Wow. It's almost June. We've been waiting for this all winter!

On the last pickup day, I had the pleasure of going on the run with Sharon, to pick up food from the Mennonite farmers who grow for us. It was lovely to meet so many of them and their families and dogs, see their fields, green houses, coolers and more. Sharons has a standing offer that if you would like to join her on this trip you are welcome! It's great to see where our food comes from and meet the people who grow it!

Have you ever tried Mountainoak Gouda? Adam and Hannie make some tasty Farmstead Gouda  in the Dutch tradition with the milk from their Holstein cows. Last Tuesday we visited their farm in New Hamburg and are excited to bring you a great selection of their cheese for pickup in UpTown Waterloo! My kids loved the Aged Farmstead and the black truffle gouda. Even better, we hope to have samples on Friday June 7th also!

    Organic farmer Candace Wormsbecker will discuss how we can use food as a transformation element in healing our relationship to ourselves. Building on an article she wrote for the Food System Roundtable’s blog, Candace will tell her personal story of how she came to see food as the blessing and miracle that it is and to get in touch with her own body and her environment.

  2. Chicken Coop Tour - June 15th!
    Hi friends, supporters, and associates of Waterloo urban chickens!
    We're doing a 2013 Chicken Coop Tour, and we'd like to invite you to come! The event is Saturday, June 15 from 11am to 3pm.
    The format will be similar to others years - i.e. the Public Square will be the hub of activity (and the place where you can pick up a map to the coops), and then members of the public can go to whichever coops they choose.   3. ANIMATE THE TRAIL â€" Sunday, June 2
    This event should be quite interesting this year.  Our Neighbourhood Association is a co-sponsor with Victoria Park Neighbourhood Association.  Check out their website for details (www.animatethetrail.ca).They also have facebook and twitter if you like them better.  We will have activities at several locations along the trail in our neighbourhood, including a skateboard park at the end of Cherry Street, and the Tri-City Roller Girls along our stretch of the trail, plus much more.  Come out and check it out.

Snyder Heritage Farms - Maple Syrup 2013

Sap collection tank. This is HUGE.

The vacuum pulling the sap in from the lines.
Kevin and his dad's boiler (aka wood fired high efficiency evaporator). The sap is boiled down and filtered after going through reverse osmosis to reduce the water content by about a third.
Adding wood to the super hot fire.  They use wood from their forest to cook the sap. No other fuel is used in the process. This is an efficient machine!

I wanted to catch you before the long weekend.

Next Friday seems so long away, but ordering ends Tuesday at 8pm so that we can call and email farmer's and suppliers in time for them to pick vegetables and prepare your orders. This would be a great time to take a minute and order some asparagus, herbs, seedlings, rhubarb and whatever else you need for two more weeks!

Highlights on our order form:
  • Theresa from Garden Party is back! In addition to being one of this area's awesome CSAs she is offering some items for you. Look for her herbs, preserves and cut flowers - all organic! She also has a 'make your own stock' kit. Just add heat and water!
  • Oak Manor Flour - Stock up as after this pickup we'll be offering these amazing organic grains less often (May 24th, June 21st, July 12th, Aug 9th) - yes the dates changed if you've already marked them in your calendar
  • Country Flavour Preserves - We're restocking so you can order anything you want including cases of your favourites. Please let us know if you want something that we haven't listed as a case!
  • New Moon Baking has new granola bars. Maryrose says they're good, and I trust her judgement on these things.
  • Winnie's Gluten-Free Foods is back - offering some of their frozen specialties for us this summer including GF Tourtière. Look for stuffed ravioli and new varieties of perogies in the 'prepared' section too!
  • We have a few select cuts from Vibrant Farms and some Stewing Beef available too until we restock (We've ordered a half steer so that we'll have more soon). If you have special requests for cuts, please let us know! We'll be sure to have some lovely thick cut steaks and more.
  • Spud's Finest potato chips are one of my weaknesses. The bags seemed a bit bigger last week (more for sharing) I'll have to restock, how about you?

Little City Farm Seedling Sale!
This Saturday you are sure to see many familiar faces at Little City Farm while they celebrate the 11th Annual Organic Seedling Sale! This year a selection of vendors will provide a great variety of organic and heirloom varieties of seedlings including vegetables (e.g.tomatoes, peppers, eggplant, kale), culinary herbs (e.g. basil, thyme, lavender, sage, dill) and some flowers and perennials all ready for planting. This exciting annual sale specializes in heirloom tomato varieties. At least 15 varieties (I heard it was closer to 50 varieties!) of heirloom tomatoes will be available, including a range of colours (pinks, purples, greens, reds, oranges); a range of sizes (e.g. cherry, plum, pear, sandwich slicer, beefsteak); a range of features (e.g. patio, striped, mid-season, early harvest) etc etc!!!

Two weeks until the next pickup. Friday pickups can be so fun. Thanks to all of you who joined us tonight!

Well, asparagus season is sure in full swing and tasty too! Hopefully this weekend's weather doesn't really get as cold as predicted. I'm asking you all to send a few warm vibes to Mother Nature.

Speaking of asparagus, I want to tell you the best way to store it! Upright, in a container with 1-1.5 inches of water in the fridge (sort of like cut flowers). If the ends have dried out you might want to give them a fresh cut, though not as much as cutting is needed compared to grocery store asparagus. If you'll notice the asparagus from Barrie's Asparagus and Paul Bowman are all green and edible. The price may be a bit higher than the grocery store, but you have little to no food that needs to be thrown away (if you get asparagus with white ends, you should be trimming the woody ends off). If you want to read a post from 2009 when Bailey's Local Foods was just a toddler check out our email archives here. I love this post as it talks about asparagus and how grocery stores use it (and many other seasonal vegetables) as "Loss Leaders" to get you into their store.

Well, with asparagus comes rhubarb! We have a hard time classifying rhubarb. Is it a fruit or a vegetable? While it really is a vegetable it sure goes great with the strawberries that are coming next... or made into a syrup for your drinks, or as a sauce for your ice cream... or you can chew on it dipped in a little sugar. What is your favourite?

  • Country Flavour Preserves - While you are waiting for peach or cherry season you can eat amazing fruit that has been preserved with love.
  • New Moon Cookies has so many flavours of awesome cookies. Everyone loves Momints and Goldies as well as their "Crunch This" Granola. They have some new cookies coming out and we're hoping to sample their Mini-Moon Cookies For Kids at the next pickup (with less sugar than most cookies)
  • You cleaned us out of McKechnie Tortilla Chips on Friday. We're looking forward to a fresh batch on the 25th! Have you tried their wraps? You can get the Stone Wheat and Mexican White wraps in 8", 10" or 12" sizes for an easy to wrap burrito!
  • 'Tis the season for seedlings. We have so many available in the 'plants' section' under 'other' The 26th will be a perfect planting day, I'm sure!

Ah, Friday pickups! So glad we're back! We will have lots of samples and vendors on Friday. Leave yourself a little extra time to browse!

If you are honouring a mother this weekend, a great way to make her happy is by feeding her. Grab some baked goods, chocolate, or coffee. She might appreciate flowers, plant markers for her garden or seedlings even more. On Friday we'll have a few extra vendors at our pickup with gifts that mom might like. Here they are if you want to bring along a little extra spending money (and if you're a mom like me, you sometimes have to buy yourself the gifts you really want!)

  • Turkey from Snyder Heritage Farms were processed this week so we've put them back on the order form. You might not want to turn the oven on, but maybe you could deep fry a turkey or BBQ some wings to enjoy!
  • Aspargus and rhubarb. Limited amount of organic and lots or conventional!

Hi Folks,

It is a beautiful Saturday afternoon and I am on the computer.  It is nap time here and everyone but me has crashed.  Perfect time to place my Bailey's order and write an email telling you about the items I have been ordering as of late.
 

Someone asked me recently if I have tried everything we have to offer at Bailey's.  I would have to say I have tried about 90 - 95% of the items.  When I first became a member I made a point of ordering one vegetable every pick up that I had never tried before.  Arugula was one of those items.  I wasn'€™t a fan of it as it was to peppery as a green for me.  At the end of the last growing season Rachael suggested I sauté it as I do with all the other greens.  So I tossed it in with a bunch of other greens and it was amazing.  The peppery bite mellows out and it is amazing.  I am so happy we have it is back. 

While placing my order today I decided to google Sorrel as it is a green I haven't ordered in the past.  I came across this great link. 50 uses for Sorrel.  Now to decide which way to use it. Looking forward to trying it next week.
 

We like to eat spicy foods in our house.  Now with a little one sharing our meals with us we have had to tone it done a bit.  I was pleasantly surprised when I tried Barrie's Asparagus' All Purpose Seasoning (in our 'pantry' section).  We use it on just about everything to add flavour.  My neighbour loves the Steak Spice.

I have also become a big fan of the jarred Garlic from August Harvest (pantry/prepared section).  I keep both the pureed and minced in our fridge.  If you are a forward thinker you could just puree some of the lovely garlic grown by many of our farmers and freeze it.  I on the other hand did not and love the convenience of having these on hand.
 

Same goes for the Ghee (clarified butter) from Local Dairy.  Great for sautéing mushrooms, greens or whatever your heart desires. We have even popped popcorn using Ghee.
 

We recently added Pretzel buns from Grain Harvest.  They are delicious as a sandwich or with a burger.  We sometime just have them toasted with butter.  They freeze amazingly well.
 

New Items on the Offering List:
  • It is Asparagus Season.  Both Asparagus and Rhubarb have been added fro Barrie’s Asparagus. They also have a new Portobello Asparagus Burger available.  We tried it last week - it is really good. 
  • Caramelized Onion with Feta Salad and a Gluten Free Lasagna. We are happy to have Culinary Studios offering some of their prepared items.  I will be having the Salad for dinner on Pick Up day.
  • We have added some of our first seedlings in the plant section.  They are able to stand up to colder weather and need to get in the ground ahead of the big seedling day on May 24th'€™s pick up. There are flowers as well as food seedlings!

    May 22nd  -  7:00pm  -  Any donations will be greatly appreciated!
    Through visually stunning footage from over fifty countries, all shot from an aerial perspective, Yann Arthus-Bertrand shows us a view most of us have never seen. He shares with us his sense of awe about our planet and his concern for its health. With this film, Arthus-Bertrand hopes to provide a stepping-stone to further the call to action to take care of our HOME.
    The movie will be followed by discussion of what we can do at the local level to change what we see happening at the global level.

Can you tell I'm enjoying this break?  I haven't sent you an email in over a week! It's time to put in your order for May 10th. Less than a week until we call and email all the farmers and suppliers with your orders.

Asparagus!

I spoke with Tim Barrie yesterday and the asparagus are poking out of the ground already. They will be ready for us on May 10th - if there is no more frost (hear that Mother Nature?). As you are an understanding bunch I'm adding these harbingers of spring to the order form with the hope that I won't have to give you any bad news on the 10th. This is what makes local food so exciting... right?

Live music at Bailey's!
I've really been enjoying Paul's music at Bailey's and wanted to introduce him to you more formally. On pick-up days feel free to sing along, request a song or say thank you to Paul for adding music to our pickup days!

Paul Horton is the guitar player/singer who has been entertaining at our market pick up days. Rock & roll, folk, country, and "un-categorized" songs are done with a laid-back, acoustic sound. Paul started playing and singing in the late 50's with his brother and his Dad. He was a teenager in the early Elvis years and played in a rock band until the late 60's. Glen Campbell influenced his acoustic playing and musical direction through the 70's. These days, Paul still plays occasional gigs with his brother and is in the contemporary Christian group "Hearts of Praise", based in Ingersoll, as well as doing single jobs in the area. He is also involved with music at Breslau Mennonite Church.

When not playing music, Paul owns a business in Breslau producing hot rod chassis parts.  He has been married for almost 40 years (to a very tolerant woman). They have two sons, two daughters-in-law, and nine grandchildren.
