Eggplant bushels and half bushels
If you are looking for bulk organic eggplant, this is a great time to get it. Please respond to this email if you are interested. Brenda Knechtel has 26 bushels of purple eggplant she wants to sell ASAP this week. They will be $19 per half bushel or $35 per bushel. Tell your friends as we really want to help Brenda out with this.

Friday, August 31 Fruit pickup in UpTown Waterloo
It's the last week for Niagara peaches and the first week for grapes and nectarines so we'll have a bulk fruit + tomato pickup on Friday. Order online and we will send the address to those who order.

PF24 PEACHES
For the past 2 weeks we have been enjoying peaches from the 'Stellar' peach series developed by Jim Friday. This week we have the PF24 peach which is from the 'Flamin' Fury' series of peaches developed by Paul Friday (thus the 'PF' in the name)...Jim's cousin. The Friday family have been breeding fruit since they came to Michigan in 1846 and the farm has been in the family for 166 years! Both Fridays are one of the few private breeders left! Paul and Jim were always competing to create the best peaches! I think they both succeeded. But you can taste for yourself! The PF 24 peach is a large, nicely coloured peach with a firm flesh and is of excellent quality and flavour. It is freestone and is a great all purpose peach - canning, cooking, baking, freezing, drying and as always...fresh eating! Enjoy!

NECTARINES
The nectarines are a high quality fruit with a great shelf life. It is a larger freestone fruit with a smooth deep red and gold skin. The flesh is gold-yellow in colour with consistent texture that is melting and juicy! It is known for it's excellent flavour.

VERITY PRUNE PLUMS

The Verity prune plum is a versatile plum. It is a medium size blue prune plum over a lovely yellow-greenish flesh. It is a good quality plum that is free-stone. They are good plums for cooking, baking, canning and juicing. They are also nice and sweet so they are good for drying and fresh eating. They are a medium sized plum with a dark purple skin.
We do not have any Italian plums this year as they were affected by the odd spring weather. The Verity plum can be used the same as the Italian plums.

BARTLETT PEARS
The Bartlett pear is known for being 'the' pear for canning. When it ripens is has a soft yellow skin, a juicy, creamy textured flesh and gives off a sweet aroma. They are great for eating fresh or adding to salads. Along with being good canners they are also excellent cooked and poached! With the shortage of Ontario apples this year you may want to consider trying pear sauce and pear pie instead of apple sauce and apple pie...

Just a reminder - All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!

HEIRLOOM TOMATOES - Grown naturally in a field that has been fallow for 2 years!
There are 3 varieties of tomatoes still producing......the San Marzano, 'red heirloom' and Brandywine tomatoes. These varieties are available in bulk this week (25 pounds)
  1. The newest addition to the heirloom variety list is the San Marzano - I strongly suggest you go to Wikipedia (or Google it for fun) for a description of this amazing tomato and its' history! Pretty impressive... here is the link http://en.wikipedia.org/wiki/San_Marzano_tomato The San Marzano is a plum tomato with a strong, sweet flavour. Known for its' thicker flesh, thin skin and fewer seeds it is the premium tomato to use for tomato and pizza sauces.
  2. Red Brandywine tomatoes - There are different varieties of Brandywine tomatoes but one site described the Red Brandywine to be the 'original' original Brandywine......now that is heirloom! It's heritage dates back into the 1800's. They are excellent tomatoes for all purposes including canning and slicing.
  3. The name of this heirloom tomato is unknown. We do know the seed dates back as far as Abe Lincoln. So for lack of a better name I used to called them 'Abe Lincoln' tomatoes. It was brought to my attention that 'Abraham Lincoln' tomatoes do exist and are an heirloom tomato! Ours might be these Abraham Lincolns, but since we cannot say for sure I am going to have to rename ours something very creative........like 'red heirloom' tomatoes. :)
SOVEREIGN CORONATION AND MUSCAT SEEDLESS TABLE GRAPE
  1. The Sovereign Coronation grapes have a vibrant deep purple-blue coloured skin. It is sweet and sour with a distinctive musky flavour! They have a thin skin and are seedless! Uses vary from juicing, preserves, jams and jellies, freezing and eating fresh! This was among one of the top favorites last year.
  2. The Muscat grape has a sweet aroma and full flavour. It almost has a slight 'spicy' flavour to it. They are a seedless grape that are fabulous fresh, amazing dried as raisins and people have told me how crazy they were about them frozen and juiced! 

It is truly harvest time.

