A Message from Maryrose:

Hello Local food friends,

Is it cold enough for you? We made a trip to the grocery store a few days ago for the first time in nearly a month. I found myself looking at the cut flowers and yearning for a beautiful bunch of flowers from Lena Burkhart. I then started to think back over the past six months and all the colourful fruits and veggies we had the pleasure to offer all of you. As you already know we are moving into our Winter schedule of one pick up day a month until spring. The good news is there are only four more pick ups until we are back to the weekly schedule. I hope it can go by as quickly as the summer seems to pass. Don't forget to stock up and order enough food for the month.

Can you believe that the Holidays are upon us. If you celebrate Christmas, it will be less than a week from pick up on Monday. Have you nailed down your menu yet? In my home we celebrate Christmas on the 24th with a seafood extravaganza. Maybe one day soon we will be able to offer local fish. If you are unlike me as most are and have Turkey for your Christmas feast, don't forget to order yours. We have a choice in frozen turkeys - Snyder Heritage Farms (natural) and Vibrant Farms (organic).

I am so excited to be able to have a cheese tray from Monforte to offer all the guest that will be over celebrating the season with us. I think I will serve the cheese with Evelyn's crackers and some delicious cranberry amaretto preserves from From these Roots. I might also serve Tourtiere at room temperature with the cheese tray. It was only a few years ago that I learned about it being a french tradition to serve tourtiere over the holidays. Oh and I almost forgot to order sparkling cider for those who do not drink spirits.

I started and finished my baking yesterday. I have been invited to a cookie exchange which means I only need to bake one type of cookie and come home with many others. If you are running out of time or just don't like to bake, we have many baked goods to choose from.
Karin from Little City Farm has changed the packaging for her teas. As part of the change there is a cost savings which is being passed onto you. Go have a look they are in the 'other' section under 'teas'. Speaking of teas, Miriam Gingrich has dried Mint and Balsam to offer. They are in the vegetable section.

Angie from Fertile Ground has unwashed beets to offer this week. We will also have unwashed carrots from her in the near future. Here is a note she has passed on to us about how to store unwashed root veggies:

Unwashed root vegetables can keep for months in cold storage or the fridge. The dirt on them helps maintain appropriate moisture levels so they don't so easily get either too dry & shrivel up, or too damp & rot.
Keep unwashed roots in a slightly damp medium (wood shavings, sand, soil or shredded newspaper can all work well) - as close to 0°C as possible without freezing. The medium should be just damp enough that no more than 1 drop of water could be squeezed out if you tried really hard. If you don't have any of these available, store in cloth or paper bags (not plastic) & even wrap in an extra layer or 2 of cloth to keep them from drying out but still allow them to breathe.

When I read the email from Angie about storing unwashed root vegetables, it reminded me of a fermentation workshop that Sandor Katz (Wild Fermentation) gave in Guelph a few years back. He talked about Soil Based Organisms (SBOs) and how they are GOOD for us. In his book The Revolution Will Not Be Microwaved: Inside America's Underground Food Movements he writes about SBOs on Pages 116-117 and suggests that you taste a little dirt with your next carrot  - noting also that the most expensive probiotics on the market are SBOs! Since then I worry more about the chemicals in the dirt and less about washing all the dirt out of the cracks of my carrots.

We are very excited to let you know that Barrie Bros. Asparagus Tortilla Chips and Asparagus Dried Pasta are both back on the order form! If they are your favourites, then order away!

Also, descriptions for the cheeses from Monforte are in the works. If you are a dedicated fan of Monforte, you can send us descriptions of your favourites too!

Don't forget that we will have local artisans at Monday's pickup again and will be collecting toiletries for House of Friendship again. Thank you to all who brought toiletries and supported our Vendors at the last pickup!

Voluntary Recall of ALL Pressure canned Soups from Barrie Bros.

To all our wonderful customers,

We are sharing the press releases and emails below from Tim Barrie of Barrie Bros.

