Brenda Knechtel is one of my favourite Mennonite farmers. I love to chat with her on the phone when she updates her products available for us and she teaches me so much about growing produce. If I mention that a farmer's carrots are bitter she tells me it's likely due to too much nitrogen in the soil. She always has a recipe or suggestion on how to cook great produce. This week she wrote about thyme for you:

Thyme
About 10 years ago I started experimenting with thyme. It is now a staple culinary herb in our kitchen. First I tried a pinch sprinkled over roast chicken, then roast beef and a pot of homemade soup. It is amazing how it transforms ordinary dishes.

Fresh Thyme: Wash thoroughly, shake off excess water and blot as dry as possible between paper towel. To strip off the leaves, hold the top of a stem in one hand, and use a downward motion with your thumb and finger. They should separate easily; discard stems.

Drying Thyme:
You have several options:
  1. Lay in thin layers on cookie sheet,
  2. Bunch and hang until dry, or
  3. Use a dehydrator
Once dry, the leaves are very easy to remove. Simply rub a small bunch between your palms. Allow the leaves to drop into a bowl or onto a clean surface; discard stems.

Storing Thyme: Keep dried thyme in an air-tight container or spice jar

By the way, thyme and oregano are an unbeatable spice combo!

  • Fruit is in full swing! We'll have amazing apricots, blueberries, blackberries, peaches and plums from Warner's Farms
  • Cherries are on the order form, but only as a possibility!
  • Cucumber season is in full swing! This is a great time for pickling and eating slicing cukes.

Hello All,

I hope everyone made it through the storm last week with little or no damage to their homes and yards. Our power was out for about 24 hours but all is fine now.

It’s my turn to write a message to you about our wonderful offering this week. This is the time of year when there is always something new coming out of the ground. Cucumbers, zucchinis, and peppers to name a few. I have been trying to put my finger on this growing season. Is it early or is it late? I think a bit of both depending on which crop.

For those of you that don’t know, I grew up in the Niagara Region. It wasn't until I left that I realized Niagara’s fruit trees were so special. Amazing fruit doesn't grow on the trees everywhere. Every summer I head “home” with the kids for an extended visit and swims in the pool. This year I decided to look around the area to see what early produce I could bring back to you.

I was lucky enough to come in contact with Torrie from Warner's Farm - our newest fruit farmer. On my first trip to the farm we spent over an hour talking about fruit and his practices. The farm follows Integrated Pest Management(IPM). If you want to know more about IPM you can read about it here. Pheromones are used instead of insecticides to control the pest populations and he has chosen for more then 10 years now not to send his fruit to the sorting station. This eliminates the fungicide bath required at the station.

I have a couple secrets to tell you. Warner's Farm will be harvesting their first crop of hazelnuts this year. I am pretty excited to make my first batch of locally grown homemade hazelnut spread. The other secret is they will be pressing concord/sovereign grapes for juice in the fall. A few of us have had the chance to try last year's juice and I am looking forward to having enough to offer everyone.

We will not have an a pickup day on August 2nd so be sure to order enough food for 2 weeks.

Produce Highlights for this week:
  • Last week for raspberries and possible last week for cherries
  • Pickling cucumbers are in full harvest. They may not be available at the next pickup.
  • Early golden plums are now added
  • Lena Burkhart has organic green bell peppers
  • Harrow Diamond Peaches a semi-cling stone - yummy and juicy to eat
  • Sam Bowman will have Frozen Organic Shelled peas which will be added shortly
  • The first of our organic cherry tomatoes are coming out of the field too.
Other highlights this week:
  • We are restocked with The Cider Keg. Blush Twist along with the others are back.
  • We have a new Sparkling Apple Jelly and 2L apple cider vinegar perfect for all you pickling needs available
  • Revive, The Natural Health Clinic has a great tea to drink cold called “Refreshing Tea” Helen is getting married and her products will not be available again until September.
  • There are a few different cut flowers bouquets available. I have loved getting one every week from Garden Party. Watching the summer go by in my kitchen with the different seasonal flowers. I look forward to flower season every year.
  • Elderberry Honey from Bauman Apiaries has been added to their flavoured honey selection.

Friday was quite a day. Not only did we enjoy amazing food and lovely people, but we also had a crazy storm and the power went out in the church when the storm hit. It's at times like this that I'm grateful that we rely on calculators and accept cash and cheques instead of cash registers, credit and debit. Thank you to all those who spent a little extra time with us in good spirits during the storm!

Look for:
  • Organic green peppers and Walla Walla onions as well as lovely zinnia bouquets from Lena Burkhart
  • Lena Horst has a whole lot of baking and preserves available. 
  • Organic cherry tomatoes are ready from Elvina Bauman! They taste like candy!
  • Organic Slicing Cucumbers from Irene Brubacher have been added too!
  • Oh the fruit! This will be the first week for peaches and the last week for cherries! (we'll add the peach pricing as soon as it is available on Monday!) More varieties will be added over the weekend, so please check back!
  • We had to limit the shelled peas for Friday but hope to offer them again on August 9th

This is an amazing time to eat local foods. I'm overwhelmed with all the new fruits and vegetables that our farmers are offering!

