I've been trying to send this email since Thursday... and look, it's now late Sunday night/early Monday morning! It's been a lovely holiday and I've really enjoyed the break from the computer and time with family!

Let me guess. You've been busy too? Well, take a few minutes and put in your order. I'll send more emails next year, but this might be a great time to make sure you get awesome local food to start January off right!

Here is a list things to look for:
  • So many awesome prepared foods including new selections from Winnie's Gluten-Free Foods. The tourtiere was a hit at dinner tonight!
  • Squash! Sam Bowman called the other day and we added the squash he still has! Get it before it's gone! He added kale too!
  • Tia's Bakery has been forcing us to try new things. The crusty rolls are amazing and we also really liked the Multigrain bread. It was amazing with soup!
  • Beans! The vegetarian baked beans served at lunch for 30(!) were a hit and they featured Great White Northern Beans from Rounds Brand. Stock up now and we'll offer them again in a couple months!
  • Gumboot Gourmet has a Lamb Sausage with no fillers (you can choose from Real Salt (http://www.realsalt.com/) and Pepper or Garlic, Real Salt and Pepper
  • Chef To You Frozen Soups - Three varieties in two serving sizes. Frozen and ready for you to heat and eat!
  • Spud's Own All Ontario Kettle Chips. 2 for $5!
  • Pasta and Noodles from J&D Peters - Did you know that noodles have eggs and pasta doesn't?
  • Tamales, Tostadas, Tacos, and wraps from McKechnie. When we opened our last bag of tortilla chips I noticed that the label said 100% organic corn! Way to go Doug! We're so excited for lots of amazing changes. As soon as we find out that all the chips will be organic we'll change the listing, but in the mean time we know that all the corn is GMO Free.
  • China Rose Radishes. They were so pretty at the last pickup that I had to take a photo!
  • Organic Flour and Grains from Oak Manor. I hear the 7 grain cereal is tasty!
  • Golden Guernsey Milk - So creamy!
  • Tasty Sausages from Traditional Foods
  • Turkey Necks and Backs (awesome for soup) from Snyder Heritage Farms are on sale! Only $2.75!

I'm sneaking in a little reminder before a few days off with family. I also added some tasty food to my order as I know this is a busy season and I'm likely to leave it to the last minute and forget to order something important...

Thank you from us and from Welcome Home!
Welcome Home is a Refugee Housing Community and thanks to you they have been eating better since the Summer of 2011 when Erica and Anita offered to pick up extra food at the end of each pickup. This year we have continued donating extra food and this is the second year we have sent them a cheque earmarked to buy food for the refugee families in residence! In 2012 we received over $500 in donations through our order form (See the $5 Donation item in the 'other' section of our order form) and Welcome Home will be providing receipts for all donations over $10. We also collected table fees from the artisans that were at the two pickups in December and together with matching from Bailey's we are so happy to send $1000 to Welcome Home! Carrots - store the dirty ones!
January is a great time to stock up on all those veggies that you want to have until the new crop grows. We'll try to have them available as long as possible, but at some point even the farmers will run out! We have so many awesome carrot options!

Best for storage in your cellar (or fridge) are unwashed carrots. Angie from Fertile Ground has these for us and frankly, a little organic soil is GOOD for you! According to Sandor Katz (the fermentation guy) the new, cool supplements/probiotics on the market are SBOs (or Soil Based Organisms).... also known as DIRT! Instead of taking a supplement, you can eat more organic veggies and fruits and not worry so much about removing all the dirt. Sandor would recommend  eating some live fermented food too, so make a quick sauerkraut with cabbage and other root veggies. Back to Carrots... If you'd prefer pre-washed carrots, we have tasty ones from Nith Valley (Nathan got a veggie washer this year and LOVES it!) and  Sam Bowman and Pfenning's have organic carrots. We also offer conventional carrots through Martin's Family Fruit Farm. If you want something a bit more colourful there are purple carrots too for a limited time!

Here are a few things to look for:
  • New frozen fruit - Ontario Natural Organic Strawberries, Saskatoon Berries and Rhubarb. Flash Frozen within hours of picking in a convenient 300 g re-sealable bag!
  • Harrington Lane Farms has rack of lamb + sausage (new batch!) available for January!
  • Snyder Heritage Farms has a sale on turkey necks and backs! So great for soup! Now $2.75, regularly $5.25
  • Garlic. Get enough to last until spring! A braid would look great in your kitchen or cellar!