Barrie Bros. have voluntarily recalled all of their pressure canned soups. We are happy to take back your unopened jars purchased from Bailey's Local Foods at the next pickup for a full refund.

At this time, we ask that you please join us in supporting Barrie Bros by considering purchasing their other fine products such as Stone Wheat and Vegetable Crackers, Asparagus Pasta Sauce, Asparagus Salsa and many varieties of pickles. Barrie Bros. is a local farmer who is trying to change the food system. Let's help Tim to succeed! After this recall, I trust that if there was any concern with the other products they sell we would be aware of them right away.

We are sending this notice to all members who currently choose to receive our "Standard Notification" emails and will personally email all customers who have ordered Barrie Brothers pressure canned soups through our ordering system. Our apologies if you have received this twice, but your health and safety is very important to us.

Further to the recall of our broccoli soup, as a precautionary measure, we are asking customers and retail locations to return all pressure canned soups the point of purchase for credit.
The soups were manufactured in a Guelph-area food production facility contracted by Barrie Brothers, and it has been determined that there was inadequate processing.
We apologize for any inconvenience and appreciate your assistance with this voluntary recall.

OTTAWA, December 9, 2010 - The public warning issued on December 8, 2010 has been expanded to include other vegetable soup products.

The Canadian Food Inspection Agency (CFIA) and Barrie Bros. Local Food Company 1892 are warning the public not to consume Barrie Bros. vegetable soups described below because these products may be contaminated with Clostridium botulinum. Toxins produced by these bacteria may cause botulism, a life-threatening illness.

The following Barrie Bros. Local Food Company 1892 vegetable soup products, sold in a
744 mL Mason glass jar with a metal lid, are affected by this alert. These products do not have
a lot code or a Best Before date.

Barrie Bros. Local Food Company 1892, Cambridge, ON is voluntarily recalling the affected products from the marketplace. The CFIA is monitoring the effectiveness of the recall.

Hello lovers of local food!

Wasn't the pickup day on Monday AMAZING? We are so lucky to have so much local food in December! Enjoy it while it's here! I went home to get my camera, but never took a photo.

Isn't this a lovely blast of winter we've gotten? Sure, it would have been nice to have some schools and businesses closed like our friends down the highway in London, but lots of snow really makes pick up day less fun.

This will be the last pickup of 2010 with almost a month until the January 17th pickup. We're taking the holidays off and will have the order form ready for you on January 5th. Stock up on all your favourites! Have you planned your holiday meal(s) yet? If you're cooking turkey you have lots of time to defrost the one you pick up on the 20th!

This week's order form is extra special. We have many new and amazing products to offer you. One of them is Monforte cheese! I've wanted to offer it since I became a part of Bailey's but Ruth Klassen took a year off of cheese making to build a dairy in Stratford (Wow!) Even more exciting is we will be taking vouchers from those of you who are subscribers to the Monforte CSA! Obviously, the vouchers can only be used for up to the amount of cheese you purchase (in $5 increments).

Other great items on offer this week are:
  • Paul Bowman is offering his 'LOFT' Strawberry Jam on Sale and he also has greens available!
  • Paul has also decided to grate and freeze his butternut squash so that we can have it available to us further into the winter.Look for it in the 'squash' section under 'vegetables'
  • Golden Hearth Bakery is now offering frozen Pizza dough!!!You can get Spelt, Unbleached and Whole Wheat to make a perfect pizza at home!
  • Did you taste the samples of Evelyn's Crackers? They are truly gourmet and would be wonderful for sharing over the holiday season as gifts or on a tray with cheese and such. Look for them for a special holiday price too!
  • Did you taste the From These Roots jams on Monday? I bet they'd go great with any of the cheeses
  • New Moon Kitchens vegan spelt Cookies are also new on the offering list. So tasty and made with Oak Manor Spelt Flour. They even have a Gluten Free Mackies available!
  • Gift Baskets are gorgeous and great for that person who has everything. Imagine their delight at a lovely array of local goodies!
  • Want to share the gift of Bailey's? Buy your neighbour a one year membership to Bailey's Local Foods and the gift of pear apple sauce too!
Pickup Day Extras
We will have vendors again on December 20th, Thanks to all those who participated on Monday. This is the last call for anyone interested in showing their wares. All table proceeds will be donated to a local food based charity. Let us know as soon as possible. Space will fill up quickly.

