I'm going to start with a few important notes and get chatty at the end:

  • Gordon's Goat Dairy cheese is available this week and then not until December 5th! Bethany reminds us that their cheese is GMO free!
  • New Moon Kitchen cookies are on sale this pickup! Regularly $6 per box they are $5 per box for this pickup! Stock up for a tasty cookie that is egg, dairy and peanut free - They are super tasty and there is a gluten free cookie too!
  • Rutabaga is on the list for sure this week. I even double checked! =)
  • Endive (not Belgian) is also available. We froze it last year for winter dishes!
  • You can order McKechnie tortillas and chips as well as prepared Green Table Foods
  • We have some new prepared foods! Cafe Pyrus is offering a great range of soups, dips and other vegan tastiness!
  • Jerusalem Artichokes (not the green artichokes) are ready too! They are very tasty and you can cook them in many of the same ways you prepare potatoes!
  • We would like to welcome a couple new suppliers: Nathan of Nith Valley Organics will have tasty produce and winter greens for us and Judy of Anam Cara Farm will be offering Tamworth Pork and Muscovy Duck! More on them in as upcoming email!
New tasty vegan meals from Cafe Pyrus!
We have an exciting new supplier! Lauren has decided to cook for us! WeĆ¢€™re very excited to offer her tasty food. Here is a note from Lauren introducing you to our new offerings:

Pyrus cafe is keeping it fresh, offering vegan deliciousness made with local, organic ingredients, and a whole lot of love! The cafe offers fresh baked vegan treats with gluten free and sugar free options, as well as single origin, direct trade, organic and fair trade coffees and teas. Visit the cafe at 16 Charles St in Kitchener for a taste of the full menu.

Crock Pot - delicious!
Aura has finally pulled out her crockpot to show us that you can make gourmet meals without slaving in the kitchen all day. She used chicken from Snyder Heritage Farms, Kernal Peanut Butter, local carrots, onions garlic and frozen peas as well as dried hot peppers and soya sauce from Pristine Gourmet! Too bad we don't have local ginger or white wine vinegar available... I think the vinegar would be possible at least!

Bags of carrots?!
Candace of Transpire organic brings you very fresh and tasty produce from her small farm where she grows veggies for us and for her CSA. Her carrots are dug by hand and bunched or bagged on the day you receive them. It's a labour of love and worth it (we're spoiled)! Her farm is on the Pfenning Farm and she has amazing support from Wolfgang Pfenning and has befriended the staff at the Pfenning Farm. If you don't already know, Pfenning's is the organic giant in town and we are so lucky to have them as a supplier to bring us local and organic foods grown by them or brought in from other local farmers.   • Viola Martin's Sweet Keeper Squash are on the order form. They are lovely to decorate your house, they 'keep' well as their name suggests and They are tasty too! In the 'squash' section
  • Last, but certainly not least is fresh pressed unpasteurized grape juice from Niagara! It's in the 'other' section
The description from Mary Jane:
Well we thought the fruit season was over in September but we now have something new. This is the first year that Eva and Rene had some of their grapes pressed into juice!

The juice is made from a combination of Pinot Noir and Table grapes. It is light pink in colour. It has a slight cloudiness to it (not quite as much as cider) since it has not been strained, filtered or sulphited. Because it is unpasteurized it will leave a little 'prickly' feeling on your tongue. It will slowly continue to get more 'prickly' while in the fridge but the progression can be halted in the freezer. This is a nice a sweet juice that will taste very different from steamed grape juices.

In Switzerland and Germany this juice is called 'Sauser'. People line up at the restaurants to get their glass of Sauser. They only serve it while in season!

This juice can be frozen to use at a later date like Christmas and New Years (or birthdays). Just be sure to pour some off the top to leave room for expansion.