A Message from Rachael:

Why isn't the on the order form this week?
If you went looking for tofu on the order form I need to apologize. Since we are closed next week and it is a fresh product we will not have it this week but will again in September! We do our best to order the freshest product we can and eliminate waste by selling all of it as soon as we can. This keeps our prices as low as possible for you while giving more to the farmers and suppliers we work with. There are suppliers like Green Table Foods that we bring in every two weeks or so (including this week!) We do this to make sure that we meet minimum delivery amounts and reduce shipping costs. I'll try to work on a posted schedule for these items so that you know when to stock up. Also, if you are looking for something in particular, lease ask! We are more than happy to help you!

Peaches - White Lady Peaches and the last week for peaches

Well, all good things must end, and this is the last week for our peaches. Luckily we've saved the best for last! These free stone peaches from the Flamin' Fury Series (as I talked about in the last email) have it all. They are freestone with a great taste and are great to preserve. Also, we have the amazing White Lady peaches which seem to disappear in my house.

WHITE LADY PEACHES
Here they are! The White Lady peach is a large, firm white fleshed peach with a deep wine-red skin and is VERY popular with the people who dehydrated their peaches. It is a sub-acid white flesh peach which makes it seem even sweeter! I bought my dehydrator based on tasting one of the dried White Lady's. It was delectable! The White Lady is fantastic just for eating too!

This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. August...
The nights are getting cooler and you know it's the end of August. Growing up, this was the time that my family (with two parents who were teachers) went south for a week before reality set in and we were all back in school. I'm sorry to remind you that it's coming. Eva and Rene have land in Dunnville that has the Clapp and French Barlett pears we usually would have already offered. The Dunville farm was affected by the spring warmth/freezing weather.
We expect to have Bartlett pears this week as they are on the 'home' farm which did not get hit with the freezing temperatures and frost.

We have hit the peak of our freestone peach season and are starting to see the final varieties coming in. 'Freestone' means that the flesh comes free of the pit easily. All the freestone peaches are great for cooking, canning, freezing, dehydrating and jams.

ALL STAR PEACHES
The All-star is similar to the Coral Star as they come from the same 'Stellar' peach series developed by a private peach breeder. The All-star peach has a golden skin covered with a bright red flush and has a firm yellow flesh. Peaches from the 'stellar' series are famous for not turning brown after it is cut. It is a high quality freestone peach that is excellent for canning, cooking, baking, drying, freezing and eating!

PF24 PEACHES
These peaches are from the 'Stellar' peach series developed by Jim Friday. Eva and Rene grow traditional tea roses along with antique roses which are very popular in Europe! The antique roses look similar to what you used to see in grandmother's or even your great grandmother's garden! They are varieties of old that are being reintroduced by Eva and Rene.

A Message from Rachael:

Tonight I asked Maryrose what I should write about. She's says that "everything in her house is amazingly yummy this week!" and I agree. The pickups at First United and in Breslau on Friday were packed with amazing veggies, beautiful flower bouquets, bread, cheese, meat and so much more.

What did you most enjoy from Friday's pickup? We've been loving the peaches in my house. They are great for breakfast or really any time. We had an amazing dessert with peaches and strawberries on Sunday. Who knew that we would get local strawberries in August this year!

Back to the peaches. I keep forgetting to tell you about the best way to care for those luscious peaches until they are ripe and ready to eat or can. To prevent bruising, peaches are not completely ripe when picked and shipped. Once you get them home, spread the peaches out on newspaper on their side or bottom (not stem down) and not touching each other and they'll ripen over the next few days.

My neighbour canned a full box of peaches this weekend and she shared a handy conversion with me on Sunday. One whole box of peaches (minus the peaches that were too tasty to can) made 14 jars of sliced peaches. I'm sure they will taste amazing in February!

Speaking of preserving peaches, we're getting ready to have the amazing Palatine peaches preserved again this year. Last year we asked that Naamon and Selema and their family preserve the peaches in a light honey syrup (for an all local treat!). Last year's we canned PF24s, but this year we are going to try and get the Coral Star peaches for you! If you would like to pre-order cases of peaches pleas email us. We hope to keep the costs the same this year, but will definitely keep the price the same for those who order now!

The Effects of a Dry Growing Season

We may be getting some rain now, but the effects of the drought on the growing season have hit farmers hard. What will food prices look like as a
result?

Feed for chickens is already up by 25% which means that when you buy free range chickens this fall, you will see a big increase in pricing.