Let me guess. Your fridge is full in anticipation for the holidays and January 7th and 2013 seem like they should still be far off... BUT why not put a few things in your shopping cart now so that you can have your local shopping for January done early? I promise that the season will only get busier and by pickup day on the 7th all the leftovers and cookies should be eaten and you can work on your New Year's resolution to eat more dark chocolate (That's only me? Hm.)

We thank Catherine of Open Shutters Photography for taking these lovely photos. As some of you might know, in August of 2011 Rachael and Maryrose both had baby girls. Laura was born 20 days before Marlo and these little ladies have brought us much joy in the last year (and a bit of sleep deprivation too). As an amazing gift to us, one of our members, Catherine offered to take photos of our girls and we are happy to share them with you! You can even check out some of her other photos. I found quite a few familiar faces among her subjects!

Pie in a Jar
Cider Keg made these awesome spreads this year and it's so yummy we want you to try some! We'll be sharing some with you at the January 7th pickup and we'll put it on special too... It's regularly $6 per jar, but if you buy two jars we'll give you a dollar off! 2 jars for $11! Where would you use Pie In A Jar? On ice cream, on toast, on a spoon... The best part are the ingredients... As an example the Cherry Pie In A Jar contains: Ontario Sour Cherries, sugar, Ontario apple cider, and pectin. That's it! (ingredients are listed on the order form) You'll find these in the 'preserved' section.

Solstice is coming!
I get so excited about Winter Solstice. It means that the days are about to get longer! Many people wait until Solstice to start eating their preserves from the summer. I'm not so rstrained, but I think I'll enjoy some peaches in light honey syrup that were canned this summer on Friday to celebrate - and if the world ends, I'll be happy!

Breslau Location discontinued
To our valued members of Bailey's Local Foods at Breslau Local Food Market,

We have reached the end of the one year pilot project at the Breslau Community Centre. It was our intention to help the Breslau Local Food Market committee grow this endeavour to a vibrant community market. The market has not grown and we have seen a steady decline in sales and attendance. As of the new year the cost of running this location will increase. We are a small business that is not able to support a pick up location that is not breaking even. We have made the difficult decision to end our presence at the market at this time.

We welcome people from Breslau to
continue to be a member and pick up you local food at our Waterloo location. If people want to work together to pick up multiple orders and bring them back to Breslau to distribute among friends we can work with you on this.

Our last pick up day in Breslau was December 17th. We apologize for any inconvenience and hope to continue to see you in Waterloo enjoying a great selection of local food.

As a result of our departure, the existing market committee has decided to discontinue the Breslau Local Food Market at this time. If you would like to see a market continue in Breslau we urge you to join the market committee!

We thank Carolyn, Grace and Janet for all they have done for this market and your community and wish our fellow vendors the best in all future endeavours! Thanks also go to Allie, who managed Bailey's in Breslau and made connections with so many of you!


The Waterloo pickup location will continue, no worries about that!

This is the email that I didn't write.

When asked what their favourite things to order are on our facebook page, here are replies from a few awesome members:
  • Butter tarts! Do I really need to explain? (We offer them plain, with nuts and even gluten free!)
  • Mushrooms. Can't get gorgeous fresh, giant boxes of mushrooms like that just anywhere. Oh and the treats. But I try to focus on the veggies.
  • Whole wheat tortillas, microgreens from the Working Centre and if I am treating myself, the olive tapenade from Mama and Papa's. Oh and ... and .... and....
  • Snider's pork sausage, both cased and uncased (for "egg mcmuffins"). Also the prepared food from Casa Salsa, especially the chicken quesadillas because they're big enough for a meal. Also the Guernsey milk. And all the veggies from Nith Valley, especially their spinach. And the cherry tomatoes that taste as sweet as candy...
  • Glad to see Chef to You soup on there. I eat soup a lot at work in the cold weather
  • Gotta have my milk (Golden Guernsey 2%), caramels (Hugo & Nate), springerle (Ambrosia Pastry Co.) and more
  • Peanuts and pot pies (plus so many other things)
  • Love the quinoa tabbouleh (Green Table Foods), Luke's tortilla chips, Nutty Bakers meatloaf
  • Not sure how I could pick just a few favourites - I definitely have certain things that I buy in every order (mushrooms, spinach, yogurt) and I am hooked on some of the treats - Asparagus Nacho tortilla chips, Fleur de sel caramels, peanut butter cups, Anna Tolazzi chocolate, and now Ambrosia maple macarons! I love when I can buy local things when they are in season that are SO amazingly tasty, like tomatoes and peppers and the strawberries that never seemed to end this year. And we ate a whole lot of eggplant this year - I would crave stir-fried eggplant every week in the summer and early fall. Now we are hunkering down into the root crops and my baby is getting his first tastes of sweet potatoes and squash. Bailey's has made it possible for me to enjoy all of these wonderful foods and to feel good about where they come from
  • Veggies, fruit, pot pies, eggs, black bean hummus, and Luke's tortilla chips (in that order). My kids go nuts for the tamales too. The cheese sticks from Grainharvest are also wonderful out of the toaster all week.