As always, the fruit we offer is a big highlight. This week we'll have raspberries, blueberries, apricots, the last of the mulberries and of course, CHERRIES!

It took longer than usual to nail down this week's cherry varieties. We're happy to offer:
  • Heidelfingen: The cherry has a dark red skin with a firm, sweet flesh. Hedelfingen can be used for canning, freezing, or fresh eating.
  • Vandalay: Large, wine-red colored fruit have a kidney shape and purple juice. Vandalay was developed in Vineland
  • Tehranivee: A sweet dark purple/red cherry with black flesh. Tehranivee is a good cherry for eating fresh or cooking.
Sounds like a hard choice. Will you try all three?

We try to have samples and vendors each Friday for you. Kristin from Savvy Green will be back with her lovely soaps and skin care this Friday! Check out her shop at http://www.shop.savvygreen.ca/

  • Green Table Foods are available this week. Get enough for a few weeks! They are made so fresh that you can!

  • **Krista at From These Roots is offering a free jar of peach salsa with the purchase of lamb sausage from Harrington Lane Farms.
  • Shelled Peas in 1 lb and 10 lb bags. Great for freezing for the winter. I have confirmed with the farmer that the field they are currently harvesting has not been sprayed for weeds - This is why we try to offer these early! These will be kept very cold and are very perishable. Eat or freeze right away!
  • Conventional blueberries from Anton and Grace of Pleasant Berry Blueberry Farm in pints, flats and 2 and 4 L baskets.
  • Elderberry honey from Bauman Apiaries. Everything about that sounds great. It's almost as tasty sounding as their raspberry honey (with fruit mixed in)
  • What is your favourite cheese? My kids reminded me to order Millbank's Colby and Monterey Jack cheese which we shred and mix together for our own 'marble' cheese. They have also become fast friends with any of the Mountainoak Gouda flavours.
  • All the available Monforte Cheese are available and you can use your Monforte dollars to pay for them if you are a shareholder!
  • Local Dairy's Crema La Vaquita and Creme fresh are awesome along with their

We're sharing our fridges. They aren't perfect and tidy, they are real and we are blessed that they are filled with bounty from local farmers who grow amazing food for us. Check out the photos on facebook and consider sharing your fridge too!

From Mary at Apple Creek Farm
We are getting 75 chicks on the 17th of July to raise free range supplemented with organic feed. These are meat birds and will be ready close to Thanksgiving or slightly after. As I think about that .. I better make a date at the butcher ... thanksgiving for them is very hectic. SO that is just a heads up. Our organic tomatoes are just beginning.. when we have enough to make a few pints we will let you know. The apples are beginning to size up. They like the rain better than I do... the challenging thing about rain and apples is that rain spreads scab spores so the apples might not be as pretty as in a dry year BUT they will be sweet! Some of the potatoes are in the ground but there are a few still to plant.... waiting for a dry spell.. Sprouts and eggs are still yummy .. hope things are coming up in your garden. Mary

Did you see the photo of the laying hens that Mary and Pete of Apple Creek farm are raising when you picked up your kitchen items on Friday. It's simply idyllic. If I were a chicken, I'd like that life! There are only a limited amount available each week, so get them quickly!

From Theresa at Garden Party:
She's added Collard greens and Portugese Kale (a type of collard) as well as potatoes and pickling cucumbers. According to Theresa:

Here are 2 amazing ways to use collard greens...
Collard Soup
 
  1. Sautee chopped garlic (at least 3 cloves), 1-2 potatoes and 1 chopped onion in garlic oil
  2. Chop 1 bunch of collards -  remove the stem,  and chop the tender leaves
  3. Saute the collards in with the other vegetables
  4. Add 6 cups of any kind of stock
  5. Add 1 piece of smoked meat -  either smoked pork chop (my favourite)  or smoked turkey leg
  6. Boil and then simmer for 2 hrs or so.
  7. Chop up the meat and serve in the soup,  with crusty bread.
Collard Rolls -  way easier and sweeter than cabbage rolls
  1. Cut stems out of collard leaves,  and cut large collard leaves in half
  2. Microwave the leaves for a few seconds  -  until soft
  3. Mix your filling -  I use a mix of pork, beef and rice, salt and pepper
  4. Roll the filling into the soft leaves
  5. Place in a casserole. Cover with water,  or use tomato juice if you like
  6. Bake at 375 for 1 hr or so.
Eat your greens!!!