Pasture dried up resulting in some farmers selling off cattle to try and avoid buying expensive hay and other feed. Hay prices have doubled to tripled from what they were six months ago and there is very little second cut.

This might be a good time for you to get a freezer and buy some boxed meats or even purchase meat by the quarter or half. It's the cycle of farming that
when there is not enough vegetative matter growing, there will be more meat and vice versa; Nature's way of making a reservoir of food.

Buying in bulk and ordering in advance helps to keep the cost down. There will likely be another price increase in the fall because, as pasture gets into short supply, cows get expensive hay and grain to help them through the winter.

Traditional Foods farmers feed their livestock with natural products. The supplement program results in nutrient dense meat, and due to its high quality, costs the farmer more. Feed includes Redmond salt, a high quality sea salt with trace minerals; Bio-Lac, a probiotic for livestock; and kelp, which is rich in trace minerals. Chickens also get natural Vitamin E. All these extras keep the herd healthy, minimizing the need for intervention and allowing animals to live a good, healthy life.

Livestock are fed grains and other extras in the winter to help them grow and stay well fed. All feed stuff is GMO free. This means that if you are looking to have grass fed beef, you need to order in
the spring for your order to be ready by fall.

For those interested in what's in the feed, almost all animals get a mixture that includes oats, barley, corn, peas and sometimes some wheat. Cattle and pigs are finished on soybean-free feed. Chickens can also be done that way with pre-orders. All feed is GMO free, but of course!

This freestone peach is unique in that is does not brown when cut making it one of the best peaches for canning and freezing! This may be the only Friday to order the Coral Stars as the next variety will be ready soon!

ROSES

Sigh. I meant to send this reminder on Wednesday, but I didn't. I blame the Olympics and trying to catch up on laundry, and the rain, and... a little girl who just turned one. Time flies! Thank you for sticking with us in this last year with two new babies, and two moms running a business while mothering young children.

You should order. We have so many great things at this time of the year. Not as many as we might have due to the crazy weather, but I spoke with Elvina Bauman and Irene Brubacher earlier today and both ladies were so thankful for the rain and hopeful for the coming crops. "Maybe the next planting of corn will do better" and "this rain will be good for the carrots" they said. I'm so thankful to know these dear people who grow food organically. They are not well represented as a recent article based on the census reports that Farmers embrace chemicals over computers. I'm so thankful for the 1/3 of farmers who do not use synthetic chemicals to grow food. I'm glad that it's easy to find at Bailey's and that the farmers are getting paid fairly. Thank you for supporting us in what we do and our farmers and producers in what they do!

The second item - I thought might be good for your blog - I've had a bunch of questions this year at the farm here about tomatoes that don't always took ripe - they are red all over, but retain a green circle at the top where the stem is. This is called "shouldering". It is largely a function of variety - present in heritage varieties in particular, but hot weather makes it more prevalent. Hence we are seeing more of it this year. But - the interesting thing (as described in the article below) is that the gene for shouldering is linked with the gene for taste. So, modern hybrid tomatoes - have eliminated shouldering, but taste has been sacrificed in the process. What a difference! Interesting reading too! So many people are studying food and presenting us with though provoking articles.

I have a list (usually in my head) of what I want to tell you. Invariably I type the email, hit send, then remember a few things I've forgotten. Let's see how I do tonight:

First I'll tell you what to do this weekend (and a few dates to save):
  • Open Streets UpTown Waterloo is Sunday, August 12 from noon-4 p.m on King Street from John to Central. Check out the details at http://openstreetsutw.ca/
    It's all about sport and style as we celebrate the Olympics AND our uber-fashionable city on August 12. Wear your national colours, and look out for fashion shows, special deals at the Mark Nunes fashion tent, and Street Sales at Waterloo's hottest fashion stores.

    Bring your walking shoes, your unicycle, your Olympic rowboat - whatever people-powered way you'd like to get around. It's the best way to prep for the Olympic Closing Ceremonies (which start at 4pm when the streets open up to traffic again).
  • September 16th you can do it again!
  • After Open Streets, head to Transpire Organics Farm and help weeding on Sunday!
    THIS Sunday, August 12th, 4-7pm, 1044 Christner Rd., Baden. Candace says:
    Sunday is supposed to be sunny and warm again and the soil will be moist so it will be perfect conditions for more weed pullin' (as well as crop growin' :). If you want to come out for a bit to experience the majestic nature of the farm, engage in some friendly conversations, meet new people, and/or connect with nature I encourage you to join us.