A Message from Rachael:

Saturday morning I thought I was sleeping in. The kids got up around 7:30 and dad offered to take them to the market (all of them!). I did get to sleep in until just after 9, but then the phone rang. It was a new farmer and we chatted for a bit, me still quite groggy, before I got up to add some new items to our offering list. We ended up talking for more than an hour (when the family returned!) Sam Bowman sold to Nina in the first year of Bailey's but at that time decided to concentrate more on the Guelph Market. He says that some of you like to go to his farm and have asked why his produce is not available through us... Now it is! Right now he has some storage vegetables that our other farmers have run out of including Spanish onions, leeks, and red cabbage! He also has lots of carrots in storage and we look forward to offering you local carrots as long as he has them!

Here is a list of newly added items:
  • Gluten Free Italian Loaf from Tia's Bakery. My kids are in love with her baking! We're stocking up and putting a few loaves in the freezer for holiday meals so that the people who can't have gluten and dairy can still enjoy some bread with their meal. It has been a treat to have. Look for them under 'gluten free' in the 'bakery' section.
  • Gumboot Gourmet has a Lamb Sausage with no fillers (you can choose from Real Salt (http://www.realsalt.com/) and Pepper or Garlic, Real Salt and Pepper

Thanks to all who came to our pickup on Monday! Thank you also to our incredible artisan vendors who came to the Waterloo location! There will be more vendors on the 17th in Waterloo!

We have your bird!

Turkeys from Snyder's Heritage Farms or Vibrant Farms, Duck from Anam Cara, Chicken from Apple Creek Farm and Snyder Heritage Farms too! All our birds are processed and frozen immediately so that you never have a bird that has been thawed for too long. We brined our bird (it's the royal 'we' here - Andrew is the cook in our house!) at Thanksgiving and it was the best yet. I'd highly recommend it!

Spud's Finest All Ontario Kettle Chips

I enjoyed a bag last night while working on this email. Likely not good for the keyboard, but what can I do about that? They are such a hit that we've decided to offer them 2 bags for $5 and if we don't have samples out on the 17th, just ask! It's a great size for sharing!

Appetizer Ideas Using Snider's Pork Sausage
INGREDIENTS: sausage, cream cheese, your choice of: cranberry relish, zucchini relish, chutney (apple, mango, pear, or peach), hoisin sauce
  1. Barbecue or pan fry sausage. Cool. Slice into thin slices using a very sharp knife. Place a small spoonful of cream cheese mixed with one of the above ingredients on each sausage round. Add a tiny sprig of parsley (optional) and serve with or without a cracker OR top sausage slice with a slice of dill pickle secured with a toothpick
  2. Barbecue or pan fry sausage. Cut into ½ to ¾ inch slices. Keep warm in a small crock pot. Supply toothpicks and a variety of dips (regular or honey mustard, cranberry relish, apple chutney, zucchini relish) Serve with small slices of baguette.
  3. Prepare sausage as in (1). On a cracker, spread some herb cream cheese. Add a slice of sausage and top with a dab of mustard.

Wow. Time is flying so fast. Our time between orders is about to get longer and you'll have more time to stop in to our offering list and choose exactly what you want to eat! I've updated the online calendar with pick up dates and ordering periods. It's on the front of our web page at baileyslocalfoods.ca and you can add it into your google or apple calendar. Let us know if we can provide further instruction on that...

Gordon and Bethany won nine ribbons at the Royal Winter Fair for their goat cheeses! Here is the list of honours:
  • Aged cheddar - 1st place - the top firm cheese in the goat, sheep and buffalo variety cheese competition!!!
  • Mild cheddar - 2nd place,
  • Havarti with Cranberries - 2nd place,
  • Havarti with Chives - 3rd place,
  • Goatserella - 4th,
  • Havarti Plain - 4th,
  • Gouda Plain - 5th,
  • Gouda with Chilies - 5th,
  • C-line was 9th but still scored over 95 out of 100, it was in the innovation category and went up against a lot of buffalo cheese.

