You'll notice that we have two order forms open right now. One is a special order for Tree Nuts from Niagara for pickup on October 21st!!

We will have this special order for Black Walnuts and Persian Walnuts (the ones you're accustomed to) as well as Heart Nuts and Chestnuts so that you have lots of time to order. As hard as it is to think of January through March right now, while making this calendar I made it almost to June and I'm already looking forward to asparagus and strawberry season again!

I hope you enjoyed this gorgeous weekend! The warm weather paired with the changing and falling leaves was exquisite! We spent a whole lot of time outside n the Mary Allen Studio Tour. Many neighbourhoods hold studio tours or art walks in the coming weeks and months. It's a great way to meet local artists and artisans and pick up gifts for the holiday season.

Throw a party - pick a theme!
This weekend we went to a Mexican themed party and oh, what amazing food! They made tortillas from scratch and everyone brought a dish to share including guacamole, salsa, refried beans, rice, and banana fritters. If you ever want to throw a Mexican themed party (or have a Mexican themed dinner) we have the tastiest tortillas, chips, tostadas and tacos around from McKechnie Foods in Aylmer. Their flour wraps are great for lunches too and the larger 10" size makes it easy to stuff your burrito REALLY full. If you like tamales they have some of the tastiest around. Just thaw and steam them!

Talking Turkey
Thanksgiving is in two weeks! No wonder the harvest foods are available in full force. If you're thinking turkey for dinner we have you covered! Kevin and Anne Snyder of Snyder Heritage Farms have some of the best birds around and we're so happy to offer their products year round, but mostly at Thanksgiving! These birds are frozen for freshness so if you need your thawed for early next weekend, buy it this week! The following is from Kevin:

We make our GMO-Free feed from our own grain. We blend our wheat and corn with soy and add essential vitamins and nutrients to the feed. A different turkey...
Did you see the chocolate turkey sample from Anna Tolazzi at our checkout on Friday? It's the most lovely centrepiece you could ever want and a tasty dessert too! Made of over 800 g of chocolate it is absolutely gorgeous! I posted a photo (that doesn't do the bird justice) on our facebook page
at http://www.facebook.com/baileyslocalfoods and it will likely visit again next Friday. My four year old was downright upset that we didn't get to take the turkey home on Friday after he had been admiring it all afternoon.

Decorative corn and lovely squash
That same four year old was entirely in love with the decorative corn that Eva Weber sent us on Friday and picked his favourite bunches (about 8 of them) to carry around in a basket all afternoon. The colours are lovely and It's in bunches of 4 or 5 and tied with a bow. Right now the winter squash that are available are both lovely and tasty! You could put together an autumn table with a few squash varieties, some pressed or curling leaves, that lovely decorative corn and then when you're hungry, choose one of those squash for dinner right off the table. We have been enjoying mashed orange kabocha for dinner lately - it is very sweet and a treat with onions or apples in the mash.

Organic Apples from Apple Creek Farm
Mary picks lots of apples for us. They are carefully sorted and sent for you each week, but did you know that groups can go picking at the farm too? What a great place to bring children for a quick lesson in how to pick apples without damaging the trees. The farm in outside of Drayton and you'll have to call Mary a few days in advance to arrange your visit. If you'd like contact information for Apple Creek Farm please let us know!

Tuesday at the Library
After you get your order in early Tuesday evening you can head over to the Forest Heights branch of KPL to meet Lynn Ogryzlo, Author of The Ontario Table and hear how buying local food can revitalize rural communities and create a new prosperity in Ontario. Lately I've needed extra inspiration to write these emails and tonight I'm looking at the order form as I write. The organic Coronation Grapes look great, and I just added peanuts, PB and popping corn from Simcoe to the list (We should be getting more Canola oil too!) Andrew is in the order form too and I notice 6 baskets of the Sunstart and Polebake Tomatoes in our 'shopping basket'. I had to check that he intended this...

He's planning on making tomato soup, so it *was* intentional. Yesterday we made tomato soup. It wasn't intentional.

