  • Bonnie tells me that Tamales are a traditional food served for Christmas Eve in Mexico! What a tasty tradition!
  • Need a stunning centrepiece? Check out the snowmen, nutcrackers, Christmas Trees and Santa chocolates from Anna Tolazzi. All are available in Milk chocolate, Semisweet chocolate or can be vegan too!
  • Fill your loved ones' stockings with food! Chocolate, Jerky, Jars of jam, cookies, a pop-a-cob and pepperettes - just keep it out of reach of the dog!

Hello Everyone,
As Rachael mentioned in our last email, this will be our last pick up of 2011. This means it will be our longest break between pick up days. Make sure you order enough staples for the next 4 weeks. Our first pick up day of the new year will be on January 16th, 2012.

Be sure to stock up on:
  • Yogurt and cheese, and Creme Fraiche too!
  • Meat and prepared foods (Have you tried the Quinoa Tabouleh from Green Table Foods?)
  • Tortilla chips, Popcorn and peanuts - Keep healthy snacks handy!
  • Bread (you can freeze your favourites)
  • Chocolate, Apple cider,
  • Butter, Oils and vinegars
How are your Holiday dinner plans shaping up. Is your household hosting dinner? We will be hosting a small gathering Christmas Eve at our home and then travelling off to the Niagara for our many course Italian Christmas Day Dinner. Don't forget to order your Turkey, Duck, or Chicken. We do not have our festive bird dinner until New Years Eve. We bring in the New Year with all three birds listed previously called the Turducken.

One of my favourite things to share with friends and family is a Cheese Tray. We have so many wonderful cheeses to offer. I had no idea there were so many local cheeses available. Have you tried Monforte's Fresh Goat Cheeses drizzled with Bauman Apiaries' Honey. So Yummy. Other yummy options include:

The Holiday Season is so busy it is great to have some convenience foods on hand. Thank goodness The Nutty Bakers are back. I will be stocking up on some pies for those days when we are on the run and need a dinner at our fingertips. Did you get a chance to try Anna's Fruitcake at the last pickup? Green Table Foods and Cafe Pyrus both have great prepared foods to choose from too.

Have you checked everyone off of you gift giving list yet? I know I haven't. I always manage to need a last minute gift for a hostess or someone unexpected. Here are a few ideas.
  • The Cider Keg bottled Ciders. The New Peach Flavour is wonderful - you can almost taste the fuzz. A perfect non-alcoholic treat with no added sugar!

Marly Penner and Angie Karst teach workshops and create fused glass and mixed metal jewelry in their uptown Waterloo studio. Using an innovative new material called metal clay, they form and texture silver, copper, and bronze to create original and one-of-a-kind wearable pieces of art. Esther Devries-Lasby is a local potter who has been making functional pottery for over 10 years, and she is happy to bring her pots to the December pick ups again this year. Although she is best known for her clay milk pitchers, Esther produces mugs, coasters, casseroles, bowls, plates and platters. You will find her pots to contain numerous textural designs as well as a variety of glazes. A new piece for Esther this fall is a collaboration with her father... look for birch candle sticks on a black clay pedestal.

Maryrose has been making gifts for many years and now has decided to spread her wings and sell these great items. She specializes in fibres - both knit and sewn. You can find many reusable items, snack bags, produce bags, kerchiefs and knitted hats.

Let's Felt!
Manuela is a local felting artist rather out of passion than out of training. Some years ago on a trip back home to Germany, she saw apples made out of felt that fascinated her. With her first wool roving and the tools to start her own felting, she never stopped. She uses three different techniques and combinations of them: wet felting, needle felting and sewing with recycled or shrunk wool sweaters. At the sales table she will offer seasonal presents like ornaments and cards. Also, there will be felted beads, fruit for decoration or as toys, shopping bags as well as small bags for cell phones or BlackBerry devices. She also takes orders, in case you would like something custom made like mittens in your size. Manuela offers workshops in all three techniques at The Art House Studio in Kitchener. Happy Friday!

It's the season for skating outside and dreaming of snow. I don't miss shovelling, but LOVED the beautiful icing on all the trees Tuesday.

Take some time this weekend to plan your holiday meal(s), pick out a few foodie gifts and browse. Tell us what you want to hear more about and what you love to eat. I love reading about your favourite items and how you plan to cook with the food we are so lucky to provide for you.