Also, we will be collecting toiletry items for the House of Friendship again. Thank you so much for your generosity on Monday!

What came first, the chicken or the egg?
Remember that Eggs are now in the dairy section! Once someone explains why tomatoes are vegetables, then we can try to figure out why Eggs are dairy...

    Hi Local Eaters!

    The house is quiet and I realize that when we have 3 weeks between pickups the fridge can actually get empty (it even got cleaned today). It's time to look to the freezer and all the fruit and vegetables that we put away over the summer and fall. We have some members who in previous years have waited until the official beginning of winter to start enjoying the preserved and frozen goodness of summer. Could you wait until December 21 to start eating your lovely jars of peaches or frozen raspberries?

    We've continued to work on the order form since it opened and there are a few notable additions/changes:

    • The Nutty Bakers have light and dark fruit cake to choose from.

    • Potatoes in 50 lb bags from Ivan Brubacher, washed or unwashed

    • Use a nice bowl and add a Pop a Cob or coloured popcorn
    • Anna Tolazzi has beautiful boxed Hot Chocolate. Katharina also has boxes of pre-wrapped chocolate bon-bons (each is a very tasty piece of art). Great to have on hand just in case. Katharina's chocolate bars are delicious and have stunning graphic packaging. I would love her chocolate in my stocking
    • Golden Hearth has ginger cookies and Belgian crackle cookies. Wrap them in a dish cloth and you have a great gift.
    • Keep an eye out on the Spontaneous table as there are a few other items in the works we should have by pick up day.
    Cheese Please?
    For all you fancy local cheese lovers, we hope to offer Monforte Cheese for the December 20th pickup. We may also accept vouchers from their CSA Program. Stay tuned!

    Helping others
    In January we added the option to donate to a local food based charity on our order form (under 'other'). We are able to issue receipts to anyone who has donated more than $10 as well, so you get a great deal while helping others. We have already donated $1000 in local dried beans to the Food Bank of Waterloo Region though the Canstruction competition (more at http://www.thefoodbank.ca/en/events/canstruction.asp) and it's never too late for you to donate. The donation option is on our order form because last year Michelle shared the struggles she faced when the demand for emergency food at Christmas was greater than ever before. Michelle is asking us to help again in a different way. Please read the following message from a good friend and one of our Volunteers:

    Hi, My name is Michelle and I am one of many volunteers at Bailey's Local Foods. When I am not sorting food on pick up day or ordering many new things on line to eat, I am an employee of the House of Friendship. In my role, I support many families who are living on a limited income, who experience food insecurity and often social isolation.

    With the holiday season rapidly approaching I find myself thinking about our dedication to supporting local farmers/local food and how this philosophy could be extended to helping local people in need.

    In the spirit of giving over the holiday season and staying connected to the theme of all things local, Rachael and Maryrose have agreed to support my idea of collecting basic personal care items for local people in need.

    Items such as toothpaste, tooth brushes, floss, deodorant, socks, shampoo and others are highly needed by the House of Friendship Programs. If this is something you would like to contribute to there will be a collection box for any donations during the Dec 6 and Dec 20 pick up dates .     Local Crafts Too!
    To get ready for the holiday season we would like to invite some local artisans to show their wares at the next two pickups so you can give local items as gifts or buy them for yourself! If you are interested in displaying your own items, please let us know what you have to offer! We will be asking vendors for a $20 table fee that will go to a local food based charity.

