MMMMMushrooms!
One of my favourite foods that seems to grow well year round is mushrooms. Those Crimini mushrooms are usually so big and juice and the 5 lb box is such a great deal that we order them regularly. We've been going through them a whole lot faster lately - why? Because of a super easy and yummy recipe that I'll share. I blame the good folks that served stuffed mushrooms at a recent community dinner. They were delish!

Stuffed Mushroom Caps:
  1. Preheat your oven to 375 F
  2. Stem the mushrooms (I'd suggest a few per person)
  3. Set the caps aside
  4. Chop the mushrooms stems
  5. Chop an onion or shallot
  6. Mix the chopped mushroom and onion together, Add some oil (or reserved bacon fat for optimal flavour)
  7. Add salt an pepper to taste, maybe even some herbs
  8. Spoon into the mushroom caps
  9. Optional: Top with your favourite cheese
  10. Bake for 10-15 minutes, until warm (or cheese is melty)
  11. Enjoy. Make the kids try one, but don't feel too bad if you need to eat an extra one 'for the team'
While writing down this super simple recipe, I googled what other stuffed mushroom recipes suggest, and many suggest:
  • 2a - brushing the inverted mushroom caps and pre baking them for 7 minutes at 400 F
  • 6a - Sauteeing the onions and mushroom stems before stuffing
  • 7a - Adding ingredients like pancetta/bacon, breadcrumbs, crab meat to the stuffing
All the 'extras' sound super yummy, but sometimes simple is great!

  • Russet potatoes in 2 lb bags from Pfenning's Organic - Awesome for baking!
  • Smoked turkey drumsticks from Stemmler's. Feed the caveperson in you.
  • Popping corn from Ontario Popping Corn Co. You can get their super cool Pop-A-Cob or for a sweet and salty treat sprinkle with salt and Maple Sugar from Snyder Heritage Farms
  • J&D Peters make us pasta and noodles. Have you tried themx yet?