This week I got a few emails from customers with questions and suggestions about the food we sell. Questions about possible changes to the online ordering system, if our farmers used migrant workers, if we could try to eliminate plastic packaging and if the meats we sell contain hormones. Well, I haven't been able to answer all those questions yet, but will do my best to make positive changes and continue my education* and see how we can work with farmers and producers.
*I didn't dream up or start this business (you have to thank Nina for that!) I started as a member who made a suggestion on how ordering could be more efficient four and a half years ago.

While I haven't tackled migrant workers or plastic packaging yet, I passed the suggestions about the ordering system to our web developer (my husband) and emailed our meat suppliers and was assured that the meat from Vibrant Farms, Traditional Foods Snyder's Heritage Farm, and Harrington Lane Farms are all hormone free!

If by chance you want to help us answer some of these questions or more when they come up, we'd love your help!

Breslau Location to be discontinued in January
To our valued members of Bailey’s Local Foods at Breslau Local Food Market,

We are nearing the end of the one year pilot project at the Breslau Community Centre. It was our intention to help the Breslau Local Food Market committee grow this endeavour to a vibrant community market. The market has not grown and we have seen a steady decline in sales and attendance. As of the new year the cost of running this location will increase. We are a small business that is not able to support a pick up location that is not breaking even. We have made the difficult decision to end our presence at the market at this time.

What does that mean for you and your existing membership in Breslau?
There are two choices:
  1. Continue to be a member and pick up you local food at our Waterloo location. If people want to work together to pick up multiple orders and bring them back to Breslau to distribute among friends we can work with you on this.
  2. Receive a pro-rated credit on your next food purchase for the remaining months of your annual membership.
Our last pick up day in Breslau will be on December 17th. We apologize for any inconvenience and hope to continue to see you in Waterloo enjoying a great selection of local food.

As a result of our departure, the existing market committee has decided to discontinue the Breslau Local Food Market at this time. If you would like to see a market continue in Breslau we urge you to join the market committee!

We thank Carolyn, Grace and Janet for all they have done for this market and your community and wish our fellow vendors the best in all future endeavours! Thanks also go to Allie, who managed Bailey's in Breslau and made connections with so many of you!


The Waterloo pickup location will continue, no worries about that!

A Message from Rachael:

On Saturday we had a lovely pork roast with spaghetti squash, coleslaw and 3 giant potatoes (from my dad's garden) that fed 5 adults and 7 children! After that fine meal we were contemplating dinner for Sunday - what to make? When we realized that it was Grey Cup Sunday, chili was the easy choice! We defrosted a package of stewing beef, soaked some red kidney beans and the magic of an awesome cook, more vegetables and the crock pot made for a lovely dinner with the addition of corn bread muffins made by our 8 year old. What did you eat this weekend?

Hmm... What should I tell you about this week:
  • All the items from Traditional Gardener are on sale right now! Look for them in the 'other' section of our order form and see how lovely they are at http://www.traditionalgardener.com/ A great gift for the gardener in your life!
  • Peanuts from Kernal are back! We should get our order from Norfolk this week, but I've made some educated guesses as to what is freshly roasted and ready for us!
  • Organic beef! We just filled the freezer with grass fed organic beef from Vibrant Farms! Look for select cuts and ground and stewing beef too!
  • Gluten and Dairy Free baked goods from Tia's Bakery. Approved by my kids!
  • Tortillas from McKechnie for a snack or a wrap.
  • Vegetable Crackers from Barrie's Asparagus are being baked this week and will definitely be available on Monday!
  • Now we're getting serious about gift baskets. "Bailey's Goes Gourmet" is a treat that any food lover would appreciate!

Traditional Foods is sampling sausage from the BBQ on December 3rd's pick up. Both Ross and Gayl look forward to talking to you about their products and offering tastes of their new lamb sausage in addition to the old favourite pork sausage. It sometimes seems sad when the season winds down, but after looking through our list of local food available at the beginning of December I'm getting excited again!

I spoke with Brenda Knechtel tonight and she told me how many root vegetables she washed so far this year. She estimates 1.5 tonnes washed root vegetables!
This includes 1000 lb winter radish, 1000 lb carrots, 1300 lb beets and between 300-400 lb Jerusalem artichokes. All this was washed in an old ringer washer without the wringer. Thank you Brenda for growing, harvesting, washing and storing all these amazing organic foods!