I was trying to tidy the kitchen (nothing is tidy with a 6 week old, 4 year old and 7 year old). In a box on the floor I found the bag of last week's tomatoes. They were in much better shape than you'd think after 10 days in a plastic bag, but they needed some trimming. I swore a little, then started to cut tomatoes. In our favourite round bottomed pot I turned on the heat, glugged some olive oil and sliced in a bit of the red onion that was left on the cutting board from the salad at lunch. Then in went the salvaged tomatoes. There were even two and a half tomatoes that were in pretty good shape and didn't need to go into the soup. Wonders never cease! By then, Laura was hungry, so I tossed in some salt, turned down the heat and ignored the soup in favour of nursing my baby on the couch. My 7 year old was not in the mood to pick herbs from the garden, so luckily Andrew took over and added basil and oregano. I'm not sure what else he added (turns out it was garlic, water, pepper, and definitely some spinach!), but when dinner came around it was a lovely sweet tomato soup that I enjoyed better than the turkey noodle soup that was planned for dinner! Perfect for the cold and rainy day! Now we'll just have to put the recreated tomato soup creation (with white beans too?) up in jars or find more freezer space...

What are you 'Putting up"?
Last year my motto for preserving was 'only one ingredient' and I promised myself I'd make salsa this year. This year we've frozen strawberries, blueberries and peaches (and the freezer is FULL) and canned white grape juice (there is still purple juice from last year). I'm not feeling hopeful that I'll get salsa canned, but if you have a recipe you'd like to share, I might just try it!

Luckily I have this great place to buy salsa... My favourite is the mild Asparagus Salsa from Barrie's Asparagus with the From These Roots Salsa coming in second - it's pretty spicy. Matt used to volunteer with us before he moved and he LOVED the Floralane salsa because of the pepper taste. Floralane even has a recipe on their website at http://abittaweb.com/www.floralane/recipes.htm but I'm not sure it's the same as the salsa they sell in jars. Peach Slices! Sunshine in jars!
Speaking of putting up fruit. I can tell you that 12 boxes of PF24 peaches make 203 jars of peach slices. Naamon and Selema of Orchard Hill Produce processed the peaches for us last Monday and they are on the order form now! These are the sustainably farmed Palatine peaches in a light honey syrup - the honey is from Bauman Apiaries so these peaches in 750 mL jars are 100% local!! We also have peach slices from Country Flavour available in 1 L jars and by the case.

Last call for Niagara Fruit!
Unfortunately the peach slices in jars are the only peaches we'll still be able to sell to you until next year. The peaches have not held up so they will not be available on Friday. Sorry!

Big thanks to Eva and Rene for growing lovely fruit with more love and fewer sprays and thanks to Mary Jane and Jan who bring us this fruit from Niagara each week!

Here is the last note from MJ about the Palatine fruit for this year!
This will be our last fruit run to Niagara. It has been such an interesting year with the effects of the long spring reaching into the season reflecting in the cherries and apricots and some plums and pears. But once the heat hit and stayed the peaches were in their glory! And now the trees are showing signs of wanting to go to sleep for the winter and we will have to wait until they awaken for cherry season.
 
I would like to thank everyone for your wonderful participation. You are making a difference by supporting local farmers! We are a part of the sustainable farm. By doing our part in support, trees do not have to be ripped out and land lay fallow. Instead plans are being made to plant more fruit trees to sustain this direct market!

For our final run we have VERITY PRUNE PLUMS, EMPRESS PLUMS,GREEN GAGE PLUMS, BLUE TABLE GRAPES and BOSC PEARS.

The Verity prune plum is a versatile plum. It is a medium size blue prune plum over a lovely yellow-greenish flesh. It is a good quality plum that is free-stone. They are good plums for cooking, baking, canning and juicing. They are also nice and sweet so they are good for drying and fresh eating. They are a medium sized plum with a dark purple skin.
We were hoping to have some Late Italian plums this year but the pollination was not good with the spring. The Verity plum can be used the same as the Italian plums.

This is the first year we have had the 'Empress' plum to offer. This is a very large plum fantastic for fresh eating. It has a deep blue skin over a nice yellow flesh with sweet flavour!

