A message from Rachael:

I'm so done with snow. I'm looking forward to a wonderful summer that makes it easy for our farmers to grow amazing food. May the sun shine, the rain fall (every couple of days, maybe even overnight). May this crazy deep freeze make pest management easier. I'm full of hope for a lovely spring and summer right now. This is our last Monday pickup, so be sure to order enough for three and a half weeks and we'll continue running on Fridays.

New crop maple syrup!!!

Maple syrup is flowing (on the days that aren't -17°C) and Kevin is making some of the best quality maple syrup we can find. You may wonder why you don't find 'dark' syrup on our order from, but that is because his trees don't make dark syrup. His trees start making light, then medium, them amber as the sap stops flowing (not available now, this will come!). The grades are based on the syrup's colour and the darker the syrup, the more flavourful it becomes! Kevin highly suggests the medium syrup! Ontario syrup is graded as follows:

  • Extra Light - 75% or more light transmission
  • Light - 60.5% or more but less than 75% light transmission
  • Medium - 44% or more but less than 60.5% light transmission
  • Amber - 27% or more but less than 44% light transmission
  • Dark - Less than 27% light transmission
While not certified organic, Kevin follows organic principles. He uses state of the art technology including vacuum tubes to collect the syrup (no buckets with the possibility of lead solder leaching into the syrup) and energy efficient practices that reduce by 50% the amount of energy needed to make syrup. They feed the boiler using only wood sustainably collected from their wood lots. This pickup is conveniently the day before Passover and one week before Easter for those of you who celebrate. Will you be getting food for a Seder meal or Easter breakfast? Look for

  • Eggs for eating or colouring (you might need an extra dozen!)
  • Flour or grains for baking Easter bread
  • Lamb
  • Turkey or chicken
  • Tofu
  • Cheese

Supper club at Kitchener Market!
Our very own Aura (also of Ambrosia Pastry Co.) is running a Supper Club at the Kitchener Market! Join her for an interactive cooking session full of fun, food and laughs. There are two clubs scheduled so far on Tuesday April 15 and Tuesday May 13 from 6:30 to 8:30 pm. The cost is $45 per person and includes a market bag and the food prepared during the class.