A Message from Rachael:

I was thankful to spend last Friday with my family. I enjoy the busy Fridays when Bailey's is running weekly, but oh was it great to have a lazy day! Now I'm looking forward to our off season Friday rituals. Most Fridays this winter you'll find us a home eating pizza and watching a movie. This will mean that the oven will be on before 7pm with the new time of day hydro billing, but it's so worth it! We make our own Gluten Free thin crust and top it with what is in the fridge and usually make a special trio to Vincenzo's for prosciutto and provolone. The Mozzarella balls from Local Dairy and so sweet and almost buttery - my favourite for on pizza and the chevre from Monforte goes so well with prosciutto, mushrooms, basil, red onions and a drizzle of good olive oil (no red sauce). We make lots of little pizzas, so everyone gets to top theirs exactly how they like it. The kids go heavy on the pineapple and we also make dessert pizzas - sliced apples with cinnamon sugar and a little cream drizzled on top.

Speaking of apples, today's breakfast request was for baked apples. It was something that I suggested on Saturday morning when pancakes were expected and wee needed something quick and warm for breakfast as we were heading out of town. It's so easy!
  1. Wash and core 4 apples (or as many as you need)
  2. Fill the cored out section with raisins, and some brown sugar and cinnamon mixed together - you could add nuts too if you'd like
  3. Place the apples in a heat safe dish and microwave until warm - about 15 minutes when you're using Honeycrisps, a bit less for other apples.
  4. Enjoy!
I was thinking that this would be really easy to prepare the night before and cook in the crock pot overnight on a low setting. Imagine the smell in your house when you wake up! Mmmm!

Hello Folks,

What a wonderful weekend we had to spend with our family and friends. Our family went out for our first hike since Marlo was born. It was such great weather to get outside. We stumbled upon many strangers that were all eager to have a peek at the baby and talk about the weather.

I love the changing leaves, we have two large red maples in our yard. We spend a fair share of our days on the porch watching the leaves fall. while sitting out on our porch I came to the realization that we are one of the only households on the street that actually sit outside on our porch. I know some of our neighbours - probably more than most others but there is no real sense of community. It is because of this that I am so thankful to have a place like Bailey's to call my community.

We have a wonderful community of farmers and suppliers who work together to get your food to you. Often times if one farmer has run out of an item, another farmer with help us in filling the missing item. There are several deliveries that come in together, saving on time and fuel cost.

Lets not forget all of you and the community you have helped us build starting way back in Nina's carport and now still strong three full growing seasons later. This is our last Friday pick until June. We will be moving to Mondays starting Monday November 7th. This is because the church houses the Out Of The Cold program which provides compassion, food and a warm place to sleep on Friday nights through the winter. A good reason for a change.

Here are the Upcoming Bailey's pick up dates through to next spring:

Highlights and New Items added to the offering list this week:

  • Mini Straw Bales can be used to decorate your house for the season and also putting your garden to sleep for the winter. They are in the 'plants' section along with the decorative Indian Corn!
  • Have you seen the mums around the church on pick up days. They are amazing and in the plant section if you want one too. They are a perennial plant. I now have five planted in my front gardens
  • Lena Burkhart has bags of broccolli. We have had them on the spontaneous table in the past. They are now on the order form.
  • Kingwood has Mibuna Asian Greens. These are great sauteed with some soy or tamari sauce - if you're ready for a new bottle, consider trying the sauces from Pristine Gourmet
  • Kim-chi making season is again upon us. We have Napa Cabbage, Daikon Radish, Carrots as well as various Asian greens - let us know if you're up for a kimchi making party!
  • Brenda Knechtel has added bunches of English breakfast and red radishes
  • This will be the last week for BULK peppers. I used my roasted peppers all last winter, I made soups, dips, sandwiches. I love how versatile a frozen roasted pepper can be
  • Sweet Potato squash is a new squash variety offered from Selema Martin. They look like Delicata to me!
  • Fresh Apple Cider from Apple Creek. It is organic and wonderful. If you haven't tried it yet, why not this week?
  • The Ambrosia Apple is now available from Martin's Family Fruit Farm
  • Martin's also has Bosc Pears. Bosc pears hold their shape well and are excellent for poaching and baking.
Poached Pears
  • 4 firm pears, choose those that have a stalk for better presentation
  • 4 cups water
  • 2 cups sugar
  • 1 cinnamon stick
  • 1 vanilla pod, split
  • 1 lemon, peeled and juiced
  1. Place the water and sugar in a deep saucepan (it needs to be big enough to hold the pears) and under a gentle heat, stirring occasionally, cook until the sugar has dissolved.
  2. Meanwhile, peel the pears, you can core them if you like, it's up to you but do leave the stem in place.
  3. Place the peeled pears in water (with the lemon peel) so it doesn't brown as you peel the remaining fruit.
  4. When the sugar syrup is just below boiling point add the lemon peel and lemon juice, cinnamon stick and vanilla pod. Stir, then add the peeled pears. Make sure they fit under the syrup. Turn the heat down and very gently simmer, without boiling, until the pears have softened.
  5. This should take somewhere between 20-30 minutes depending on the size of the pears.