If you have any tips or tricks you would like to share on stocking up and preserving local produce and on storing food between pickups please share them!

Today I was caught up with the dishes, so I started sorting through raisins. Well, they aren't quite raisins yet, but they are oh so yummy! The last order of grapes from Palatine have been getting better all this time. Some were in baskets and others on wire racks. Slowly, the water in them is evaporating and the sweetness is intensifying. This is a very slow process and a bit of an experiment. There are very few grapes that have fermented (and are now compost with all the stems). Most are still surprisingly plump as they have remained on the stem. Who knew that it was so easy to make your own raisins (if you have lots of patience!)

Our family has started meal planning. The kids love this and I find it very helpful too! We painted part of our kitchen wall in chalkboard paint and have a rolling list of what is coming up for the week. It's a simple and visual way that allows us to use what is in our fridge and cold cellar much more effectively and allows the kids and I to help more with meal prep. It's also amazing for my 7 year old who loves reading and writing so much. What a magical age!

We will have amazing local vendors again on the 19th and will let you know who to expect in an email on Monday. It was awesome having such lovely local artists last week. Thanks you to those who brought their crafts and to those who supported these artists!

Can you believe that this is the last food pickup of the year? It's been an exciting year with new babies, a challenging year with challenging weather for growing food - but we made it! The order form is open and you can start planning how to incorporate local food into your holiday meals.

Kevin Snyder has lovely turkeys for you. They are frozen, so that means fresher, safer meat! Did I mention that his birds are tasty too? He grows the feed that they eat and ensures that it is GMO free.

We hope to make some of your holiday shopping easier with Gift Baskets and gift memberships for your neighbour, co-workers or anyone else you and treats like chocolate for the sweet folks your life - there will definitely be flavoured chocolate bars in our stockings this year! Think about local, edible hostess gifts too - some cheese and/or a jar of jam - all local!

Don't forget that we will have local vendors at the December pickups for you to peruse if you would like to give a non-food gift!

Giving Back
If you are able, please bring some personal care items for local people in need to the church on our pickup days, and, as we did last year, we will make sure they go to the House of Friendship.

Here is a bit of the email from last year when we did the same:
Items such as toothpaste, tooth brushes, floss, deodorant, socks, shampoo and others are highly needed by the House of Friendship Programs. If this is something you would like to contribute to there will be a collection box for any donations during the Dec 5 and Dec 19 pick up dates. If you would like more information about The House of Friendship and the programs they offer please visit their website at www.houseoffriendship.org.

When I was dropping my daughter off at Brownies the other day, I noticed that First United Church is an official drop site for The Waterloo Region Record’s Books for Kids book drive. Please consider donating a new, unwrapped book suitable for a child newborn to 18 years of age. We will move the drop box near the table with the pickup slips for the December 5th pickup. For more information on Books for Kids visit The Waterloo Region Record website. Last, I'd like to remind you that we have a donation option right in our order form. I think our donations will be going to Welcome Home - an organization that provides support for refugees new to Canada and in our area this year, but your suggestions are always welcome.

Hello Folks,

I am going to try and keep it short. There is so much I need to tell you about. There are two more pick up days before the New Year! I haven't even begun to make my gift giving list for the holidays. Have you? Every time I ask someone what they want or need for Christmas the answer is that they don't need anything or don't know what they need. Our household is no different. Highlights
  • Did you have a chance to try cider from Cider Keg at the last pick up? We just received a new shipment and now have all flavours back in stock. It is a great non alcoholic beverage to have on hand at holiday parties.
  • Have you tried Bauman Apiaries Raspberry Creamed Honey or their Cinnamon Creamed Honey? They are super yummy
  • Paul Bowman has let us know he will only have garlic until the end of December. After that we will have to wait for the new crop next year. Stock up now! For a special treat, buy one of Paul's Garlic braids to hang on the wall for easy access all winter long!
  • We are placing an order from Country Flavour soon! This means it is your chance to order full cases of their products such as - stewed tomatoes, peaches, pears and so much more. Just think of the pickle tray you could make with a selection of their products
The Nutty Bakers are BACK!!!
Many of you have asked us when we will be getting those great meat pies back. The Nutty Bakers will be at our pickups for the month of December and hopefully in the new year too! Anna and Mary make the excellent Pot Pies, Tourtière, Fruit Cake, Cabbage Rolls, Lasagna, Meatloaf and Sweet and sour meatballs that so many of you have missed. Watch for Steak and Beef Kidney Pie in the new year!

