A message from Rachael:

Ordering closes Tuesday at 8pm for strawberries only and the order form for the July 8th pickup will continue to be open for another week (Don't worry, we'll send a reminder next week). This week may be the last opportunity to order flats of organic strawberries.

I was wondering aloud if whipping creme sales go up during strawberry season today... Maryrose said that the store she went to was definitely out of angel food cake, which would be very tasty under strawberries and whipped creme.

Another yummy thing to do with strawberries is make Fresh Strawberry Pie!!! I used a recipe that was passed down from Andrew's grandma, but a very similar recipe is on this blog: http://grshortstop.blogspot.com/2009/04/fresh-strawberry-pie-cry-for-your-momma.html. I highly recommend it and the sugar can be reduced a bit without much loss of flavour!

Jackie sent us this suggestion for making Strawberry Hearts. Thank you so much Jackie!!!

Strawberry Hearts
Wash and hull the berries within hours of either picking them or bringing them home.  Slice them in half, placing the seedy skin sides down in a food dryer, and dry the heart-shaped berry halves.  I put them in little jars (250ml or so) to store or to give away to children, many of whom seem to only slowly devour the hearts, keeping the jars longer for the scent of summer.  I use them in salads, to decorate pies,  to soak for adding to summer smoothies or to pre-cooked hot cereals, and occasionally to float in a summer iced herb tea.  The Ojibwa/ Chippewa called them "heart berries"; and they do seem to have a nutrient profile that's good for the heart.  However, I'm with the kids.  To me the smell when the lid first comes off the jar is more heartening than anything else.

Before we talk about the July 8th pickup and as I'm enjoying a litre of strawberries from Paul Bowman while I work, I want you to know that we can't leave you or our amazing strawberry growers hanging at the height of strawberry season! Next week we'll have a special pickup just for strawberries. This is a great opportunity to put away LOTS of strawberries so that you can enjoy smoothies, jam and so many yummy treats after these dear sweets fruits are finished growing. Pickup will be Thursday, June 30th at a location to be announced in Uptown Waterloo. We're even making all the flats $40 to give you a bit of a break and so we don't have to make change. Even if you're heading away for the long weekend you'll have a chance to hull and freeze berries before you go! Ordering closes Tuesday June 28th at 8pm and Pickup will start at 3pm!

NO pickup on July 1st!
Because it's Canada Day there will be no regular pickup on July 1st. Have a great long weekend!

Asparagus season is now over, but we'll still have limited amounts of organic strawberries on the 8th and will be able to offer you conventional strawberries as well. Leonard Martin's berries are just starting now so they should be lovely! Shelling peas will be available from Paul Bowman too! I think I'd eat sweet shelling peas instead of chocolate if given the choice.

New items from Stemmler's Meats
Some of you asked for Nitrate Free Bacon, others for Turkey Pepperettes, I'm a fan of Smoked Turkey Drumsticks and Maryrose says the Chicken Sausage with Feta and Spinach is her favourite, so we've decided to add these and more to the selection of items available from Stemmler Meats! Look for Turkey Wieners, Beef Jerky, Fresh Beef, Chicken and Turkey Sausages and more!

Items on sale!
100% pure, premium Canadian Soya Oil (aka Soybean Oil) in 250 mL bottles from Pristine Gourmet is on sale for $6 per bottle - that's $2 off our regular price. From Maryrose:

Hello folks,

It's all about strawberries for me this week . I had a wake up call bright and early Thursday morning. It was well before my alarm clock was to go off. Elvina Bauman called to let me know she has many more strawberries then she thought this week! This is very exciting news as I was worried that the cold snap we had last week was going to delay the strawberries even longer. My son and I took a drive out to Herrle's on their opening day to get our hands on some strawberries from the Norfolk area last week. I could not hold out any longer.

I hope we will have strawberries on July 8th. I can't guarantee we will. Paul Bowman has an unlimited supply of pints this week. I will be stocking up to get some of my freezing and preserving done for the winter.