A message from Rachael:

We're back to weekly ordering now (Yeha!) so so be sure your order is in by Tuesday night! Ordering opens Thursday afternoon at 2pm each week, and we'll continue to update our offerings as we get them from farmers, so keep checking back if you want! I'll aim to send emails Friday night or Saturday morning and then again Sunday or Monday. Please look to facebook and twitter for 'breaking news'.

What a week!
Oh, the fruit we had on Friday. We had strawberries, red currants, gooseberries, raspberries and even a little rhubarb.

I learned that gooseberries are high in pectin and great for mixing with other fruits when making jam. It turns out the gooseberries from Friday are a green variety that are great in jams. Check out a recipe at http://www.canadianliving.com/food/strawberry_gooseberry_jam.php. We'll have "blush" gooseberries this Friday also which are sweeter!

  • Kevin from Snyder Heritage Farms has offered Turkey drumsticks, smoked turkey drumsticks and turkey wings on special half price! We've left the price on the order form but your meat will be marked down after weighing. This will be offered for July 12the and 19th.
  • Harrington Lane Farms is offering a woolie hand felted sheep from Harrington Lane Farms when you purchase sausage, Leg roast (bone in or boneless) or loin chops
What else? So much more!

  • We're excited that Vicki from Winnie's Gluten Free Goods is back making excellent prepared meals like perogies, tourtiere, ravioli and soon we'll be adding lasagna! Her baked goods including an expanded selection of butter tarts and muffins are back too!
  • Tia's Gluten Free also has some new GF and dairy free offerings including her 'Rye' Bread, Italian Pallone (a round loaf) and Hamburger buns as well as her tasty cookies and muffins.
  • Oak Manor is coming Friday with al their organic flours and grains before they take a couple weeks off! Stock up!
  • We have so many greens available right now and we'd like to say a special thank you to Elvina Bauman for sending us lettuce to share with you on Friday (instead of tilling the crop back into the ground unsold). She has more greens if you liked them! She has Bok Choi, Kale and four types of head lettuce that she grows for us.
  • So many of our other farmers grow lovely greens too that will be in short supply before long. Check out the Mustard Mix and Swiss Chard from Angie at Fertile Ground and Braising Greens (mild or spicy mix) from Nith Valley
  • Microgreens from The Working Centre are freshly back now after the annual big greenhouse cleaning a couple weeks back
  • Monforte Dairy has some old favourites back. Bliss wrapped in tarragon leaves, Little Prince and FOntina with fenugreek to name a few!
  • Local Dairy has a new cheese called Oaxaca (how to pronounce it, I'm not sure!) It's great for melting in quesadillas, on nachos and more!
  • Nachos? We have only the best from McKechnie Foods! You can make quesadillas with their corn or wheat wraps with some of the Oaxaca cheese...
  • Ice cream would be so nice today. Don't forget we have Mapletons Dairy ice cream and gelato vouchers for Whole Lot-a Gelata ($1 off a 2 litre!!!) for you to buy!
  • It's too hot a bake in the house so be sure to get your favourite breads and sweets from Ambrosia Baking Co., Golden Hearth Baking Co., Grainharvest Breadhouse, Circle of Life, Bread Heads, New Moon Baking Co. and Floralane. Erma Martin has even agreed to bake us more shortcakes!
  • Strawberries to go with your shortcake, of course and more fruit to be added!

This summer is going to be amazing!
Friday we'll have strawberries, but next week they'll be old news when the cherries start. It's such a delicious time of year. For Friday we just added red currants, raspberries and gooseberries from Niagara.

Some awesome fruit that we won't be selling at Bailey's is also ripe and FREE right now. Mulberries and Saskatoon berries (aka service berries) are ripe and growing around town. Look for berry stained pavement for a clue and the birds and squirrels will also lead you to these great sources of fruit. There are a few weeping mulberries on Regina in front of the City of Waterloo building and service berry trees in the small square between First United Church and the credit union. Both are best when purple... the darker the better for sweetness!

Dried beans from Rounds

Do you like the Hillbilly Chili and soup mix? Are you a fan for red lentils? Navy and Pinto beans? Stock up now on the freshest local beans!

Now that the kids are home all summer will there be extra snacking going on? Need some treats for camp? Tamales from McKechnie Foods are $13 per dozen and while they'd be best steamed for a couple hours, you can defrost them in the fridge, then use the microwave to heat them up one at a time.

Last night for fireworks at UW we knew that munchies would be appreciated by kids and friends. We brought Tortilla Chips and New Moon Baking Co.'s Mackies. It almost made up for waiting an hour in line for ice cream... =)

  • Taste and Colour (formerly Casa Salsa) has amazing empanadas, burritos, quesadillas, guacamole and salsas
  • Entrees, crostini and preserves from The Culinary Studio
  • Rounds Beans - Some of the freshest dried beans available. We offer these approximately monthly also, so be sure to stock up on lentils too!
  • McKechnie tortillas. We'll be ordering all their items this week!