Local Artisans
We will be hosting a small selection of local Artisans at both of our December pick up dates. Here is a bit about the vendors who will be attending on December 5th:

Little City Farm
Homestead Herbals is a small home business based in Kitchener, Ontario. Karin is a Master Herbalist and her goal is to create quality handmade herbal products & soaps using organic, natural ingredients that provide nourishing, healing effects for you & the planet. The herbs used in these products are grown on our own Little City Farm property, or sourced from local organic farms whenever possible.

Herbalicious Teas are the original creations of Helen Theodosiou, a western herbalist, nutrition counsellor and owner of Revive Natural Health Clinic in Kitchener.   • New Moon Kitchen has a seasonal Lemon Cranberry Crunch cookie now available! We will offer this until then ed pf December, so try it now and if you love it, you might have to put a few boxes in the freezer!
  • Please note that we carry both Organic and Conventional Apples from Apple Creek Farm (and don't forget the conventional apples from Martin's). Be sure you order and pick up the item you intend to. We have labelled all the items to make it easier for you to choose correctly and if you have any questions at the pickup, please ask us for help!
  • Bulk boxes of Portabello, Shiitake and Oyster mushrooms. It's a big box, so consider splitting with a friend.
  • Romanesco Cauliflower from Pfenning's also - These are a Brocolli/Cauliflower cross and very lovely!

Normally I send this reminder that ordering is open right away, but life here has been busy! We've been enjoying the lovely weather and I hope that you have too! Our order form opens the Thursday after the old order form closes - at least until the end of December when we change to less frequent pickups.

Peanuts and Rain
I've been trying to buy peanuts for more than a month now. You remember all that rain we got in early October (what I lovingly call the monsoon season)? It prevented many farmers, including our peanut growers from harvesting the crops that were planted in the ground. Last year was a smaller peanut crop than usual, so stock was already low, but imagine having a great crop and not being able to harvest it? I've been thinking of Nancy and the folks from Kernal since the rain stopped and hoping that it stayed warm enough not to freeze those awesome peanuts in the ground! Another advantage to you is that I can assure you that these are the freshest peanuts you've ever tasted!

Gifts?
It's the season for giving and receiving and we want to make it easier on you! You can give the gift of Bailey's which includes a 1 year membership and a jar of our signature Pear Apple Sauce (yum!) or we will be adding gift baskets to the order form shortly and also asking our suppliers to extend their holiday baskets to you. So far we're offering Seed Starting Kits from Sarah's Kitchen Gardens and hope to add items from Anna Tolazzi and Monforte to name a few! Keep checking the 'gifts' section!

Tamworth Pork!
We have a new supplier and I can't wait to taste what she's offering! Here is a quick introduction from Judy:

Anam Cara Farm is owned by Judy Furtenbacher Horvath and Bob Horvath. It is a 100 acre farm about half an hour southwest of Kitchener. The farm has sandy soils, and 22 acres of bush and swamp. Some of the land is rented to a neighbouring farmer, and Judy operates the rest using a pastured livestock model and rotational grazing, and organically growing hay. While not yet certified organic, organic practices are followed with all the livestock on the farm.

Tamworth pigs are a heritage breed from England, which has been relatively pure for many decades. Most hog breeds were "improved" with Chinese hog genes. Some people have found they can tolerate Tamworth pork, but not other varieties. Tamworths are large, rusty red pigs. They do not do well in confinement, and so haven't been raised in commercial hog barns. We currently have two sows (mothers), Silky and Curly, and a boar, Jimmy. Our pigs are out on pasture for much of the year. They have a half to one acre of pasture and wood to root around in, wallow in hot weather, and play. They are fed a diet of entirely organic grain, without soybeans, soaked in whey or skim milk from a herd of grass fed organic cows. On this diet they grow well and have always been exceptionally healthy. Diatomaceous earth and wood ashes are used for parasite control. Our cuts of pork sometimes have a little more fat than what you buy in the grocery store, but that adds wonderful flavour!