Some of the great local food available this winter:
  • Root crops - carrot, radishes, beets, potatoes - all just grown for winter comfort food!
  • Garlic, Fresh herbs (thank you mild weather!) and dried herbs - keep some spice in your life!
  • Organic beef! We just filled the freezer with grass fed organic beef from Vibrant Farms! Look for select cuts and ground and stewing beef too!
  • Apples! Such a great fruit that keeps well in the winter!
  • Amazing baked goods - great Gluten Free options too!

I always forget to mention something. This time there were a few late additions and changes that we wanted to tell you about!
  • Tempeh! locally grown and made in Kitchener from Henry's Tempeh! Look for it (and tofu) in the 'meats and proteins' section. Yummy, organic and gluten free!
  • Tia's Bakery gluten free and dairy free muffins, bagels, and other baked goods that you will love! Her muffins are excellent! Look in the 'gluten free' section under 'bakery'

    Boughs for holiday decorating from Theresa of Garden Party - Look for them in the 'plants' section (and likely on the spontaneous table on Monday!)
  • More spinach available from Nith Valley! Thanks in part to this lovely weather and an excellent farmer!
  • Tortillas! Tortillas! Tortillas! We ate Mexican food tonight including salsa with the great tomatoes from Kingwood and corn tortillas. Also, the price on the flour tortillas has been reduced! (check the mint in your garden - if it's like mine you can make a mojito to go with your meal!)

A Message from Rachael:

Oh my what a lovely unseasonably warm Sunday! There was a great turnout at the Waterloo cenotaph for Rememberance Day and at our house the afternoon was spent cleaning up the backyard and garden (instead of sending this email). Now I hurt, but the yard is ready for winter!

It's really comfort food season. We've been enjoying soups and roasts and are anticipating crock pot meals too. That and popcorn. Yum. What are your favourite foods when the weather cools down?

Mary and Pete from Apple Creek Farm have diversified this year. After loosing their organic apple crop to a late frost they are growing potatoes as well as heirloom and slicing tomatoes in their greenhouse! I got a quick note from Mary last week when it was quite cold out saying: the greenhouse is 70 degrees right now with a wood fire going out there. I hope to keep it going for a few more weeks... we will see how the night time temperatures go :) While we don't have organic apples, we DO have organic apple butter and apple sauce! Honey too!

Herbal Loose Leaf Teas from Little City Farm, Kitchener
With cooler weather comes a great excuse for a hot cup of teat to warm the hands and the soul. We have a great selection of locally blended herbal teas and are excited to again offer Karin's lovely blends.

These delicious loose leaf herbal teas are grown at the Little City Farm urban homestead in Kitchener using sustainable methods, and/or wild harvested carefully, and/or purchased from certified organic sources.  We are very happy to have Brenda Knechtel (Wellesley) growing some certified organic herbs for us that we do not have the space to grow ourselves.  Karin is a certified herbalist and has created these tea blends to provide nutrition, healing and strengthening for the body, including blends that aid with stress, winter flu, sleep, and digestion.

The loose leaf blends come packaged in a brown kraft paper bag, made of post-consumer recycled materials.  Each tea is labelled with an ingredient list and details on how to brew your perfect cup of tea.  Each bag holds 40 grams, which is enough to make approximately 10 pots of tea.  These special teas are prepared in small batches and will only be available for a limited time. We have: After Dinner Tea, Winter Flu Fighter, Less Stress Tea and Sweet Dreams Tea available now!

Among a group of parents and children, one of my favourite six year old boys was visiting today and he fell in love with the McKechnie Nacho Cheese Tortilla chips. I had offered them to the group and after tasting them this boy wanted to buy a bag with his hard earned money - I think the other kids and moms agreed they were pretty tasty too. I've heard that they are like Doritos, but with better ingredients. I keep finding partially eaten bags around the house too. Must be the cat.