I saw a wonderful documentary the other night called "INGREDIENTS". It was an inspirational film about local food, farmers, restaurants and their supporters. I highly recommend it and it is available at the library. Here is a link to the film in case you are interested in knowing more. http://ingredientsfilm.com/. I enjoyed the fact that it was divided into seasons. As we move into the fall and winter, there is still so much locally grown food available to us. As we move into colder weather our bodies crave more heartier foods and the earth provides us with them.

Events in our Community

Organic Week
The second annual national celebration of all things organic, Organic Week starts this weekend! Canadian Organic Growers Perth-Waterloo-Wellington has coordinated a series of local events spanning October 15-22 to celebrate and raise awareness of the benefits of local organic food and farming. What do you do with your carved pumpkins after Hallowe'en?
Last year about 60 neighbourhood pumpkins were gathered together in Alexandra Park on the night after Hallowe'en. It was a great chance to catch up with neighbours and friends and see so many creative pumpkin carvings.

There are two different Pumpkin events that will take place locally this year:
  • 2nd Annual "Great Alexandra Pumpkin Patch" in Alexandra Park (located in UpTown Waterloo).
  • 1st Annual "Great Duke Street Park Pumpkin Patch in Duke St Park (on Duke St, between Bismark and Shanley St).

One Day Permaculture course
Jackie and Natalie want you to know more about the food around you. This is your last chance to order Tree Nuts from Niagara for pickup on October 21st!!

Are you looking forward to local tree nuts? I sure am! Until two years ago I loved the huge chestnuts from Italy that are sold in grocery stores in the fall and winter. Not any more. After tasting the super sweet chestnuts from Grimo Nuts in Niagara, I'm spoiled and can't go back. The chestnuts from Grimo are amazing roasted and even raw. One time I found some that had dried naturally (kids!) and they were very tasty too. They would likely make a great chestnut flour!

The Persian Walnuts and Heartnuts are very yummy too. Heartnuts are quite easy to open once you get the hang of it (see below) and if you toast the nut meat from either nut in a dry frying pan for a little bit the flavours just pop. You can't get nuts fresher than this!

I'm not a fan of the rich flavoured black walnut, but some really like it. There is a bit of a challenge in removing the meat from the shell, so we are lucky to offer the Black Walnuts (and the Persian Walnuts too) already shelled. On the website they suggest using black walnuts in a pecan pie recipe for a memorable dessert!

Now for some tips on getting to the meat of these nuts:

How to prepare and eat Sweet Chestnuts:

  1. Eat fresh using a paring knife to cut off the skin and fibrous covering
  2. Boil - Place sweet chestnuts into a pot with cool tap water. Cover pot while boiling and stir occasionally on medium high for:
    • medium size - 10-12 min
    • large size 15-20 min
      Using a slotted spoon scoop out a few nuts at a time and as soon as they are cool enough to handle, but still hot, cut them in half and pop them out of their skins.
  3. Roast - First pierce the skin to allow hot air to escape while cooking. Use a sharp paring knife to cut a slash or an "X" through the skin, but not the nut meat. The larger the cut the easier it will be to peel.
    • Chestnut Pan - Roast them by shaking the pan over medium heat for 20 minutes.
    • Microwave oven - place a dozen chestnuts around a microwave plate and cook on high for 4 minutes
    • Oven -  Place chestnuts on a cookie sheet and sprinkle with water. Bake at 400 degrees F for 15-20 minutes. Place one uncut chestnut on the sheet with the others. When it "pops" they are ready to eat.
  4. Enjoy!

Bailey's Local Foods ordering open until 8:00 pm on Tuesday, October 4th - ORDER FOR 2 WEEKS!


