The gardens are ready for winter, our farmers have already started growing in their greenhouses. It's a great season to curl up with a cup of tea!

We have tea from Barrie's Asparagus and Revive, The Natural Health Clinic in your 'tea; section as well as newly blended options from Little City Farm!

Karin of Little City Farm offers five blends! She says:
The teas are a mix of herbs we grew using sustainable methods, or that are either certified organic from a local source, ethically wildharvested locally, and a few herbs included are certified organic but not local (e.g. cinnamon, vanilla bean, orange peel all used for flavour).

Women's Vitality Blend
- A blend rich in iron, calcium & minerals to help tone the female system.  Can be used during nursing to boost milk production. (note: this tea is not gluten-free)
Sweet Dreams Tea - A sweet herbal  blend that calms the mind, soothes the spirit, and promotes restfulness.
Winter Flu Fighter - A blend that strengthens the immune system to help ward off colds, coughs and flu.
After Dinner Tea - A refreshing herbal blend that's perfect for any time of day.
Immune Boosting Herbal Chai - A flavourful spiced tea filled with immune boosting herbs.

Snuggle up and get ready for the ghouls to vi
sit.

There are a few items that I thought you might want to add now so you don't have to rush on Tuesday night:

Maple-Glazed Root Vegetable Stir Fry with Fried Tofu

1-2 lbs of assorted root vegetables (Jerusalem Artichoke, carrot, golden beets, parsnips, etc.), peeled and chopped into ½-inch pieces
2-3 tbs. oil

Preheat the oven to 375.  Heat oil over medium heat in an oven-proof pan until shimmering and fry the root vegetables for 8-10 minutes (if using beets it’s a good idea to cook them separate unless you want everything to turn red!).  Transfer the pan to the oven and roast for 25 minutes, or until they are golden and tender (not mushy).

1 package firm tofu (or tempeh)
2-3 tbs. oil

Remove the tofu from package and press to remove excess water.  Heat oil over medium heat until shimmering.  Chop tofu into ½-inch pieces and fry, turning every 5 minutes until golden (about 20 minutes).

¼ cup maple syrup
¼ cup soy sauce
2-3 green onions (scallions), finely diced
3 tbs. sesame seeds, toasted

Remove the roasted vegetables from the oven and return to the stove.  Add the tofu, maple syrup and soy sauce, and bring to a simmer over medium heat.  After 5-10 minutes the vegetables should be glazed.  Garnish with the green onions and sesame seeds and serve over rice, or other grain.

A message from Rachael:

Aw, Nuts!!

The chestnuts from the last pickup were awesome. I'm going to need more. The great thing is that they store well for months (in a vented bag in the fridge) if you like fresh nuts all winter. If you don;t know how to eat them, here are some instructions (I'd suggest roasting them in the oven!):

How to prepare and eat Sweet Chestnuts:

  1. Eat fresh using a paring knife to cut off the skin and fibrous covering
  2. Boil - Place sweet chestnuts into a pot with cool tap water. Cover pot while boiling and stir occasionally on medium high for:
    • medium size - 10-12 min
    • large size 15-20 min
Using a slotted spoon scoop out a few nuts at a time and as soon as they are cool enough to handle, but still hot, cut them in half and pop them out of their skins.
  3. Roast - First pierce the skin to allow hot air to escape while cooking. Use a sharp paring knife to cut a slash or an "X" through the skin, but not the nut meat. The larger the cut the easier it will be to peel.
    • Chestnut Pan - Roast them by shaking the pan over medium heat for 20 minutes.
    • Microwave oven - place a dozen chestnuts around a microwave plate and cook on high for 4 minutes
    • Oven -  Place chestnuts on a cookie sheet and sprinkle with water. Bake at 400 degrees F for 15-20 minutes. Place one uncut chestnut on the sheet with the others. When it "pops" they are ready to eat.
  4. Enjoy!

The end of the ordering period always comes so quickly. What will you be ordering for two weeks?

Here are a few of my family's choices:

  • Fruit - German plums, Hardy Kiwi and grapes, strawberries seem rather wishful right now. We'll see!
  • Chestnuts - Oh how I love them! (see above)
  • Cheese - Mountainoak's Freisian Gouda is a family favourite
  • Vegetables including Mushrooms - at least 3 pounds, cabbage for coleslaw and sauerkraut, carrots, tomatoes, broccoli, onions, spinach, onions and more!

  • Meat - Chicken, turkey, lamb and bacon, sausages too!

Hardy Kiwi - Who Knew!?!

I tried a new fruit I have never tried before called the Hardy Kiwi.

It also goes by many other names - Actinidia arguta, kiwi berry, arctic kiwi, baby kiwi, dessert kiwi, grape kiwi, northern kiwi, or cocktail kiwi.

I have never heard of such a fruit.  I Googled the berry as I was listing it in on the offering list to get some sort of description. It wasn't until the fruit arrived Friday that I was sold.

It is a native Asian plan that is able to grow in in Niagara.  The vine is available in a couple of nurseries around here.

The outside of the berry is green and a purple spot.  I assume the purple is a sign of ripeness.  I made sure to choose a berry that was a bit on the softer side.

When I bit in I expected it to have an extremely sour taste. To my surprise it was sweet with a bit of tang at the end.

I am not sure if these will continue to be available.  If they are I recommend you trying something new.