On our farm we also raise white rock chickens during the summer, on pasture, pastured hens for eggs, and free range muscovy duck. The poultry are fed organically, and their feed is also soaked in skim milk. The ducks breed through the spring and summer, raising broods of 5-15 ducklings. Ducks are usually available from November through December. We also do educational farm visits for homeschoolers and elementary schools, operate a chick hatching business, as well as keeping Jersey cows for the family, and a horse and pony.

I'm going to start with a few important notes and get chatty at the end:

  • Gordon's Goat Dairy cheese is available this week and then not until December 5th! Bethany reminds us that their cheese is GMO free!
  • New Moon Kitchen cookies are on sale this pickup! Regularly $6 per box they are $5 per box for this pickup! Stock up for a tasty cookie that is egg, dairy and peanut free - They are super tasty and there is a gluten free cookie too!
  • Rutabaga is on the list for sure this week. I even double checked! =)
  • Endive (not Belgian) is also available. We froze it last year for winter dishes!
  • You can order McKechnie tortillas and chips as well as prepared Green Table Foods
  • We have some new prepared foods! Cafe Pyrus is offering a great range of soups, dips and other vegan tastiness!
  • Jerusalem Artichokes (not the green artichokes) are ready too! They are very tasty and you can cook them in many of the same ways you prepare potatoes!
  • We would like to welcome a couple new suppliers: Nathan of Nith Valley Organics will have tasty produce and winter greens for us and Judy of Anam Cara Farm will be offering Tamworth Pork and Muscovy Duck! More on them in as upcoming email!
New tasty vegan meals from Cafe Pyrus!
We have an exciting new supplier! Lauren has decided to cook for us! We’re very excited to offer her tasty food. Here is a note from Lauren introducing you to our new offerings:

Pyrus cafe is keeping it fresh, offering vegan deliciousness made with local, organic ingredients, and a whole lot of love! The cafe offers fresh baked vegan treats with gluten free and sugar free options, as well as single origin, direct trade, organic and fair trade coffees and teas. Visit the cafe at 16 Charles St in Kitchener for a taste of the full menu.

Crock Pot - delicious!
Aura has finally pulled out her crockpot to show us that you can make gourmet meals without slaving in the kitchen all day. She used chicken from Snyder Heritage Farms, Kernal Peanut Butter, local carrots, onions garlic and frozen peas as well as dried hot peppers and soya sauce from Pristine Gourmet! Too bad we don't have local ginger or white wine vinegar available... I think the vinegar would be possible at least!

Bags of carrots?!
Candace of Transpire organic brings you very fresh and tasty produce from her small farm where she grows veggies for us and for her CSA. Her carrots are dug by hand and bunched or bagged on the day you receive them. It's a labour of love and worth it (we're spoiled)! Her farm is on the Pfenning Farm and she has amazing support from Wolfgang Pfenning and has befriended the staff at the Pfenning Farm. If you don't already know, Pfenning's is the organic giant in town and we are so lucky to have them as a supplier to bring us local and organic foods grown by them or brought in from other local farmers.   • Viola Martin's Sweet Keeper Squash are on the order form. They are lovely to decorate your house, they 'keep' well as their name suggests and They are tasty too! In the 'squash' section
  • Last, but certainly not least is fresh pressed unpasteurized grape juice from Niagara! It's in the 'other' section
The description from Mary Jane:
Well we thought the fruit season was over in September but we now have something new. This is the first year that Eva and Rene had some of their grapes pressed into juice!

The juice is made from a combination of Pinot Noir and Table grapes. It is light pink in colour. It has a slight cloudiness to it (not quite as much as cider) since it has not been strained, filtered or sulphited. Because it is unpasteurized it will leave a little 'prickly' feeling on your tongue. It will slowly continue to get more 'prickly' while in the fridge but the progression can be halted in the freezer. This is a nice a sweet juice that will taste very different from steamed grape juices.

In Switzerland and Germany this juice is called 'Sauser'. People line up at the restaurants to get their glass of Sauser. They only serve it while in season!

This juice can be frozen to use at a later date like Christmas and New Years (or birthdays). Just be sure to pour some off the top to leave room for expansion.