    In the spirit of fostering entrepreneurship we would like to invite local children to sell crafts in the new year and through the summer. Think of it as a great spot for a lemonade stand! If you and your children are interested (yes, we need a parent involved), please let us know! We will have one table available at each pickup and will be asking children for a $5 table fee that will go to a local food based charity.

    Holiday Favourites
    We have so many amazing foods that are a treat, especially when the weather gets cold! In addition to the hot chocolate from Anna Tolazzi (It's Katharina's mother's name). We have sparkling cider from The Cider Keg in delicious flavours like peach, raspberry, strawberry-rhubarb and cranberry in addition to apple and golden apple (drier for the more refined palate). These are also great beverages to have on hand during holiday festivities. What's better than a bowl of popcorn drizzled with ghee? You can go simple, organic or gourmet with all the selection from Ontario Popping Corn! For extra fun try one of the Pop-A-Cobs. They can make great stocking stuffer's too! Oh and don't forget about Christmas Fruit Cake. The Nutty Bakers have a light and dark cake to choose from.

    Easy Snacks
    I had some ladies over for a meeting tonight and found that the absolute easiest and tastiest treat to share was a bag of Tortilla chips from McKechnie, some salsa (you have your choice!) and hummus from Green Table Foods. The best news this week is that Doug has begun experimenting with local corn so we may get lucky and have locally made tortilla chips with local corn for the next pickup. I'll keep you posted. The chips, while best when super fresh, do have a three month shelf life, so you can stock up! You never know who will stop by over the Holiday Season.

    Gift Baskets
    Maryrose and Aura came over the other day and put together three gorgeous gift baskets for gift giving this season! We'd love to share the 100 Miler (large), Regional Favourites (medium) and The Sceptic Locavore (small) with you.     Talking Turkey
    Kevin wants you to roast one of his turkeys for your holiday meal. I asked him why we should buy his birds. Here is his response:

    The folks at Pristine Gourmet are likely going to come and sample their wonderful products on Monday. If you haven't yet tried their sauces, vinegars and oils, this is your chance! They're truly gourmet! We had their Blueberry Baco Noir Wine Vinegar on salad greens

    When Marci became a Member at Bailey's she wrote telling us that she hoped that the "business gets so big that you need to hire me to write stuff for you." Well, it may not be *that* big yet, but I have asked Marci to write for us today.

    Here is an inspiring email from Marci for you to read:

    Rachael asked if I was interested in writing an ‘inspiring’ email for the Bailey’s membership.  I was busy wondering how I could be inspiring when it hit me. I don’t have to be inspiring because Bailey’s is.  We get fresh-out-of-the-field produce that is healthier and frankly, prettier, than anything you see in a grocery story.  The prices are great and for every mushroom or head of lettuce we buy, a local farmer benefits.  And speaking of benefits, let us not forget the boon to our environment that comes from buying local.

    The other thing I love about the Bailey’s experience is going to the Church for pick ups. Who will I meet today?  What will I learn today?

    A couple of weeks ago I discovered that 1/2 bushel of apples was A LOT.  I am still trying to make a dent in the proliferation of crunchy Spartans taking up more than their fair share of space in my downstairs fridge.  That same day I found out that rapini is a leafy green that does not in any way resemble the long, slender broccoli-like veggie I was expecting. 

    Recipes?  Everyone is willing to share.  A fellow member taught me how to blanch green beans before freezing and today I spoke with a woman who has actually come up with a  way to cook kale with maple syrup.  Now that is inspiring!

    Marci is a mother, environmentalist, writer and entertainer's agent who is well into her second year as a Bailey's member and can't imagine life without the weekly, biweekly or monthly trek to the church to see what the Ontario countryside has created for us this time...

    For all you peanut butter lovers we again have 500 g jars and 1.5 kg tubs of smooth and crunchy PB. Linda roasted the peanuts and made butter last week from this year's peanut harvest. You won't get fresher peanut butter until this time next year! Maybe a taste test is in order!?