Here is a recipe I will be making again this year:

Strawberry Lemonade Concentrate from Bernardin Guide to Home Preserving 1996

  • 6 c prepared strawberries (hulled)
  • 4 c lemon juice
  • 6 c granulated sugar
  1. In a blender or food processor, puree strawberries. In a large stainless steel or enamel saucepan, combine strawberry puree, lemon juice and sugar. Heat to 165º F, stirring occasionally. (Do not allow to boil.)
  2. Remove strawberry lemonade from heat; skim foam using a metal spoon.
  3. Ladle concentrate into a hot jar to within 1/2 inch of top rim (head space). Wipe jar rim removing any stickiness. Center snap lid on jar; apply screw band just until fingertip tight. Place jar in canner. Repeat for remaining concentrate.
  4. Cover canner; return water to a boil; process 15 minutes. Remove jars. Cool 24 hours. Check jar seals.
Makes 7 pint (500 ml) jars.

  • Strawberry lemonade: mix 1 part concentrate with 1 part plain or sparkling water, tonic water or ginger ale. Adjust concentration to taste.
NOTE: we found 1 part concentrate: 3-4 parts water to be very good
We would love to hear about some of the recipes you plan to make with strawberries this year. Send them along to info@baileyslocalfoods.ca

Soiled Reputation, Rounds Beans and Monforte Dairy are back!
Antony from Soiled Reputation has let us know his fields are finally producing enough greens for us to have some! If you haven't yet tasted his Bistro and Gourmet mixes, you really ought to! They are yummy and a little spicy and MMmm...

This also means Rounds Brand beans and Monforte Dairy have been added back to the offering list as they are all from the Stratford area and delivered with Soiled Reputation. Remember that if you are a Monforte CSA subscriber we will happily accept your vouchers for the amount of your cheese purchase!

A message from Rachael:

What a lovely weekend considering all the rain that was forecasted! I hope that many of you enjoyed Sunday's Grand Porch Party - I know that I saw more than a few familiar faces while I was walking around and enjoying the music!

Ordering closes Tuesday at 8pm, so take a few minutes and see what you need for this week.

Try something new? Tell us about a favourite!
Amazing as it may seem, I haven't tasted all the products that we sell. I couldn't possibly accomplish that (or want to)! For one, my family doesn't eat gluten, so most of the lovely baked goods are off limits to us, as well, all the jams and preserves are lovely, but imagine if I had a jar of each open in my fridge. That is where you come in. I love to hear what YOU like to eat. Please do share with us your favourite items, and if you'd like to write a little something for one of our emails, we'd love to include it!

Last week I ordered some of the From These Roots Maple Rhubarb jam because Tessa said it was yummy. This week Krista of From These Roots will be making a delivery to restock her products, so we have all of her jams, jellies and her new pickled asparagus available. Look in the 'preserves' and the 'jam' sections if you're interested in trying them. Raspberry Rosemary is already a favourite around here and I love her salsas too!

You may have noticed that the items from Bread and Bretzel are no longer available. The bakery was sold last week and the new owners are spending some time learning the business and refining recipes before they begin wholesaling again. We'll let you know if we are able to carry their products in the future.

Don't forget:
  • Stock up on goat cheese from Gordon's Goat Dairy. We brought some of the Havarti on a picnic lunch today. Mmmm... My favourite is their C-Line pro and my mom loves their Gouda with chiles!
  • Lettuce season is here! If you saw (or ate) one of those amazing heads from Brenda Knechtel or Elvina Bauman on Friday how could you not be excited? Enjoy the lettuce in June and the beginning of July as lettuce will be in short supply once the weather warms up and wants to go to seed.
  • Mini Straw Bales (in the 'other' section) are available as mulch for your garden... it's so much easier that pulling weeds and watering all the time!
  • This is the week to order tortillas from McKechnie, noodles from J&D Peters and gluten free flours from Jamestown Mills.
See you Friday,
Maryrose and Rachael

Free Movie passes for Forks over Knives - Final week!
Princess Cinemas is running a food/nutrition documentary entitled "Forks Over Knives" which is playing June 17-23 and they want to give two free movie passes to one of our members! Here is some information on the film: http://www.princesscinemas.com/film/?id=2352. If you would like to win the passes, please add a draw entry to your shopping cart - look for it in the 'other' section. We will accept one entry per household and will draw an entry at random for pickup at the June 17th pickup!

