually substitute with 4-5 medium sized chopped fresh tomatoes since the eggplant and tomatoes are in-season at the same time)
  • 2 tsp salt
  • 1/8 tsp black pepper
  • 1 ½ tsp cinnamon (I increase to 1tbsp when using 3 eggplants, especially if you like the taste of cinnamon )
  1. In a large frying pan, heat oil over high heat. Add eggplant cubes and sauté, stirring frequently to prevent sticking, until eggplant is lightly browned. Remove eggplant from pan and set aside.
  2. To same pan add 1tbsp of oil and onion and sauté until lightly browned.
  3. Add beef to pan and brown.
  4. Add reserved eggplant cubes back to pan, add tomato sauce (or chopped tomatoes), and seasonings. Mix well and simmer on low heat for 30min.
  5. Serve over brown rice.

The end of fruit season is in sight. We are planning for another run for fruit next Friday if Eva and Rene are not sold out!

BOSC PEARS
The Bosc pear is famous for its' fabulous storing capacity. Bosc pears can last into January if kept at the right temperature (such as your crisper in the fridge or cold storage - about 10 degrees C ). Bosc pears have a long tapering neck and russet skin. The creamy white flesh is crunchy yet tender with a sweet-spicy flavour.They are good cooking pears as they hold their shape well.

EMPRESS PLUMS
The Empress plum is a large plum fantastic for fresh eating. It has a deep blue skin over a nice yellow flesh with sweet flavour!

LATE ITALIAN PRUNE PLUMS
The Late Italian plums are great for cooking, baking, canning etc. They are a 'prune' plum and have a hint of prune taste that many people look for in a plum! These are the plums that turn a deep burgundy red when cooked.

Just a reminder - All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!

HEIRLOOM TOMATOES - Grown naturally in a field that has been fallow for 2 years! The tomatoes are coming on strong now. All the varieties are available in both baskets and bulk this week
  1. The newest addition to the heirloom variety list is the San Marzano - I strongly suggest you go to Wikipedia (or Google it for fun) for a description of this amazing tomato and its' history! Pretty impressive... here is the link http://en.wikipedia.org/wiki/San_Marzano_tomato The San Marzano is a plum tomato with a strong, sweet flavour. Known for its' thicker flesh, thin skin and fewer seeds it is the premium tomato to use for tomato and pizza sauces. We have San Marzano tomatoes in 3 litre baskets to start. If they come in great volume we hope to offer them in bulk later in the season.
  2. Red Brandywine tomatoes - There are different varieties of Brandywine tomatoes but one site described the Red Brandywine to be the 'original' original Brandywine......now that is heirloom! It's heritage dates back into the 1800's. They are excellent tomatoes for all purposes including canning and slicing.
  3. The name of this heirloom tomato is unknown. We do know the seed dates back as far as Abe Lincoln. So for lack of a better name I used to called them 'Abe Lincoln' tomatoes. It was brought to my attention that 'Abraham Lincoln' tomatoes do exist and are an heirloom tomato! Ours might be these Abraham Lincolns, but since we cannot say for sure I am going to have to rename ours something very creative........like 'red heirloom' tomatoes. :)
TABLE GRAPES!
Rene has a fair number of varieties of table grapes. For Friday we have a blue seedless table grapes. Wonderfully sweet!

ROSES

Eva and Rene grow traditional tea roses along with antique roses which are very popular in Europe! The antique roses look similar to what you used to see in grandmother's or even your great grandmother's garden! They are varieties of old that are being reintroduced by Eva and Rene.

A Guided Farm Tour!
A couple weeks ago Sharon, who drives to bring the amazing produce in from the local Mennonite farms for us each week, took Bailey's Members Terry and Susan with her to pick up the orders from our old order farmers. I asked Susan to write a little something to share with you and here it is:

Hi Rachael,

Thanks for the opportunity to accompany Sharon on her rounds last Friday. On our 9am to 3pm journey through the exceptionally beautiful farmland surrounding Waterloo, we visited eight suppliers of everything from flowers to honey, vegetables, fruits, baked goods, and meat products. Both Terry and I enjoyed the experience and hope that we were able to lighten Sharon's load in some small way.

We joined Bailey's because we saw it as a way in which we could have a direct connection with local growers and very fresh produce. We have now met a number of Bailey's suppliers and have seen exactly where our fresh veggies come from. When I put my sweet and hot peppers, eggplant, and onions on the grill this weekend, I had the satisfaction of knowing that we had actually played a role in delivering them from farm to table. We also have a much deeper understanding of the complexity of the ordering, filling, billing, and delivery system.

At times, we felt as if we were on a private "tour" and Sharon was our guide. She had a wealth of information to share and prepared us well for each stop along the way. We were welcomed by farmers, wives, grandmothers, aunts, children and grandchildren. We saw a ten-year-old handle a tractor and forklift like a pro. We met a wide variety of friendly farm dogs, some of whom simply demanded attention. At one Mennonite farm, I put together a customized flower bouquet that looks exceptional. The cost? $3.50. We took time out to walk out for a closer look at a flower garden. We even saw horses being shod in one of the barns.

If any other members have considered accompanying Sharon and haven't done so, do take advantage of her offer. It's a fantastic learning experience. By the way - keep in mind that you'll be in farmyards that are sometimes muddy if there's been a recent shower or if vegetables have been washed. Horses share them, too. Our advice is to wear boots or other appropriate footwear - and watch where you step!