    Also, we have some new sauces from Pristine Gourmet. In addition to their Soy Sauce, we now have Tamari Soy Sauce and Teryaki Marinade. Maryrose says they're really good and I believe her! I keep asking Jason to make them wheat free so that I can try them too. I guess I'll just have to enjoy their wine vinegar instead! Don;t forget to try their local Canola oil and Soya oil too. Jason may come in November to meet you and bring samples to try too!

    Tomorrow is kim-chi making day at my house. Think of all the fun we'll have chopping, slicing and salting veggies in a big old 10 gallon crock (it was my grandmother's)! For all things fermented I look to Sandor Katz and his book Wild Fermentation! There are some recipes on his website at  http://www.wildfermentation.com/ too!

    I have some news to share with you. Nina has decided to leave Bailey's Local Foods to find more balance and time with her family. I truly hope that she will enjoy this next phase in her life. We will still be called Bailey's Local Foods and what you see as a Member shouldn't change too much. You won't be seeing emails from Nina anymore, but you will likely continue to see her on pickup day.

    Bailey's Local Foods will continue to bring you the best in local food with the help of a new partner - Maryrose Ivanco. Maryrose has been interested in Local Foods for years and has been one of our most loyal members - she hasn't missed a week of ordering since she started! Her love of local food and her business background will be an amazing asset to this business and help us in our goal of being sustainable.

    There is a message to you from Nina below. When I became a member of Bailey's Local Foods in May of 2008 on a friend's suggestion, I offered to help organize and streamline processes to save Nina some time, never knowing that one day I'd be a partner in the business! This business has certainly grown on me and I am very blessed that I am a part of it today.

    I thank all the volunteers that have helped so much in the past, present, and hopefully future. I thank Nina for having vision and starting this buying club and I thank Maryrose for a future of excellent local food.
    I thank each of you for being a member and supporting local farmers and producers.

    Hello Bailey's Local Foods Members,

    For months now I've been fantasizing about being one of you. I want to be a member of Bailey's Local Foods and enjoy all the good food, without juggling the details and responsibilities of running a business.  I've LOVED this crazy adventure of starting a buying club and I have learned so much about myself (like I'm not good at managing 4,000 details and it makes me irritable to do so).  Bailey's Local Foods would not exist right now if Rachael Ward had not come along and gotten things organized.  Now I have the opportunity to join you as a member as I sell my half of the business to Maryrose Ivanco, who has been our bookkeeper since June.     The buying club is going strong and is ready to grow to the next level.  I'm excited to see the direction Rachael and Maryrose take the buying club. One of the wonderful things about running this business was learning to trust that the right people would arrive when we needed them.  They have! Over and over people with a love of food and farmers and community would show up just when we needed a little more energy and a little more muscle to make this buying club work. 

    If you want me to come talk to your club or group about local food, I'd love to share with you my vision of a relocalized food system and describe how local food saves me from being paralyzed and overwhelmed by the huge challenges we are facing (global warming, pollution, war, food shortages...). I've got a Powerpoint with lots of sexy food photos ready to go for a presentation.  I'm looking forward to hibernating this Winter with more time for my family and for myself. Maybe I can even get to yoga more than once a week!

    Hello Local Eaters,

    Turnips
    The purple topped turnips were a lovely surprise at our house this week. I had ordered them thinking we'd put them in soups but then Matthew served them peeled and thinly sliced as a raw vegetable and we all loved them! They were so sweet and tender. Kind of reminded us of kohlrabi. So if you're looking for a refreshing raw veggie as we head into a long winter where the selection of fresh vegetables is limited - try a turnip.

    Carrots
    The carrots are also a delight these days. The frost has made them sweeter and they just snap in the mouth so easily. As soon as Eva's carrots are gone, Miriam promises that she has enough rows to keep us in carrots for at least a few weeks. Then Lester and Irene and their neighbours have agreed to store a ton of carrots (literally!!) in their cooler for us to buy all winter long. I've never ordered a ton of anything. It was a bit intoxicating. I wonder what a thousand pounds of carrots looks like. Well, I guess that'd be 100 of the 10lb bags. Okay, I can begin to imagine that.