We have A LOT of dried beans available for this pickup. We have organic beans grown by Lena Horst and conventional beans from Rounds Beans. Here is some neat bean info:

A Message from Rachael:

Wow it's the weekend again. After a week with a few amazingly lovely days we're back to cold and wet. Friday was a great day for LEGO and soup. I've had a hankering for leek and potato soup for a while and we got a 20 lb bag for yellow flesh potatoes from Apple Creek Farm and a few bunches of leeks too at the last pickup. It's so easy and I made it while the kids played and I was chatting with Brenda - one of our farmers - on the phone. Here is a general recipe:
  1. Chop half of a large onion (I think it was Spanish) and in a fairly big pot sautee in oil (I used olive oil, but we have sunflower, canola and soya oil grown and pressed locally)
  2. Chop most of a pound of leeks. You can get a 1 lb bunch from Kingwood Farms or you might only need one of the bunch of three from Edward and Selema Martin. Sautee them with the onions, Add a bit of salt and pepper too.
  3. Remember the carrots you brought for a snack that morning. Chop a few and add them in to sautee also.
  4. Slice a couple potatoes per person and add them to the pot.
  5. Add some stock and/or water to cover the potatoes. Andrew made an amazing pot of stock last Saturday with one of the packs of two chicken necks and backs from Snyder Heritage Farms that fed 3 families on Sunday for lunch and a few more meals for our family and three containers for the freezer also! One container went in this soup)
  6. If you want, you can add celery, herbs or a bay leaf for extra flavour, check the salt and pepper and adjust if necessary.
  7. Cook until the potatoes are soft - 20 minutes?
  8. Turn off the heat and use an immersion blender or potato masher to blend some of the potatoes and carrots in. You can make it completely smooth or leave a few chunks in.
  9. Serve to starving children immediately, or wait until it cools to room temp for an even tastier treat.
After lunch, sit on the floor and play LEGO with the kids.

Liberian Pumpkin (from Simply in Season Cookbook)
  1. Saute: 1 chopped onion in some oil
  2. Add: 
    * 2-3 c. cubed pumpkin or butternut squash
    * hot pepper sauce or hot chili peppers (to taste)
  3. Cover and cook until pumpkin is cooked (10 min.)
  4. Add: 1 c. chicken, beef, or vegetable broth
  5. Cook for 10 min.
  6. Add:  1 cup browned bulk pork sausage, salt and pepper
  7. Cook uncovered until liquid is absorbed.
  8. Serve with rice or noodles.

Tips on how think MONTHLY when ordering food
Getting a month's worth of groceries requires a head shift for most of us. We have to think about what we eat each week and multiply it by 4. I also look at the calendar and see if there are any special occasions (birthdays, company coming, potlucks...) for which I want to order specific foods. At the bottom of this email you'll see my family's winter monthly grocery list to give you an idea of what a family of five would eat. It looks like so much when I write it out! Our local food intake stays pretty much the same through the Winter. The variety comes from what we pick up at the supermarket and what we pull out of our freezer.

Reading back shows me that we have overcome some of the issues from 2009 - We now have chicken parts from Kevin at Snyder Heritage Farms - and some remain the same - costs going up.

Things to look for:
  • This is the week to stock up on McKechnie Foods Tortillas and chips - We even have a deal on a box of 12 bags if you want to have a full pantry or share with a friend
  • Pasta from J&D Peters. John and Debbie make this excellent pasta and Doug from McKechnie delivers it to us
  • Barrie's Asparagus products - also delivered by Doug. We love it when our suppliers work together! Tim Barrie has taken a seasonal asparagus farm (2 months) and harvested and preserved his asparagus in it's peak so that it can be used pickled in items like sauces and relishes or dehydrated and in 'flour' form on Tortilla chips and in pasta. He has the best crackers in town too!
  • Most farmers will be at the end of their tomato season, but we're lucky to have Floralane in Elmira who grow amazing hot house Beefsteak and Grape Tomatoes from March to December (alas, it's not year round). These are the tastiest hot house tomatoes I've ever tried! Take a peek at the greenhouse here.
  • 'Tis the season... With the holidays coming, what better gift than the gift of local! In our gifts section we have a few baskets to choose from, or of you want a custom basket prepared, please talk to us! 
  • A jar of local jam or honey makes a great hostess gift - and my children have already started asking if the Chocolatey Peanut Butter Cups and Chocolatey Coated Peanuts from Kernal Peanuts are for them... we'll see what they find in their stockings!
  • We always offer gift memberships - Is there a better way to welcome a new friend to town?
  • Okay - back to the healthy stuff... We have Brussels Sprouts from Transpire Organic and Turnips from Nith Valley Organics are available now!

Get $5 OFF a Traditional Foods blade roast priced at $6.50/lb for your next pot roast. Here is a simple recipe for you to try!