The Green Gage plum is a medium-small plum, bright green in colour. It has a sweet-tart flavour to it and is very good for preserves and jams (several recipes on Google).

We have 2 varieties of blue table grapes available for Friday. One is a smaller round and seedless variety and the other is larger, oval and may have a small seed.

Just a reminder - All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!

Don't forget  that this is the week to stock up on items from Green Table Foods, Oak Manor and Rounds Beans!

A Message from Rachael:

Here is a quick rundown of what you should look for this week!
  • Grains from Oak Manor available this week and then not until October 7th. Stock up on oats for porridge and granola or better yet bake bread to warm up the house!
  • Rounds Dried Beans available again this week! (see below)
  • I didn't get a chance to freeze celery for soup this year, so I'll be using celeriac - Paul has it available with tops now, but the roots should be available most of the winter.
  • We had a limited amount of peaches in jars preserved this year. We used PF24 peaches from Palatine in a light honey syrup thanks to the bees at Bauman Apiaries. We hope you enjoy them all winter long!
  • It's bulk tomato time! Great for making salsa, canning sauce or putting up stewed tomatoes to add to your chili this winter!
  • Romaine and green crisp head lettuce is available now that the weather has cooled a bit
  • Have you tried the biscotti from Circle of Life? I especially love them because they are gluten free, but even if you can eat gluten, I'd recommend them! White Chocolate Cashew, Lemon Poppyseed, Mocha Hazelnut and Orange Cranberry are the flavours available.
  • It's zucchini season and Lena Horst has added Zucchini Bread to her offerings. Try it or any of her lovingly homemade baked goods!
  • Brenda Knechtel has Matt's cherry tomatoes again! Tiny, super sweet and still on the vine!
  • Bell peppers are about ready! Edward and Selema Martin have some chemical free ones available this week!
  • This is the third week of Honeycrisp apples from Martin's Family Fruit Farm. You could eat one instead of dessert and still be happy!
  • If you want fruit from Niagara, this is the last week to order! Peaches, grapes and plums available! They are on the order from now but I'll include more details on Monday's email!

Beans, Beans!
Of course they're good for your heart... but how do you choose from all those varieties? Our order last week wasn't delivered as Steve was out of town, but he'll bring us your order this week!
The dried beans, peas and barley we have available from Steve and Diane Rounds are so lovely and there is an amazing selection. The pinto beans are great for making refried beans, peas make a hearty soup and you can cook barley in stews and soups also. Welcome Home!
Have you ever wondered what happens with extra food we have at the end of our pickup day? We try to minimize having extra, but inevitably there is food left over. Sometimes volunteers buy a few extra items, but we've been lucky to have additional volunteers who pick up the extra produce and bring it to Welcome Home Refugee Housing Community. A big thanks to Erica, Anita and Jeff for picking up the food and bringing it where it's needed!

Here is more information about this amazing program from Marcée Groen, Supervisor / Program Development:
Welcome Home Refugee Housing Community has a vision to provide newly arrived refuges with a vibrant community and a sense of home. Refugees are people who have to flee their homes because of war, religious persecution, political oppression, or discrimination due to gender, sexual orientation, or ethnicity. At Welcome Home, we have received people who have experienced all of the above. At the time of this writing we have two men, five women, and a mom with her two sons. They have come from the Congo, Eritrea, Sudan, Iraq, and Colombia. The details of the stories can not be shared for their and their families' protection, but rest assured they have journeyed through unimaginable tragedy and heartache. Some have had to leave well-paying jobs, nice houses, and choice vacations because they chose to speak against child labour. Others have run for safety because they chose to believe in a faith that was not legal in their country. In other cases, the political landscape of the country has changed and our refugee friends suddenly found themselves on the wrong side of the government. No matter the context, they arrive at our second-floor, downtown building tired, grieving, and grasping to make sense of their new Canadian surroundings. And that is why Welcome Home exists. With the help of local churches, agencies, businesses, and people, we work hard and love hard to provide one-year of home sweet home to those who suffered most. Thank you for all and anything you do to help!