A Message from Rachael:

I was thankful to spend last Friday with my family. I enjoy the busy Fridays when Bailey's is running weekly, but oh was it great to have a lazy day! Now I'm looking forward to our off season Friday rituals. Most Fridays this winter you'll find us a home eating pizza and watching a movie. This will mean that the oven will be on before 7pm with the new time of day hydro billing, but it's so worth it! We make our own Gluten Free thin crust and top it with what is in the fridge and usually make a special trio to Vincenzo's for prosciutto and provolone. The Mozzarella balls from Local Dairy and so sweet and almost buttery - my favourite for on pizza and the chevre from Monforte goes so well with prosciutto, mushrooms, basil, red onions and a drizzle of good olive oil (no red sauce). We make lots of little pizzas, so everyone gets to top theirs exactly how they like it. The kids go heavy on the pineapple and we also make dessert pizzas - sliced apples with cinnamon sugar and a little cream drizzled on top.

Speaking of apples, today's breakfast request was for baked apples. It was something that I suggested on Saturday morning when pancakes were expected and wee needed something quick and warm for breakfast as we were heading out of town. It's so easy!
  1. Wash and core 4 apples (or as many as you need)
  2. Fill the cored out section with raisins, and some brown sugar and cinnamon mixed together - you could add nuts too if you'd like
  3. Place the apples in a heat safe dish and microwave until warm - about 15 minutes when you're using Honeycrisps, a bit less for other apples.
  4. Enjoy!
I was thinking that this would be really easy to prepare the night before and cook in the crock pot overnight on a low setting. Imagine the smell in your house when you wake up! Mmmm!

Hello Folks,

What a wonderful weekend we had to spend with our family and friends. Our family went out for our first hike since Marlo was born. It was such great weather to get outside. We stumbled upon many strangers that were all eager to have a peek at the baby and talk about the weather.

I love the changing leaves, we have two large red maples in our yard. We spend a fair share of our days on the porch watching the leaves fall. while sitting out on our porch I came to the realization that we are one of the only households on the street that actually sit outside on our porch. I know some of our neighbours - probably more than most others but there is no real sense of community. It is because of this that I am so thankful to have a place like Bailey's to call my community.

We have a wonderful community of farmers and suppliers who work together to get your food to you. Often times if one farmer has run out of an item, another farmer with help us in filling the missing item. There are several deliveries that come in together, saving on time and fuel cost.

Lets not forget all of you and the community you have helped us build starting way back in Nina's carport and now still strong three full growing seasons later. This is our last Friday pick until June. We will be moving to Mondays starting Monday November 7th. This is because the church houses the Out Of The Cold program which provides compassion, food and a warm place to sleep on Friday nights through the winter. A good reason for a change.

Here are the Upcoming Bailey's pick up dates through to next spring:
There is no Bailey's Pickup on: October 14.
In November and December our pickups will be on Mondays, every other week. The dates are: Monday November 7th, November 21st, December 5th, December 19th.
After the new year our pickups will be every three weeks or so on January 16th, February 13th, March 5th, April 2nd, April 23rd and May 14th.

Highlights and New Items added to the offering list this week:

  • Mini Straw Bales can be used to decorate your house for the season and also putting your garden to sleep for the winter. They are in the 'plants' section along with the decorative Indian Corn!
  • Have you seen the mums around the church on pick up days. They are amazing and in the plant section if you want one too. They are a perennial plant. I now have five planted in my front gardens
  • Lena Burkhart has bags of broccolli. We have had them on the spontaneous table in the past. They are now on the order form.
  • Kingwood has Mibuna Asian Greens. These are great sauteed with some soy or tamari sauce - if you're ready for a new bottle, consider trying the sauces from Pristine Gourmet
  • Kim-chi making season is again upon us. We have Napa Cabbage, Daikon Radish, Carrots as well as various Asian greens - let us know if you're up for a kimchi making party!
  • Brenda Knechtel has added bunches of English breakfast and red radishes
  • This will be the last week for BULK peppers. I used my roasted peppers all last winter, I made soups, dips, sandwiches. I love how versatile a frozen roasted pepper can be
  • Sweet Potato squash is a new squash variety offered from Selema Martin. They look like Delicata to me!
  • Fresh Apple Cider from Apple Creek. It is organic and wonderful. If you haven't tried it yet, why not this week?
  • The Ambrosia Apple is now available from Martin's Family Fruit Farm
  • Martin's also has Bosc Pears. Bosc pears hold their shape well and are excellent for poaching and baking.
Poached Pears
  • 4 firm pears, choose those that have a stalk for better presentation
  • 4 cups water
  • 2 cups sugar
  • 1 cinnamon stick
  • 1 vanilla pod, split
  • 1 lemon, peeled and juiced
  1. Place the water and sugar in a deep saucepan (it needs to be big enough to hold the pears) and under a gentle heat, stirring occasionally, cook until the sugar has dissolved.
  2. Meanwhile, peel the pears, you can core them if you like, it's up to you but do leave the stem in place.
  3. Place the peeled pears in water (with the lemon peel) so it doesn't brown as you peel the remaining fruit.
  4. When the sugar syrup is just below boiling point add the lemon peel and lemon juice, cinnamon stick and vanilla pod. Stir, then add the peeled pears. Make sure they fit under the syrup. Turn the heat down and very gently simmer, without boiling, until the pears have softened.
  5. This should take somewhere between 20-30 minutes depending on the size of the pears.

