Rhubarb - The first taste of spring!
The rhubarb in our garden is amazing so the rhubarb from our amazing farmers is going to be great this week too! We all know that rhubarb pie, rhubarb sauce (on ice cream) and rhubarb crumble are amazing at this time of the year, but  if you are a fan, you should really try making rhubarb syrup. Check out a simple recipe here. You should keep an eye on so that it doesn't boil over on the stove. Ask me how I know this... =)

Welcome Home Refugee Housing Community with your help for a few years now. We accept donations from you (add a donation to your order by adding the "$5 donation" item from the 'other' section) as well as donating all table fees we collect from vendors at our pickups and sending food that is extra at the end of a pickup day to the refugees. The problem is, we're exhausted at the end of a pickup day and would LOVE if we had a few volunteers to come at 7:30 and bring a box or two to Welcome Home (which is near the Kitchener Market). Last Year’s and This Year’s Veggies!


This is an amazing time of year, when the full promise of the growing season is before us.  And yet there are things left to eat from last year!  So why not make a meal that celebrates last season and this new season?
Beets, potatoes, and many other storage vegetables are still in good supply having lasted through the winter.  But maybe they’ve lost their appeal (and grown thicker peels) after a long winter and many meals.  Here are two ideas from the new Oh She Glows Cookbook* that might help these vegetables make one more lap around your table.  And what about the new fresh vegetable?  Make an easy side of fresh asparagus, by lightly steaming it and then briefly frying it with a bit of butter and salt.



The whole meal is: fresh asparagus, Roasted Beet Salad, and Taco Fiesta Potato Crisps.

Beet Salad (Adapted from the Oh She Glows Cookbook)
4-5 medium beets
½ cup walnuts or other local nuts
4 tbsp. Balsamic Reduction
1 tbsp. oil
6-8 sprigs fresh thyme, minced

Preheat the oven to 400 F.  Place the beets in a covered ovenproof bowl, like Corningware.  Roast for 45-90 minutes, it really depends on the size of the beets, “until a fork slides easily into the largest beet.”  Let the beets cool until they can be handled, then rub them under cold water until their thick skins fall off. 
Slice the beets as thinly as possible.  Toss the beets with the balsamic reduction, oil, thyme, and nuts.  Alternatively, arrange them on a plate and drizzle with the vinegar and oil, topping with the nuts and thyme. 




Taco Fiesta Potato Crisps (Adapted from Oh She Glows Cookbook)
Potato Crisps:
1-2 large potatoes, sliced into ¼-inch rounds
1 tbsp. oil
Salt and Pepper

Walnut Taco Topping:
1 cup walnuts, toasted
1 tbsp. oil
1 ½ tsp. chili powder
½ tsp. cumin
¼ tsp. salt
Dash of cayenne pepper (optional)

Additional toppings:
Sour Cream or thick yogurt
Salsa
2-3 green onions, sliced
Pepper

Preheat the oven to 425 F, line a baking sheet with parchment paper or silicon baking mat.  Place the sliced potatoes in a large bowl, drizzle with oil and toss by hand until the oil is evenly distributed.  Arrange the potatoes on the baking sheet in a single layer, with none touching.  Sprinkle with salt and pepper.  Roast for 30-35 minutes, flipping halfway through, until they are golden, bubbly, and tender. 
While the potatoes are roasting prepare the Walnut Taco Topping: In a food processor, mix together the walnuts, oil, chili powder, cumin, salt, and cayenne, processing until they form a fine crumble. 
When the potato crisps are cool enough to handle arrange them on a plate (or leave them on the baking sheet) and top with a dollop of sour cream or yogurt, followed by the walnut mixture, salsa, green onions, and pepper.  Serve warm. 

*Oh She Glows is a vegan food blog written by Angela Liddon of Oakville, ON, that focuses on meat and dairy-free foods that appeal to all eaters.  Angela’s meals are often also free of gluten, soy, and processed foods, so put a hold on the book from WPL or get it on Amazon. Even if you’re not at all interested in vegan eating, the meals are worth trying for their abundant and delicious use of seasonal vegetables!

Seedlings and strawberries
Back up the bus. The strawberries aren't ready yet, but Brenda Knechtel assures me that a cool, damp spring (with no more frost!) will result in big, juicy strawberries. I can's wait.
Brenda has added seedlings to our list. Look for tomatoes and eggplants among the available seedlings in our "plants" section under "other" if you are looking for quality heirloom and hybrid organic plants! We need to charge HST on the plants, but please be aware that we've included the HST in our prices already!

Asparagus!!!

The asparagus is ready! We've been enjoying the super sweet asparagus from Barrie's Asparagus and are supplying some for Saturday's First Fruits Feast  (tonight! see below for details). You may think that the price per pound doesn't compare to the grocery store, but the freshly picked spears we offer are cut with no woody stem, so there is no waste and you are not paying by weight for the part of the stalk that you often have to snap off and throw out! So far we've eaten asparagus quiche (if you are GF, keep a pastry shell from Green Table Foods in your freezer), asparagus in pasta with herbs and steamed asparagus.  On to the grill next!