From Erica:
We also supply a food basket once a month to a Colombian family of 5, a week before they get their monthly check from the government. They used to live at Welcome Home, but now live in government subsidized housing.

I want to sincerely thank you and Mary Rose for your over-flowing generosity! I'm sure that besides filling their bellies, it must mean so much for these refugees to know that there are people welcoming them in our country. There is one pregnant mama there, and she was beyond herself over the flowers when I brought them in on Friday. I think it's amazing what just a few people can do to increase the quality of life for so many individuals! Fruit from Niagara!!!
We will soon be coming to the end of fruit season. We expect our last run will be Friday September 23rd.

For Friday we have GLOWING STAR PEACHES, ALL-STAR PEACHES, NECTARINES, VERITY PLUMS, EMPRESS PLUMS, and 3 varieties of SEEDLESS TABLE GRAPES!

The Glowing star peach is from the 'stellar' peach series.....same series that the Coral Star, All Star and Blushing star peaches came from . The Glowing has a deep red skin over a bright yellow melting flesh. The flesh has a lovely red colour around the pit. It has sweet flavour and is 'very' freestone. I have been able to sample to Glowing Star and I am very impressed with its flavour and looks! This is the final variety of peach Eva and Rene have available. It is 'very' freestone and is excellent for preserving as it does not turn brown.

The All-star is also from the 'stellar' series of peaches. The All-star peach has a golden skin covered with a bright red flush and has a firm yellow flesh. Peaches from the 'stellar' series are famous for not turning brown after it is cut. It is a high quality freestone peach that is excellent for canning, cooking, baking, drying, freezing and eating! They are a bit smaller this year but they are full of flavour!

The nectarines are finally ripening! The orchard is young and will take a few more years to be up to full production, but we do have an offering of Nectarines. The Red Gold nectarines are a high quality fruit with a great shelf life. It is a larger freestone fruit with a smooth deep red and gold skin. The flesh is gold-yellow in colour with consistent texture that is melting and juicy! It is known for it's excellent flavour.

The Verity prune plum is a versatile plum. It is a medium size blue prune plum over a lovely yellow-greenish flesh. It is a good quality plum that is free-stone. They are good plums for cooking, baking, canning and juicing. They are also nice and sweet so they are good for drying and fresh eating. They are a medium sized plum with a dark purple skin.
We were hoping to have some Late Italian plums this year but the pollination was not good with the spring. The Verity plum can be used the same as the Italian plums.

This is the first year we have had the 'Empress' plum to offer. This is a VERY large plum fantastic for fresh eating. It has a deep blue skin over a nice yellow flesh with sweet flavour!

We have a very few number of boxes of Red Bartlett pears as this is the first year for new trees. The Red Bartlett pears has a rusty red skin with a juicy creamy textured flesh. It gives off a sweet aroma. They are great for eating fresh or adding to salads. Along with being good canners they are also excellent cooked and poached!

We have 3 varieties of seedless table grapes available for Friday....
1.Sovereign Coronation grapes. These grapes have a vibrant deep purple-blue coloured skin. It is sweet and sour with a distinctive musky flavour! They have a thin skin and are seedless! Uses vary from juicing, preserves, jams and jellies, freezing and eating fresh!

2. White (green) Table grapes. The white table grapes are a very sweet seedless grape with a more neutral flavour.

3. Blue Table grapes. These blue table grapes are a nice sweet seedless European type grape. Rene said their family was fighting over these grapes when they first came in from the vineyard!

Foodlink's signature culinary event Taste Local! Taste Fresh! is only days away. The good news is that there are still some tickets left and the long-term weather forecast is even looking good. There's a lot of excitement brewing as the chefs and farms prepare to greet you with a stunning line-up of local food creations. This year's event on Sunday, September 18 is shaping up to be the best ever.
If you haven't already purchased your tickets, don't delay! All proceeds from the event go towards Foodlink in our effort to support local food and local farms.