Blade roast is known as a pot roast favourite. Here, I provide you with a recipe from The Grassfed Gourmet by Shannon Hayes. Note that this roast is also called Boneless Blade Eye or Chuck and that it is made up of different muscles with varying degrees of toughness. These muscles are well exercised and therefore, this cut needs to be slow cooked at a low heat. IMPORTANT: A blade will be tough, stringy and very dry if not cooked with liquid.

“Braising” is what we are talking about when we talk about a pot roast. Braising is cooking the meat in a small amount of liquid for a while. Magically, this process turns a tough and inexpensive cut of meat into a tender, heart warming, and hearty dish.

Apparently the following recipe is so easy, you can get school-aged children to do it:
  1. Rub the roast with salt and pepper, then brown all sides of the roast in some olive oil (3 minutes each side).
  2. Place meat in the slow cooker with ½ cup of water, 2 cans of tomato sauce, and an onion and two chopped garlic cloves.  Cook all day on low heat.
  3. About an hour or so before you are ready to eat, combine 2 tbsp dark brown sugar, 1 tsp of dry mustard, 1/4 cup of lemon juice, 1/4 cup of apple cider vinegar, 1/4 cup of ketchup and a tbsp of Worcestershire sauce, pour over the meat and cook for another hour.
  4. If you want to make gravy, take the sauce from the slow cooker and let it simmer on the stove for a few minutes until it thickens (while keeping the roast warm).

We're going to a wedding today. I don't know the bride (yet), but from the bit that we have talked, she loves food and preserving so I made up a basket of some of our preserves - grape juice, tomatoes, peach slices, grape jam and peach jam with cinnamon - and then added some goodies from Bailey's - Sparkling Apple Cider from The Cider Keg, a sack of organic popping corn from Ontario Popping Corn, Smokey Asparagus Antipasto from Barrie's Asparagus and two of my favourite chocolate bars from Anna Tolazzi - Runaway Mint and Blueberry Tea (I would have included Mark Twain if I had one on hand, but maybe that can be their first anniversary present). We asked Melissa from Vibrant Farms (our awesome supplier of organic grass fed beef and turkey too) to feed you... virtually. Check out her first video where she tells you all she knows (and doesn't know) about kohlrabi and all the yummy ways she dreamed up to cook it. I do expect kohlrabi sales to skyrocket this week! Won't Paul Bowman be surprised? He doesn't even know what is coming! =) There are a few 'issues' with the video - for me, the sound didn't work in the second section, but it left me drooling while looking at shots of the food Melissa prepared. Despite this, I know you'll enjoy it. Thank you Melissa for the time you took to prepare this!

Hello all loyal Bailey's customers - I hope you enjoy the video I've put together for you, it is my first one - so I promise the editing and the sound and the layout and all that WILL get better!!! I am NOT any sort of trained food professional, I just run the Vibrant Farms Organic Meat business...so really all my "recipes" are things that I come up with - and hope to inspire you to do as well. I LOVE food, and I love playing with it, so when Bailey's asked me to do a little ditty on some items on the order form I was in like a dirty shirt!You can follow me on Twitter @afarmdaughter or Facebook- The Farmers Daughter

Here are the recipes:

