A message from Rachael:

I'm so done with snow. I'm looking forward to a wonderful summer that makes it easy for our farmers to grow amazing food. May the sun shine, the rain fall (every couple of days, maybe even overnight). May this crazy deep freeze make pest management easier. I'm full of hope for a lovely spring and summer right now. This is our last Monday pickup, so be sure to order enough for three and a half weeks and we'll continue running on Fridays.

New crop maple syrup!!!

Maple syrup is flowing (on the days that aren't -17°C) and Kevin is making some of the best quality maple syrup we can find. You may wonder why you don't find 'dark' syrup on our order from, but that is because his trees don't make dark syrup. His trees start making light, then medium, them amber as the sap stops flowing (not available now, this will come!). The grades are based on the syrup's colour and the darker the syrup, the more flavourful it becomes! Kevin highly suggests the medium syrup! Ontario syrup is graded as follows:

  • Extra Light - 75% or more light transmission
  • Light - 60.5% or more but less than 75% light transmission
  • Medium - 44% or more but less than 60.5% light transmission
  • Amber - 27% or more but less than 44% light transmission
  • Dark - Less than 27% light transmission
While not certified organic, Kevin follows organic principles. He uses state of the art technology including vacuum tubes to collect the syrup (no buckets with the possibility of lead solder leaching into the syrup) and energy efficient practices that reduce by 50% the amount of energy needed to make syrup. They feed the boiler using only wood sustainably collected from their wood lots. This pickup is conveniently the day before Passover and one week before Easter for those of you who celebrate. Will you be getting food for a Seder meal or Easter breakfast? Look for

  • Turkey or chicken
  • Tofu

There are two clubs scheduled so far on Tuesday April 15 and Tuesday May 13 from 6:30 to 8:30 pm. The cost is $45 per person and includes a market bag and the food prepared during the class. Seed Starting Garden Kits by Brenda Knechtel




Brenda's family has spent some time, and pulled together a kit for starting garden seedling to offer to the Bailey's customers.  For $35.50 (including HST) you can start your garden from seeds!



The Seed Starting Garden Kit will contain:

  • 1 non-perforated tray and greenhouse dome
  • 22 -3" round peat pots
  • organic potting soil
  • planting instructions
  • Seeds for the following varieties:
    • 2  "Happy Rich"sprouting Broccoli:  Dark green plants that produce jumbo-size florets with many side shoots.  Broccoli flavour.
    • 1  "Caraflex" Cabbage:  organic seed; midseason; 1.5-2 lb. pointed head
    • 1  "Stonehead" Cabbage:  solid  early summer maturing; 3-4 lb.; sweet tasting.
    • 1  "Storage #4" Cabbage:  Late maturing;  large head for storage or fresh eating; 
    • 2  "Vates" Kale:  organic seed;curly, dark, blue/green leaves
    • 1  "Jalafuego" Pepper:  high yielding jalapeno hot pepper;3-4" long fruit.

Oatmeal Cupcakes – For Now or Later




We just had our third baby (and third boy!) on Friday morning. We are overjoyed and happily adjusting to our newest family member.   As we try to get used to a new routine once again we’re looking for easy, healthy snack foods.  My wife found this recipe the other day and we made them and were very happy with the results.  They feature a good number of Bailey’s staples (oats, applesauce, maple syrup, oil), are easy to prepare, and good for saving in the freezer for whenever you need a little bit of breakfast.
The batter can be made the night before and allowed to soak in the fridge which will help to further soften the oats, adding to the ease of baking in time for breakfast.




Oatmeal Cupcakes – For Now or Later
Recipe adapted from Chocolate Covered Katie
Makes 24 cupcakes
  • 5 cups oats
  • 2 ½ cups applesauce
  • 1 tsp salt
  • 4-6 tbsp. maple syrup
  • optional: ⅔ cup mini chocolate chips
  • 2 ⅓ cups water
  • ¼  cup plus 1 tbsp. oil
  • 2 ½  tsp pure vanilla extract
  • optional add-ins: chocolate chips, dried fruit, cinnamon, shredded coconut, chopped walnuts, ground flax or wheat germ, pumpkin puree with pumpkin pie spices, etc.



Preheat oven to 375 F, and grease cupcake tins.  Combine all the dry ingredients in a large bowl and mix together well.  In a second bowl combine and mix together the wet ingredients.  Mix the two bowls together then spoon into the cupcake tins, filling until just full (they won’t expand like normal cupcakes).  Bake for 20 minutes and check to see that they’re beginning to turn golden on top.  If you like you may give them a quick broil for 1-2 minutes at the end to crisp up the top.  Allow to cool for a few minutes until they can be pried out of the cupcake tins.  (The cooler they are the easier they are to remove.)  
If you are going to freeze the cupcakes just freeze them in the cupcake tins before removing them and and then you can transfer them to a freezer bag.  Reheat them when you need a quick and easy breakfast (or any meal), and top them with fresh or frozen fruit (in the photo they’re topped with frozen blueberries), or maple syrup, or anything else that sounds good!