I saw a wonderful documentary the other night called "INGREDIENTS". It was an inspirational film about local food, farmers, restaurants and their supporters. I enjoyed the fact that it was divided into seasons. As we move into the fall and winter, there is still so much locally grown food available to us. As we move into colder weather our bodies crave more heartier foods and the earth provides us with them.

Events in our Community

Organic Week
The second annual national celebration of all things organic, Organic Week starts this weekend! Canadian Organic Growers Perth-Waterloo-Wellington has coordinated a series of local events spanning October 15-22 to celebrate and raise awareness of the benefits of local organic food and farming. What do you do with your carved pumpkins after Hallowe'en?
Last year about 60 neighbourhood pumpkins were gathered together in Alexandra Park on the night after Hallowe'en. It was a great chance to catch up with neighbours and friends and see so many creative pumpkin carvings.

There are two different Pumpkin events that will take place locally this year:
  • 2nd Annual "Great Alexandra Pumpkin Patch" in Alexandra Park (located in UpTown Waterloo).
  • 1st Annual "Great Duke Street Park Pumpkin Patch in Duke St Park (on Duke St, between Bismark and Shanley St).

One Day Permaculture course
Jackie and Natalie want you to know more about the food around you. This full day course is on October 29th and will introduce you to topics such as "promoting native plants, rehabilitating disturbed landscapes, creating a foraging trail or augmenting the growth of highly nutritious foods in your own backyard." This is your last chance to order Tree Nuts from Niagara for pickup on October 21st!!

Are you looking forward to local tree nuts? I sure am! Until two years ago I loved the huge chestnuts from Italy that are sold in grocery stores in the fall and winter. Not any more. After tasting the super sweet chestnuts from Grimo Nuts in Niagara, I'm spoiled and can't go back. The chestnuts from Grimo are amazing roasted and even raw. One time I found some that had dried naturally (kids!) and they were very tasty too. They would likely make a great chestnut flour!

The Persian Walnuts and Heartnuts are very yummy too. Heartnuts are quite easy to open once you get the hang of it (see below) and if you toast the nut meat from either nut in a dry frying pan for a little bit the flavours just pop. You can't get nuts fresher than this!

I'm not a fan of the rich flavoured black walnut, but some really like it. There is a bit of a challenge in removing the meat from the shell, so we are lucky to offer the Black Walnuts (and the Persian Walnuts too) already shelled. On the website they suggest using black walnuts in a pecan pie recipe for a memorable dessert!

Now for some tips on getting to the meat of these nuts:

How to prepare and eat Sweet Chestnuts:

  1. Eat fresh using a paring knife to cut off the skin and fibrous covering
  2. Boil - Place sweet chestnuts into a pot with cool tap water. Cover pot while boiling and stir occasionally on medium high for:
    • medium size - 10-12 min
    • large size 15-20 min
      Using a slotted spoon scoop out a few nuts at a time and as soon as they are cool enough to handle, but still hot, cut them in half and pop them out of their skins.
  3. Roast - First pierce the skin to allow hot air to escape while cooking. Use a sharp paring knife to cut a slash or an "X" through the skin, but not the nut meat. The larger the cut the easier it will be to peel.
    • Chestnut Pan - Roast them by shaking the pan over medium heat for 20 minutes.
    • Microwave oven - place a dozen chestnuts around a microwave plate and cook on high for 4 minutes
    • Oven -  Place chestnuts on a cookie sheet and sprinkle with water. Bake at 400 degrees F for 15-20 minutes. Place one uncut chestnut on the sheet with the others. When it "pops" they are ready to eat.
  4. Enjoy!