    Butternut Squash Lasagne
    I was inspired by recipes for Butternut Squash Lasagne online this week. Of course I couldn't stick to the recipe so I don't know what it really tastes like. Instead of using lasagne noodles I used corn tortillas and added kale and black beans which it didn't call for. My five year old loved it but the two and eight year old said they'd rather go hungry than eat it. Turns out it was a texture thing. Matthew pureed the lasagne (would never have crossed my mind) with milk and made it into a soup which they both enjoyed. Lasagne soup. Mmmm : ) Should I tell them now or later I made TWO lasagnes and put one in the freezer for next week? Next time I want to try really following the recipe. The bechemel sauce is a lovely creamy touch to it. Plus a red sauce (red sauce on top and bottom and bechemel in the middle layers).

    Winter local foods
    I hope that you will see local foods as a fun adventure this Winter and not as a dour limitation. You can still buy all the fresh foods you want from the supermarket!     I hope that you have eaten through any Thanksgiving leftovers by now and your fridge is emptier than mine was last weekend! Tonight we had turkey enchiladas with some leftover turkey, corn tortillas from McKechnie, some red bell peppers and the last of the tomatillos from the garden! It was so tasty served with Creme Fraiche and Asparagus Salsa!

    Nina mentions Napa/Chinese cabbage below. I'll be buying some to make a year's worth of Kimchi. It's a Korean staple - think sauerkraut, but with garlic and ginger and usually quite hot too!. Unfortunately there is a Korean shortage of cabbage this year causing prices to rise to as much as $14 per head (they were about $2.50 last year)! The Government is even stepping in with subsidies and bringing in Cabbage from China!     The highlight of my week was the first of this year's chestnuts! Thursday morning I roasted them and sat on the couch enjoying them nice and warm with a friend and my kids. These chestnuts are smaller than those you'll get in the store, but they are so much sweeter and fresher! All our nuts come from Grimo Nut Nursery in Niagara-on-the Lake. Isn't that amazing?     Now for some tips on getting to the meat of these nuts:

    How to prepare and eat Sweet Chestnuts:
    1. Eat fresh using a paring knife to cut off the skin and fibrous covering
    2. Boil - Place sweet chestnuts into a pot with cool tap water. Cover pot while boiling and stir occasionally on medium high for:
      • medium size - 10-12 min
      • large size 15-20 min
        Using a slotted spoon scoop out a few nuts at a time and as soon as they are cool enough to handle, but still hot, cut them in half and pop them out of their skins.
    3. Roast - First pierce the skin to allow hot air to escape while cooking. Use a sharp paring knife to cut a slash or an "X" through the skin, but not the nut meat. The larger the cut the easier it will be to peel.
      • Chestnut Pan - Roast them by shaking the pan over medium heat for 20 minutes.
      • Microwave oven - place a dozen chestnuts around a microwave plate and cook on high for 4 minutes
      • Oven -  Place chestnuts on a cookie sheet and sprinkle with water. Bake at 400 degrees F for 15-20 minutes. Place one uncut chestnut on the sheet with the others. When it "pops" they are ready to eat.

    I would take this opportunity to say "thanks" to you for your continued support of purchasing fresh, local, organic vegetables again this summer.  Here at Kingwood Farm we take pride in what we grow.  Farming has its challenges at times, but it also has it rewards. Challenges can be not knowing if it will rain, or if it will be too wet a summer, or too cold, too hot, things we cannot control.  But as a farmer another season means another opportunity.  Even though I was disappointed in losing most of our tomato crop to blight, especially after watching and nurturing the little seedlings grow into mature plants and produce fruit (you become attached to them) we have been thankful for the bounty of other produce.  These are the rewards, especially our squash and pie pumpkins have done well.  You, our customers are our reward! As I help to package the orders it gives me a good feeling that we are able to produce food and be able to share it with others in our community.  We hope you have been enjoying the fresh produce as much as we are, butternut squash soup has already been made, and last night I cooked up Kabocha squash, I want to make soup with it like Nina shared in an earlier email, it sounds so yummy!