Sausage and Sauerkraut
Here is an update and a quick tip from Carolyn at Snider's Pork Sausage:
The extended Snider/Martin family had some delicious meals and great fellowship in Niagara-on-the-lake this past weekend.  Eating together seems to strengthen our bond as a family.  We've already planned the date and location for our Christmas gathering, as well as next year's Thanksgiving! We don't serve sausage at ALL these occasions, but it does make a fairly regular appearance, and ALWAYS totally disappears!

Since Thanksgiving/Oktoberfest is a time for sauerkraut (which I know not EVERYONE enjoys), let me share with you a super simple way to prepare it and maybe surprise those who thought they didn't like it:
  1. Place 2 lb. of our country or garlic sausage (it's OK if it's still partly frozen) in a casserole dish.
  2. Cover with approximately 2 cups of sauerkraut (with some of it's liquid)
  3. Cover with a lid.
  4. Bake at 350F degrees for approximately 1 hour, and serve with freshly cooked potatoes and applesauce.
It's totally different than barbecued sausage, but I still  find it very delicious - moist and flavourful.

Another list? Here are a few more favourites:
  • Winter Squash and Pumpkins (for pie, eating seeds or carving) Check out Maryrose's Blog Post highlighting them at http://baileyslocalfoods.blogspot.com/2013/10/for-love-of-squash.html
  • Amazing fruit and nuts from Niagara - Peaches, plums, kiwi, quince, chestnuts, walnuts and hazelnuts (see below for the full list)
  • Pies and other sweets all ready to serve!
  • Fall arrangements and flowers
  • Cranberries (non-local from Ottawa) to make your own sauce!
  • If turkey isn't your thing look for ham, rabbit, or other meats from Harrington Lane or Top Market Meats
  •
  • We have parsnips, potatoes, turnips, rutabaga, celeriac, broccoli, fennel and so many more vegetables to compliment your meal
  • Greens, Mushrooms (including shiitake!), and herbs
  • We still have bulk canning tomatoes from Nith Valley available!
Niagara Fruit
All our Niagara fruit is Tree Run, which means that the fruit is not sent to the grading station. The fruit is picked riper (and tastier) and avoids fungicidal baths and defuzzing of peaches. The size of the fruit may be bigger or smaller as well.

Here is the Niagara Fruit we have From Warner's Farms this week:
Quince - a fruit that is high in pectin and best stewed with apples or in pie or made into jam (the original marmalade)
Hardy Kiwi (aka Chinese Gooseberry) is a berry or grape sized fruit that will remind you of the fuzzy kiwi. http://en.wikipedia.org/wiki/Actinidia_arguta

For the love of Squash

I am a huge fan of Pumpkin seeds.  So much so that this evening I roasted my first squash of the year. It was a squash called "A Heart of Gold" grown at Lena and Ervin Horst's farm.  I was delicious roasted with some butter, maple syrup, salt and pepper.

I saw the seeds and couldn't resist.  I rinsed them off and spread them on the baking sheet sprinkled some salt and was eating roasted squash seeds with in 20 mins.

Kingwood farms has three new organic squash harvested this week:

Kakai Hulless Pumpkin

Hulless seeds for snacking! Endearing Japanese pumpkin with orange and green striped markings and large raised ribs. Creates a beautiful display, but is most valued for hull-less seeds which make a scrumptious snack. Kakai seeds are highly nutritious and yield a valuable oil that is used to promote prostate health in men.

Long Pie Pumpkin

If you are looking for a standard round pumpkin, then Long Pie is not for you. But if you want the best pie pumpkin for cooking, then put down your food mill and get ready to scoop out virtually stringless, smooth and brilliant orange meat! Long Pie averages 5-8 lbs. In storage it will ripen further and turn completely orange outside and get even better inside. Great keeper. Also known as Nantucket Pie

Pink Heritage Pie Pumpkin
Unfortunately the true name of this pumpkin is unknown.

Here is the note Debbie gave us:
This seed was given to me several years ago from a friend who only used this variety of pumpkin for her pies.  We have been enjoying it since, lots of meat in the pumpkin, unfortunately I don’t know the correct name, maybe someone recognizes it and would let me know.

I can't wait to try some of these.  I hope you do too.

A message from Rachael:

We have so much to be thankful for. Let's celebrate the harvest with our loved ones!

Just over five years ago, Nina started a fledgling Local Food Buying Club, run out of her carport. Just before Thanksgiving in 2008, the city informed her that the property was not zoned for business and she could not continue. It seemed tragic at the time and may have been the end of Bailey's Local Foods. Despite this and other hurdles along the way we've continued and become an Online Farmers Market. Thank you for the role you have played in our growth.

I'm thankful that in the years I have been a part of Bailey's Local Foods I have:
  • Met so many amazing people in our area. I'm so happy that so many neighbours and friends are members, especially those who I may not have known without Bailey's
  • Worked with two amazing business partners - Nina and Maryrose. It has been a pleasure to work with you both.
  • Had the pleasure to work with of all those who areor have been Market Assistants at each Bailey's pickup day and behind the scenes at other times. Special thanks to Aura, who is our Manager.
  • Supported and gotten to know local growers and makers of awesome food and more. The bounty in our area is truly amazing.
  • Enjoyed amazing local food!!!
We would love to help you find local goodness for your Thanksgiving celebrations. Here are a few things to look for:
