A Message from Rachael:
Easter Chocolate
For those of you who like to celebrate with chocolate, why not enjoy beautifully crafted, fair trade organic bunnies and eggs this year? I promise it will taste great! We have lots of options including lovely post cards and the killer chick - complete with bloody bunnies. Katharina has a very dry sense of humour... You can see them on our facebook page at https://www.facebook.com/media/albums/?id=73910308689, you don't even need an account!
Maple syrup and Tomatoes
First, I want to let you know that the maple syrup at this pickup will all be new crop! I'm stocking up on 1L mason jars! Last year I bought a 4L plastic jug and then canned the syrup in 500 mL mason jars - This year I'll let Kevin do the work! Maple syrup stores best in the freezer, but I found the mason jars were fine on the shelf of my cold cellar.
On Friday we went on a Maple Syrup Tour with a group of home learners. The sap had long dried up, but it was so cool to see the latest in maple syrup technology of plastic hoses and a vacuum tank (only a few pails left!) mixed with the classic wood fired evaporator. This year most maple syrup farmers got 2/3 of their their harvest, but last year was a bumper crop, so we should be fine for supply.
Since we were in the Elmira area, we decided to stop in at Floralane for a visit and some tomatoes! It was great to see Stewart and he proudly showed me his tomato greenhouses. He has 8000 plants that grow all year round. He replaces them in December and the new plants start producing again in March. It's an amazing setup - the photos I took do not do it justice (but you can look at them at https://www.facebook.com/media/albums/?id=73910308689 also).
Remember:
- Shallots - like onions, buy milder. Such a treat sliced thin on pizza!
- Crackers from Barrie Brothers - Stone Wheat or Vegetable
- All your favourite early spring greens
- Blue potatoes from Pfenning!
- Fresh prepared food from Cafe Pyrus
- Baked goods and sweets - Have you tried the 100 mile spelt?
- Preserves - Buy in bulk this week!
- Tortillas, tamales tostadas and tacos!
- Yummy cheese including Waltzing Matilda - a camembert style from water buffalo milk
- Nutty Bakers meat pies and desserts too!
Have a great week!

Welcome back from March Break! Was it ever beautiful in KW! Spring is officially here! Does that mean we'll have to put the shorts away again?
I was starting to think that ordering closed this Tuesday, but then I checked my calendar and we have one more week! Whew!
Did you know that our ordering calendar is on our website at baileyslocalfoods.ca? If you use an online calendar there are ways to import the ordering and pickup schedule into your google calendar and possibly to other electronic calendars too. While you are on the home page check out the recipe for Butternut Squash Soup that Nathan from Nith Valley Organics shared! He is offering frozen butternut squash that works well with this recipe!
Tell us your favourites!
Speaking of sharing, we'd love to hear about your favourite foods bought though Bailey's! Natalie finally tried Jerusalem Artichokes - pressure cooked and served with butter - She emailed me to say: "I got Jerusalem artichokes this time. They're amazing! Like the most delicate potato with definitely artichoke flavour. I'm delighted. Thank you!" Yum!
We'd love to hear your reviews of favourites and share them here! Please do send us your comments!

We have some garden products from Traditional Gardener to offer for a limited time. Here's the story:
Aura and Tim moved back to Kitchener to buy a house and raise their son. 6 years, 2 kids and a bakery later they have found their calling. The two met in Cooking School and shared a passion for food. This passion grew to include them growing their own food in their Kitchener backyard. They knew that they both wanted to stay in the food industry and close to growing it. This manifested itself into a line of products that would not only facilitate the growing of food but in a very functional and stylish form. All of the products have been designed and handmade by Tim. We are so happy to have the opportunity to launch the first line of products with Baileys Local Foods in April.

How does Bailey's work? (a friendly reminder of how online ordering and pickup operates.)
We are always excited to have new members at Bailey's but we would like to remind everyone that when you come to pick up your order please make sure that you are not only picking your items from the correct farmer/supplier but also collecting the correct size and quantity. Taking a little extra time means not only are you getting what you ordered online but also that the people who can't make it till a little later in the pick up are also getting what they ordered. It is always hard for us at Bailey's when we need to tell people that their items are no longer at the pick up. We don't buy extra because in order to be sustainable and support the local producers and farmers we order what is needed. Bailey's is a unique way of shopping. In order for us to continue the service we ask that you double check or ask one of us if you are not sure of an item. As we approach the full season offering we thank you again for making us the business Bailey's Local Foods is today and in the future.

A Message from Rachael:
Bring on the warmer weather! I'm not escaping south for the March break this year, so I need all the Vitamin D I can get around here.
Tonight was our 'too busy to make dinner' night - hopefully the last one for a while - with the final swimming lesson for the older two kids at 5:30pm and a class for the 7 year old at 6:30. Sometimes, over the last while Tuesdays were crock pot night, but for the last few weeks it's been curry night! I fire up the rice cooker sometime before 4pm and grab one of the favourite jars from Green Table Foods out of the fridge to go with it. Tonight we had Yellow Thai Curry with oven roasted tofu and organic veggies. Salad would have been nice too, but we added microgreens on top of curry instead. Yum! My only mistake was only ordering one jar for pickup yesterday. Oh well!
Speaking of yesterday's pickup, I did a horrible job of ordering. I forgot to get cheese for the kids. I'm sure they will survive without the quesadills and Mac and cheese that the Monterey Jack and Colby cheese from Millbank disappears into regularly at our house. Don't worry. I've already added the cheese to our next order and they already found a substitute - at lunch I was asked for Monforte's Pecorino Fresco on a bagel and drizzled with honey. I assume their dad taught them that!
A few things for you to note: - We're stocking up on From These Roots and Country Flavour jams and preserves this month - you can too!
- Floralane's tomatoes are back! What a treat to enjoy local hot house grape and beefsteak tomatoes!
- Did you see those desserts from The Nutty Bakers on Monday? You can order them all online now!
- Look for some new items soon - canned tomatoes, frozen edamame and more! Yay Local!