    So as the days get shorter and weather cooler, another season is upon us.  I am looking forward to soon harvesting our baby spinach and lettuce greens (we have had some little taste testers) growing in the greenhouses, you should be seeing it on the order form in the coming weeks.

    Hello Local Eaters, Movers and Shakers,
    With my belly still full of leftover dutch apple pie, I sit down to write a letter to you for the order form for the Friday Oct 22 pick up.  Our last Friday pick up before we switch to Monday pickups for the "winter."  It's not really winter, we know. We need to switch pick up days so that the church can use the church on Fridays for the Out of the Cold program. Some members love Monday pick ups instead of Fridays. We hope that you'll mark your calendars and shift with us to a different schedule. We'll be printing winter calendars again for you that you can request with your order (look in the 'other' section). Right now mark Oct 22 as the last Friday pick up and November 1 as the first Monday pick up.  The ordering window for the winter will continue to end on Tuesdays, but we hope to open it a bit earlier also!

    Thanksgiving Feast Outdoors
    Sigh. What a Thanksgiving weekend.  It feels like we need another ritual just to give thanks for such a balmy and beautiful Thanksgiving weekend.  I know I sounded like I was making small talk as I exclaimed and gushed over the weather but it was sincere awe and gratitude coming out - not a lack of other things to talk about.  We actually ate our Thanksgiving supper outdoors on Sunday! We set up three long tables in a row in the driveway and dined in bliss.  Long outdoor tables laden with good food reminds me of Babette's Feast. I should watch that again.  Our turkey from Snyder's was delish and the two pitchers of gravy made everyone happy.  Gravy is so easy to make! I should make it more often. 

    Frosted Spinach
    Today we were eating spinach from Paul and Saloma Bowman and noticing how sweet it was. It must've had a touch of frost to taste so sweet. Many people don't think of Fall as a green salad season but our clever farmers know that if they start their lettuce and spinach at just the right time in the summer and protect it from too much heat, both will happily grow into the late Fall.  Lettuce and spinach love the shorter days of fall and do not bolt or go bitter like they easily do in the spring and early summer.  So when you're thinking of supper menus and lunches for work/school, think of chef salads, taco salads, and spinach salads.

    The Art of Local Squash
    Last January and February I talked to many of our farmers on the phone asking them to grow certain crops for us.  Because we ran out of local winter squash so early last year, we asked  several farmers to grow winter squash for our members.  It's been a good year for squash so we have a nice long list of varieties and quantities to offer you.  If you are interested in the idea of storing food and like how it increases food security and strengthens the local food system (for example, if all households stored 6-8 weeks of food we'd increase our resiliency significantly and be able to better handle surprises that come our way), but you don't have a root cellar, you can still adeptly store winter squash and garlic.  You can experiment with where squash keep longest in your house: under the bed, in a closet on an outside wall, on top of a shelf...  Just keep an eye on the squash and if you see a spot of rot on one, use it right away (cutting off the little rotten spot, of course).

    Recipe idea
    Miriam is really hoping that you'll buy lots of her Chinese/Napa cabbage this fall.  My family loves to make slaws with Chinese cabbage.  My five and three year old eat it enthusiastically while they seem to have trouble chewing regular cabbage.  We like it with a sweet vinaigrette on it (cider vinegar, lots of maple syrup, soy sauce and oil) and toasted sunflower seeds or nuts on top.  It is so simple to make but very satisfying. Add cooked turkey breast to it or goat cheese and it is a meal.

    It's sometimes hard to remember that local foods are not too expensive, imported foods are too cheap. Thank you local eaters for putting your money where your mouth is and supporting local farmers and food processors.  Now I need to go make turkey vegetable soup.