From Rachael:

After tonight's pickup I came home to a group of about ten - five to seven year old girls making banana boats around a bonfire in the backyard. This was my daughter's Sparks group who decided to hold their camping adventure inside tonight due to the crazy weather lately. We offered our backyard for some of their outside fun - banana boats cooked in the oven just aren't the same! After they left it was the perfect excuse to eat a smoked farmer's sausage cooked over the fire for dinner - The sliced tomato from Floralane tasted amazing on the side! A couple mashmallows for dessert were a great treat too!

If you ordered this week I hope that you appreciated the amazing heads of lettuce from Brenda Knechtel! Wow were they lovely - big enough to make salad wraps with! Other lovely looking produce included the green and red spring onions from Paul Bowman and the awesome asparagus too! We should have asparagus from Barrie's Asparagus for a few more weeks, but the organic asparagus farmers seems to be about done now... Hopefully this will give them more time to pick strawberries (hopefully we'll find some on the Spontaneous Table this Friday)! Right now most of the local strawberries are coming from the Simcoe area, but we'll have some awesome no spray and organic strawberries very soon!

Do you love herbs? The selection of herbs right now is growing. Look for some yummy ones from Elvina Bauman, Brenda Knechtel and Candace of Transpire Organics. We've been enjoying the oregano, tarragon and chives from or garden already!

Garlic Scapes - Harbinger of Spring!
Are you out of garlic? If you need some garlic flavour to punch up your dishes, consider trying garlic scapes! These mild tips that grow from hardneck garlic bulbs are tasty in salads, in scrambled eggs, as a garnish on rice or sauteed with pasta. By cutting the scape from the bulb, the farmer encourages the bulb to grow better. If you have lots in your garden (or really love the scapes from Paul Bowman) you can make them into pesto! How? Grind the scapes with roasted nuts (almonds, walnuts or pine nuts), olive oil (Sunflower and Canola could work great too), Parmesan cheese, salt and pepper to taste, maybe even some lemon... now put it on everything! It will go amazingly with tomatoes, pasta, pizza...

New longer ordering period!
Have you had a hard time getting your order in with such a short ordering period? We're getting more organized and we're able to open the order form on Tuesday nights from now on! This means that the order form will only be closed for a few hours on Tuesday night while we are contacting the farmers. The order form will be a work in progress from Tuesday to Friday, so keep checking back to see what we're able to add! I'm currently adding more flavoured chocolate bars from Katerina at Anna Tolazzi. Choose your flavours or buy the five pack to get a great deal and a sample of a few of the tasty treats!

What do you want to see on the Spontaneous Table?
We asked our Facebook followers what they want to see on the Spontaneous Table and already we are making changes to accommodate the requests! Today we had Tomato seconds from Floralane available and this week there are a limited number of croissants available from Golden Hearth - these are the real thing - nothing pre-made or frozen about them! Feel free to send us suggestions of products you want to see and we'll do what we can to make your local food wishes come true!