Pickling

     
  1. slice kohlrabi and carrots, garlic, onions and parsley and dill from Baileys Local Foods
  2. fill a jar with all the sliced vegetables - add in vinegar and salt (about a tsp - to your personal preference)
  3. let sit on shelf for at least 4 weeks
  4. ensure all vegetables are covered in the vinegar liquid (some people use sugar, I think the root vegetables have enough natural sugar you don't need it) 
Roasted Potatoes and Cilantro and Kohlrabi
  1. roast potatoes and a sprig of fresh thyme, garlic, onions and grass fed organic butter (The Bailey's butter is from Alliston Creamery) at 350 degrees for about 35 mins, ensure potatoes are not crowded in dish, and stir occasionally, use about 2 tbsp of butter
  2. thinly slice kohlrabi (which adopts a bit of a turnip taste when baked) and place on a baking sheet (stone ware is best), ensure you have some sort of "stick protection" although they are not likely to stick given their consistency (bake at 350 for about 25 mins)
  3. put potatoes in your serving dish, nicely lay the kohlrabi on top
  4. gather fresh cilantro from Baileys Local foods, some fresh cream as well and place in a blender or food processor, then heat to a slight boil in a cast iron skillet and pour generously over the kohlrabi and potatoes
  5. EAT!! 
Kohlrabi Carpaccio "sushi" Roll
  1. Grab left over cooked turkey (or meat of any sort) from Vibrant Farms - through Bailey's Local Foods (perfect after Thanksgiving!)
  2. slice up your organic cheese from Bailey's (Millbank has organic cheddars!)
  3. use a carrot or potato peeler and thinly slice the kohlrabi into thin long strips
  4. use salt and pepper to taste on turkey
  5. "Wrap and Roll" ... see what I did there ;) 
Egg over Grilled Kohlrabi
  1. use butter again from Bailey's or you can use extra virgin organic coconut oil
  2. grill thin slices (rounds) of kohlrabi in a skillet until browned
  3. fry eggs/ poach eggs/ scramble eggs
  4. place organic grass fed cheese on top of kohlrabi, place egg on top (I like it best when the yolk erupts in a volcano over everything and makes all taste super yummy!!)
  5. place your warmed tomato sauce (also from Bailey's) or made yourself on top and a fresh sprig of parsley
  6. EAT!!! mmm 
Other Ideas
  1. Organic Apple butter from Apple Creek Farm and Kohlrabi... seriously this is so yummy!!! I suspect sales of apple butter and kohlrabi to SKY ROCKET in Waterloo region, trust me, the texture and the sweetness... its just really GREAT!!  (plus its local...  and yes, you can get Wellesley apple butter at many local stores!)
  2. Sushi inspired - while I was playing around with kohlrabi, sesame seeds and oil and wasabi tasted REALLY great with the kohlrabi, add in some other vegetables, maybe a little fish in there, rice if that's what your heart desires and POOF!!! local version of sushi!

How was your Thanksgiving weekend? Are you stuffed yet? We've had three lovely meals with family and with friends including our big turkey dinner on Monday (thank goodness for the extra day!) After this we'll coast on leftovers and what is in our fridge for two weeks!

Except for grape juice...


UNPASTEURIZED GRAPE JUICE this Friday September 12th! Order NOW until Wednesday October 10th at NOON!
Eva and Rene make this juice from a combination of their Pinot Noir and table grapes. It is light pink in colour. It has a slight cloudiness to it (not quite as much as cider) since it has NOT been strained, filtered or treated with sulphite. Because it is unpasteurized it will leave a little 'prickly' feeling on your tongue. It will slowly continue to get more 'prickly' while in the fridge but the progression can be halted in the freezer. This is a nice and sweet juice that will taste very different from steamed grape juices.

This juice can be frozen to use at a later date like Christmas and New Years (or birthdays). Just be sure to pour some off the top to leave room for expansion.

Unpasteurized Grape Juice is $13 for 3 liters in a plastic Apple Cider jug
. It's the only thing on the offering for for October 12th and under "pantry>beverages" (until my wonderful tech support husband cleans up the categories)!

We defrosted the last jug from 2011 this weekend and drank some on Monday, so it's definitely time to stock up again in our house!

Salsa, Baby!
On Friday we took home two of Candace from Transpire Organic Farm's "Salsa Verde made Easy" kits and my 8 and 5 year old made them Sunday. They husked and washed the tomatillos, and while I chopped and roasted them (with the jalapenos, which we did not let the kids seed and stem) the kids juiced the lime and the rest of the ingredients were prepped and put in the food processor. Not only was this some mighty tasty salsa, but the kids enjoyed eating and serving it even more because they made it themselves! If you are looking for a dip for your tacos, tortilla chips or any other Mexican dish, I'd highly recommend this! We only had to add lime juice, sugar and salt - everything else was included and each kit would make almost 500 mL of salsa!

Things to look for:
  • We have Nuts from Grimo - This is your last chance to stock up on Chestnuts, Heartnuts, Persian Walnuts and Black Walnuts! They are super fresh and you can crack nuts all winter!
  • The Nutty Bakers are back on the order form!
  • Green Table Foods are STILL on the order form
  • We just stocked up on Monterey Jack and Colby cheese from Millbank Cheese. Awesome for quesadillas and Macaroni and cheese
  • Eggs! In addition to the eggs from Traditional Foods which are GMO free, we now have local conventionally fed eggs from localEGG as well as pastured organic eggs from Apple Creek Farm to offer you. To make the prices on the organic eggs a bit more reasonable we have reduced our markup.
  • This is the week to stock up on Tofu and Wild Fish from Manitoulin Island. Both from Ontario Natural!