Juice and Energy Bars

We have two more new suppliers, and oh, are their products tasty (we should have samples on Friday too!)
  • Soma Juice - Look for their organic, raw, cold-pressed, Juices and Cleanses in the 'beverages' section under 'pantry' despite being fresh pressed and in our fridge! Maryrose's  two year old loves the Red Purifier (with beets)!
    We carefully handcraft each beverage ensuring the highest quality drink every time. At SOMA we uses organic & local produce as available, make all juices to order for guaranteed freshness, and package local orders in recycled glass bottles utilizing a bottle return program!
  • 2GO Energy Bars are in our 'bakery' section and the Truffles are in our 'chocolate' section under 'other'. I loved the ones I tasted, but didn't get to try Maryrose's favourite, the Peanut Butter Pretzel Bar. Other exciting flavours including peanut butter/chocolate, triple chocolate brownie, mint brownie, seed & quinoa, quinoa coconut and greek yogurt.
    We know you'll like these wheat/gluten and soy protein free gourmet energy bars and energy truffles that are hand made in Cambridge. You may have seen them on Season 7 of the Dragons Den!

Come celebrate the taste of new growth after a long, harsh winter. This four course dinner is to raise awareness about suicide prevention, with powerful symbolism that speaks to the fruits there are to enjoy when we hold on through the winters of our lives to finally greet the dawn of a new season.
In addition to a four course meal, there will be speakers and music. If you are able to volunteer, contact the organizers through facebook!
First Fruits is a pay-what-you-can event, designed to be accessible for all. Costs are covered at $12.50 per plate. We recommend that those who are able to, bring their chequebooks and make this thing a roaring success. Seating is limited to 150 people. Will you be one of them?

Gluten Free Potato "Bun"

Spring is here and grilling season is getting underway.  Here’s a new idea for a simple gluten-free alternative to wheat buns, and it’s one that is very locavore-friendly!  If you use these buns with veggie burgers you could argue that it is a truly all-veggie dish!



All you need is a large round potato.  Slice it in half, and then imagine each half as an uncut hamburger bun.  Cut the “buns” in half again, toss with a small amount of salt and oil, and roast at 425 for 15-20 minutes.  Turn the potatoes over, roast for 15 minutes more or until they are golden and bubbly looking.  Allow to cool a little bit before topping with burger condiments and your favourite style of burger!

Simple salad.

Earlier this week we had a meal of sausages, leftover potato salad and cucumber salad. I think everyone enjoyed the cucumber salad most. The cukes from Roseland Produce were halved and sliced, then mixed with cottage cheese from Organic Meadow and then salted and lightly peppered. So simple and so fresh and good. What is inspiring you as the weather warms up? We won't talk about the forecast for this weekend.

Soup from Stratford
Soup Surreal is our newest supplier. You might have tried Derek's soup at the slow food market in Stratford or at Stemmler's. He is offering three soups for the May 30th pickup: Moroccan Tomato, Maple Roasted Sweet Potato and Lemon Grilled Asparagus. What is not to like?

Other fruits aren't hurt by the winter cold, however, after the huge crop of 2013, we can't expect another huge crop, a more normal crop is expected.
The spring has been cool, delaying bloom, and likely delaying harvest."

Prices are very volatile. We have adjusted prices for pork and beef and expect that chicken prices will be affected too."We expect that this will continue for at least a year. Possibly longer. The commodities inventories are at record historic lows. Not since the 50's have we seen this kind of inventory numbers in Canada. We are working hard to find the suppliers to keep pricing under control."

Frozen Berry Coffee Cake



I grew up with blackberry coffee cake every Sunday morning.  I’m pretty sure the secret family recipe featured Bisquick pancake mix.  In an attempt to make the cake more local this recipe replaces all refined sugars with maple syrup and honey, and makes use of an overnight rest to soften the whole wheat flour.  If you look in your freezer and don’t have any frozen fruit then you know that this summer you need to freeze more (which is how I feel after finishing the raspberries in this cake!). 


Frozen Berry Coffee Cake
Recipe adapted from Joy of Baking’s “Blueberry Cake.”

Cake Batter:
½ cup all-purpose flour
½ cup whole wheat flour
(or 1 cup of hard sifted flour or light spelt flour instead of the above flours)
⅓ cup milk
¼ cup melted butter or oil
⅓ cup maple syrup
½ tsp. vanilla
¼ teaspoon salt
1 tsp. baking powder
1 egg
2 cups frozen berries (blueberries/serviceberries/raspberries/strawberries/blackberries…)

Streusel Topping:
⅓ cup whole wheat or hard sifted flour
2-3 tbsp. oats/barley flakes/spelt flakes
¼ cup cold butter, chopped into pieces (or use a fork to crush the butter)
¼ cup honey
2-3 tbsp. unsweetened coconut flakes (optional)
2-3 tbsp. ground walnuts or pecans (optional)



Mix together the flours, milk, butter/oil, and maple syrup, cover and refrigerate overnight.  In the morning add the salt, baking powder, and egg.  Pour/scoop the batter into a greased cake pan (or pie dish) and top with the frozen berries.  Preheat the oven to 350.

Mix together the streusel topping with a fork or pastry cutter until the butter and dry ingredients have formed together into pea-sized clumps.  Alternatively you can use a food processor to mix it all together. 

Cover the berries with the streusel and bake for 40-50 minutes, until a toothpick or fork inserted in the centre comes out clean.  Allow to cool for a few minutes before serving. 

Serve with some really deliciously-strong [organic fair trade] coffee….