Homemade Grape Juice
Sunday my dad and kids were on the front porch preparing grapes to make grape juice. Picking grapes off of the stem is a perfect job for little hands and if they eat a few it's no big deal (and really yummy!) Until a few years back I thought the only way to make grape juice was to squeeze the grapes (or crush them like Lucy and Desi did). While the resulting crushed juice is lovely and yummy, it's so much easier to can grape juice with the grapes in the jar. Super yummy too. Last year I made purple juice from the Sovereign Coronation grapes and this year we'll make white juice with the Muscat grapes. Last year's recipe called for 2 cups grapes, 1/2 cup sugar (I used 1/4 cup) and enough boiling water to fill a jar, then process for 10 minutes (plus proper sterilization and handling). The instructions that I used last year are archived at http://web.archive.org/web/20100113124139/http://www.ehow.com/how_5850549_can-grape-juice.html, but today I found a video (http://www.youtube.com/watch?v=hp5QWEH1UQg) that simplifies the process even more! She doesn't even suggest using a water bath, but you can follow her procedures then process your jars to ensure everything is sterile!

Special Diets? School rules? We can help!
Do you or the kids have food restrictions? Have you been told that your children have to bring nut free foods to school? New Moon cookies are great for school lunches as they are nut and dairy free (and the Mackies are Gluten Free - as all macaroons should be!)

Ratatouille made simple!
Catherine was nice enough to share a quick and easy recipe for Ratatouille (but I'd suggest adding lavender to it!) She wrote:

This cool weather is such a change! I hope that you are enjoying it. Bring on the fuzzy sweaters! (Yes, I'm really hoping for another heat wave). The colder weather means that in a couple weeks we should have those lovely MUMS from Selema Martin. They need cool weather to bloom and develop their colour (and she doesn't force them using a cooler). It's amazing what I've learned from our amazing farmers. In the mean time, consider getting some of the lovely purple fountain grass. It is stunning!

For an amazing autumn meal, I love ratatouille! Introduced to me by Tracy one night night when we went over to watch the movie, it's been my fall favourite ever since! Andrew made it for lunch on Sunday and it cheered me up immensely. What a better use of zucchini, eggplant, tomatoes, peppers and onions!! Don't forget the garlic and lavender and whatever other herbs you choose. Have you made it before? Do you have a favourite ratatouille recipe (that isn't as involved as the classic by Julia Child)? Mmmmm!

A few late additions and things I'd like to point out on the order from include:

  • Celery, Leeks and Onions from Selema Martin (freeze the celery for soup all winter long!) - All chemical free!
  • This the season for beets! So lovely in salads with purslane and parsley!

  • New Potatoes! Yum!
  • The first of the bulk tomatoes for canning!

Congratulations are in order! Maryrose, Dave and Otis welcomed Marlo Gabriella into their lives on Friday August 26th! Welcome Marlo!!

Speaking of Goat Cheese...
The other day I checked out the Gordon's Goat Dairy website at http://www.gordonsgoatdairy.ca/ and was impressed with their online descriptions of the cheeses so I'll share them with you:
Come experience our delicious handmade cheeses! There are four unique and tasty varieties to choose from:
  • C-Line: Moist, creamy, and buttery. Gord's original recipe made by adding a special probiotic to our Havarti recipe, perfect for the health-conscious consumer. It is named after the road on which the farm is located.
  • Gouda: Creamy, mild flavour.
  • Havarti: Firmer texture, more robust flavour.
  • Cheddar: Hard texture, mild flavour. Curds also available.
We also offer flavors of chives/onion and hot pepper.
It is the gentle handling of our farm fresh milk that leaves you with creamy wholesome cheese ready to be served in your kitchen!

Apple season is in full swing!!!
Tiffany shared with us on facebook that she made a divine apple pie with the tart yellow organic apples from Apple Creek Farm! We'd love to hear how you have enjoyed this season's apples too.

Steve From Martin's Family Fruit Farm has added Macs, Galas, Ginger Gold and the AMAZING Honeycrisp apples to his list!

Mary from Apple Creek Farms has Paula Red and Jersey Mac apples and has so much apple wisdom to share. She tells us about what is available below:
Still lots of Vista Bella and Transparent apples too. If it is the "Harvest" apples you are looking for then the Yellow Transparents are the ones you want.