This is a reminder that you should place your order before 8:00 pm Tuesday October 4th for pickup on Friday October 7th.

Items that you have placed in your shopping cart will be ordered on your behalf on Tuesday at 8:00pm. There is no checkout button. If you do not intend to order, please ensure that your shopping cart is empty.

There is no Bailey's Pickup on: October 14th.
Our final Friday pickup is October 21st.
In November and December our pickups will be on Mondays, every other week. The dates are: Monday November 7th, November 21st, December 5th and December 19th.
After the new year our pickups will be every three weeks or so on Monday January 16th, February 13th, March 5th, April 2nd, April 23rd and May 14th.


A Message from Rachael:

Brrr... We turned on the heat on Sunday. I was hoping to hold out for the gorgeous warm weekend to come, but on the upside I now know how to light the pilot on the boiler!

It's the week before Thanksgiving and I'm hoping to write a letter to all our suppliers this week - those who grow food and those who prepare it. How lucky we are to be surrounded by such great food! Thank you too for supporting all our local farmers and producers!

The 'plants' section wasn't working this weekend, and that was due to an error on my part. It's working now and you can order Mums in every colour from Edward and Selema Martin! They also offer Mini Straw Bales for all you decorating and gardening needs! Ours looked great on the front porch last fall, then kept the weeds down around the garden plants this summer!

Speaking of errors, we're not perfect, so if you notice a section that isn't loading properly or an item that doesn't make sense (like the 'Chicken with Feta and Sausage' Sausage that should have been 'Chicken with Feta and Spinach' from Stemmlers - yum!) please let us know and we'll do our best to make changes as quickly as possible!

TURKEY! TURKEY!
Unfortunately we can't offer the gorgeous chocolate turkeys from Anna Tolazzi for sale this week, but if you still want one for your holiday table we have one Semi-Sweet bird available to the highest bidder! Katharina has donated this bird and 100% of the winning bid will go to the local food related charity of your choice! We do, however, have some great turkeys available from Snyder Heritage Farms! These turkeys are frozen, but by putting yours in a cooler filled with water, your turkey will be thawed in 24 hours (and can be kept in the fridge until it's ready for cooking)! You can order a GMO Free naturally raised Traditional or Heritage Orlopp Bronze Turkey. We'll be trying the Heritage Turkey this weekend with rice stuffing! I can't wait!

The pie crust that Eleanor makes is so good (and gluten is what you don't want in a good pie crust) so consider getting one for sharing!
  • Tim from Barrie's Asparagus is offering his NEW Asparagus Fusilli at a great price this week! $3 per bag (Regularly $4) and for everyone who buys a bag this week will be entered in a draw to win an additional bag of Asparagus Fusilli and a jar of Asparagus Pasta sauce as well! If you buy more than one bag, you'll be entered multiple times!!
  • Order some Cider Keg Sparkling Cider for Thanksgiving dinner! Now $1 off each bottle or $5 off each case!! (Reg $6.50 and $60)
  • Fresh Apple Cider from a blend of organic apples was pressed by Apple Creek last Friday. You can get it in 1.3L bags (like milk bags). This cider also freezes beautifully to enjoy all winter long!

This Semi Sweet Chocolate Turkey made by Katharina of Anna Tolazzi Chocolates would look amazing on your Thanksgiving table!

Semi-sweet with milk and white details, approx. 800 g of Fair Trade Organic Chocolate!

We are auctioning off this turkey to the highest bidder and 100% of the proceeds will go to the local food based charity of your choice!

Bidding starts at $30 and bidding in even dollar amounts is required.

The auction runs until 11:59 PM on October 6, 2011.

The procedure for bidding is as follows:

1.    One turkey will be auctioned.
2.    Place your bid for the turkey on this Blog post as a comment, the COME BACK to increase your bid and remain the high bidder. Be sure to include your name (and contact information if you are not a member at Bailey's Local Foods).
3.    Bids will be accepted up until 11:59 PM on October 6.
4.    Pickup is at Bailey's Local Foods, First United Church Waterloo on Friday, October 7th between 3:30 and 7:00 pm. Payment can be made by cash or cheque at that time.
5.    You do not need to be a Bailey's member to bid on this item.