Please remember to order from these amazing suppliers this week.
  • Gordon's Goat Dairy - Read their story at http://www.gordonsgoatdairy.ca/ and try their cheeses - Mmmmm!
  • McKechnie - The BEST tortillas and chips... ever!
  • J&D Peters - Whole wheat pasta that doesn't take getting used to!
  • Rounds Brand Beans - A great alternative to canned beans!
Here are some upcoming events you might enjoy:
  • Grand Porch Party is this Sunday, June 12th from 3 to 5 pm - Details at http://grandporchparty.wordpress.com/
  • 3rd Mayor's Forum (Waterloo) on Building Resilient Communities - Be sure to register for the final event of the Mayor's Forum Series on Building Resilient Communities! It happens Saturday, June 18th in the Turret at Wilfrid Laurier University! Costs have been lowered to only $15 (with a 20% discount or more for those that need it.) Registration details at http://resilientwaterloo.ca (and an awesome 7 minute video of what happened at the first event) and http://www.transitionkw.ca/mayorsforumseries.html.

From Maryrose:

Hello Folks,

How did you enjoy our first mini heat wave? We spent most of Tuesday at the splash pad in Victoria Park. It felt so good to get wet and cool down. I had plans to pack a lunch and head to the park again Wednesday, but was surprised when I woke up and it was so much cooler out. There was no need to keep cool. So I used the perfect opportunity to get my seedlings from Sarah in the ground.

How is that amazing asparagus treating you. I think I have had it once a day since last Friday. We have gone through two bags from Barrie's Asparagus. This morning I made an omelette with ham, asparagus and brie. It was so delicious. I must remember to get some asparagus in the freezer this year. I have less than a month to do so.

A little bird told me there are already fresh strawberries out Simcoe way. We are getting closer to the first berries of the summer! The strawberries in my garden still seem a way off. But everything in my garden runs behind. I may have just enough in my freezer to tie me over until then.

Elvina Bauman has a few new items to offer this week. There is:
  • Fresh Sage
  • Fresh Oregano
  • Romaine Lettuce
We are still offering a few items on sale:
  • Cases of Pear Apple Sauce - It's like getting 2 jars free!
  • Mild Chili Sauce from Country Flavour - a great condiment for meats!
  • BBQ Relish from Erma Martin - What else would you put on your burger or dog?
Please remember to order from these suppliers this week. They will not be available again until June 24th.
  • Oak Manor - Stock up on flour and grains every other week this summer!
  • Green Table Foods - Available every two weeks through the summer.
If you are looking for a certain product and it isn't available, we have some suppliers who are not available every week in the summer. Some of these include:
  • Soiled Reputation - Antony says that the weather plus some greenhouse issues have reduced what he is able to offer. Hopefully they will be ready for June 17th
  • Monforte Cheese - delivered with Soiled Reputation
  • Rounds Beans - Available every few weeks
  • McKechnie - Available every two weeks through the summer.
  • J and D Peters - delivered with McKechnie
From Rachael:

Noah from Traditional Foods has a great deal for you! The 10 lb Beef Box of Family Value Steaks is on sale for $60! It includes Sirloin steaks, Blade steaks and more! It is the most economical box that we offer right now!

With the Green Table offerings being offered this week comes Eleanor's amazing Gluten Free Sunflower Flax Bread! Oh, how I've missed this. There are 6 loaves available and it freezes very well! I can almost taste the BLT I have planned for next Saturday!

So, recently I found this blog called Well Preserved and I'm finding it very inspiring. If you go back about a month there was a periodic table of preserving that I LOVED and just the other day there was a list of June preserving tips posted... Wow! Check them out at http://wellpreserved.ca/2011/06/01/june-preserving-ideas/

Here are some upcoming events you might enjoy:
  • Grand Porch Party on June 12th from 3 to 5 pm - Details at http://grandporchparty.wordpress.com/
  • 3rd Mayor's Forum (Waterloo) on Building Resilient Communities - Don't forget to register for the final event of the Mayor's Forum Series on Building Resilient Communities!
  • Square2Square "car-free" Sundays will close down a large area of King Street, Waterloo on four days this summer, so the public can take back the street on foot, bike or skateboards. This new, exciting community event needs adults or supervised teen volunteers as Guides, Runners or Helpers on Sunday June 19, July 17, August 14 and/or September 18, for 2-3 hour shifts - If you are interested in volunteering please email volunteer@waterloo.ca