Paula Red apples fresh picked always remind me of Cortlands. Just a bit of a tang as you crunch into the apples but a sweetness that lingers... Excellent for fresh eating and for baking/sauce etc..

To make pink apple sauce choose Vista Bella, or Jersey Mac. Core the apples but cook them with the skin on - then put them through the ricer or sieve, or victorio.... presto - pink sauce.

Yellow sauce is made with the Yellow transparent apples - Let these apples sit on the counter for a day or so to let them turn pale yellow, then they are ready to put into sauce. Again core them but leave the skin on when cooking them. The skin virtually disappears as these cook so there is very little waste when the are smashed into sauce. If you let them sit, the sauce will be yellow and need less sweetener but if you make the sauce sooner, it may have a green tinge and will need more sweetener..... or top your sauce with honey nut cheerios or granola... yummy!! (My Dad always put cake or brownie in the bottom of the dish and poured on the apple sauce...)

In terms of size of apple, I am trying to make the three pound bags consistent - What I mean is, there will be either big OR small apples in the bag. If you need apples for school lunches get to the pick up early so you can find a bag full of smaller apples that will suit children. If you need them for an adult lunch then look for a bag with the bigger apples...

Apple sauce is still available - freshly made then frozen - for preservation and transportation. So far we have only made the yellow transparent sauce. but other varieties will be available through the season.

I can also add Crab Apples to the list. A limited quantity - only about 10 quarts available at this point but we have a second variety that is not quite ready yet. These are the ones to make your apple jelly with. a very tart apple. They are the size of a three year old's fist. Red over yellow is the colouring. The flesh is very pale yellow. Check out the bernadin chart for a jelly recipe get busy:) yummy on toast, cinnamon raisin bagels...

Coming soon - elderberries. We have two bushes within twenty feet of each other. Bush #1 has fat juicy berries - almost ripe, hanging in heavy clusters, the second has smaller berries in lighter clusters. We will put the water to the second bush to encourage some growth before they ripen. We will pick the clusters as they ripen and freeze the berries.

The Coral-star peach is a peach that is said to 'have it all'. Beautiful appearance, size and flavour. They are a large peach with attractive colour with skin 60-80% bright orange-red. It has great sweet peach flavour and aroma. This freestone peach is unique in that is does not brown when cut making it one of the best peaches for canning and freezing!

The All-star is a peach that is similar to the coral-star. The All-star peach has a golden skin covered with a bright red flush and has a firm yellow flesh. It is a high quality freestone peach that is excellent for canning, cooking, baking, drying, freezing and eating!

These peaches are from the 'Stellar' peach series developed by Jim Friday. We also have the PF24 peach which is from the 'Flamin' Fury' series of peaches developed by Paul Friday (thus the 'PF' in the name)... Jim's cousin. The Friday family have been breeding fruit since they came to Michigan in 1846 and the farm has been in the family for 162 years! Both Fridays are one of the few private breeders left! Paul and Jim were always competing to create the best peaches! I think they both succeeded. But you can taste for yourself!

The PF 24 peaches are nicely coloured peaches with a firm flesh and is of excellent quality. It is freestone and is an all purpose peach - canning, cooking, baking, freezing, drying and as always... fresh eating! Enjoy!

Grapes, grapes, grapes!

The Muscat grape has a sweet aroma and full flavour. It almost has a slight spicy flavour to it. They are a seedless grape that are fabulous fresh, amazing dried as raisins and people have told me how crazy they were about them frozen and juiced!

The blue table grape is a nice sweet seedless European type grape.
The white table grape is very sweet and does not have the 'spicy' hint like the muscat. It is also seedless. Both these grapes hold well in the fridge if you have a 'gentle' cover on them to protect them from drying out.

Just a reminder - All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings! This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!

Eva and Rene grow both the traditional tea roses and antique roses! The Antique rose is a little different looking then the traditional Tea Rose we are accustomed to. The Antique rose is meant to have a large center rose that opens accompanied by several side buds which may or may not open. This offers lovely contrast for bouquets! Most of the antique roses have a lovely fragrance.