A Message from Rachael:

Guess what? It's Tuesday already. That long weekend gets me every time. I need to order for my family while writing his email, so I'll let you know about some of my favourite things including the Early White Peaches! We freeze them and enjoy their sweetness all winter! See below for more on the fruit available from Niagara! Blueberries and peaches together are a dream. The colour and taste combo is one of my favourites. Sunday we will celebrate and have them fresh on cake with ample whipped cream!

The tomatoes are here! You can't get better than local heirloom tomatoes and basil. Add fresh cheese and you're in heaven. If you are interested in larger quantities of tomatoes (or anything, for that matter) for preserving, please let us know and we can make sure they are available!

I thought Saturday's rain was a dream. I remember hearing it fall in the middle of the night and thinking how happy the plants and the farmers would be. It was so gentle and soaking. I felt bad for those camping on the long weekend too (which is why in the morning the dream seemed more real). The comfortable weather on Monday was perfect for sitting with friends in the backyard.

 Things to order this week:
  • So many great vegetables from all our growers! Some were added on Monday, so take another look!

From Mary Jane regarding fruit:
The count down for the number of Fridays left for peaches is on. It looks like you will have at least this Friday the 10th, and next Friday the 17th and then only a 'maybe' for Friday the 24th. We are in the prime of peach season, the pears will be coming soon and we hope to have enough tomatoes to offer in bulk for canning. Knowing this you can plan your canning season accordingly.

RED HAVEN PEACHES
The Red Haven peaches have come into their season! These are the most widely known peach. Tried, tested and true, my bet is these were your grandparents favourite peach! They have a red flush over an orange skin. The flesh is yellow with a bit of red near the pit (lovely colour for canning). It is juicy and sweet! They are fabulous for cooking, baking, canning, freezing, dehydrating and of course, for eating fresh! This is the last Friday for Red Havens.

WHITE FLESH PEACHES
This is one of 3 varieties of White Flesh Peaches that Eva and Rene have. The peach has a rich colour to the skin and the flesh is creamy white. They are very nice for fresh eating and can be preserved just the same as the yellow flesh peaches - canning, cooking, freezing and dehydrating.

BURBANK PLUMS
The Burbank plum is a medium size plum with a red mottled yellow skin. Its flesh is deep yellow and has very good flavour!

Just a reminder - All the fruit we get from Eva and Rene are 'tree run'. We do this to avoid the sorting station that insists on fungicidal baths, fuzz removal (peaches) and paraffin wax coatings!. This means some fruit will be larger and some smaller, some more ripe and some less ripe all in the same box. Eva and Rene let our fruit ripen on the tree much longer than if they were to pick it for the shippers! The shippers want green fruit and we want tree ripened fruit!!

HEIRLOOM TOMATOES - Grown naturally in a field that has been fallow for 2 years!
The tomatoes are starting to come on strong now. We have added a 5th variety to the list as the Roma heirloom tomatoes are ready.
We are hoping to sell the tomatoes in larger quantities - 25 pounds (about a half bushel) - if the volume allows.
  1. The newest addition to the heirloom variety list is the San Marzano - I strongly suggest you go to Wikipedia (or Google it for fun) for a description of this amazing tomato and its' history! Pretty impressive... here is the link  http://en.wikipedia.org/wiki/San_Marzano_tomato The San Marzano is a plum tomato with a strong, sweet flavour. Known for its' thicker flesh, thin skin and fewer seeds it is the premium tomato to use for tomato and pizza sauces. We have San Marzano tomatoes in 3 litre baskets to start. If they come in great volume we hope to offer them in bulk later in the season.
  2. The Purple Russian tomato is more the shape of a large Roma tomato except that it is purple in colour. Very pretty in a salad and they dehydrate well! (small amount available for now)
  3. Red Brandywine tomatoes - There are different varieties of Brandywine tomatoes but one site described the Red Brandywine to be the 'original' original Brandywine......now that is heirloom! It's heritage dates back into the 1800's. They are excellent tomatoes for all purposes including canning and slicing.
  4. The name of this heirloom tomato is unknown. We do know the seed dates back as far as Abe Lincoln. So for lack of a better name I used to called them 'Abe Lincoln' tomatoes. It was brought to my attention that 'Abraham Lincoln' tomatoes do exist and are an heirloom tomato! Ours might be these Abraham Lincolns, but since we cannot say for sure I am going to have to rename ours something very creative........like 'red heirloom' tomatoes. :)
  5. Roma tomatoes are the most widely know plum tomatoes for use in canning sauces. It is more oval in shape, has a thin skin with a thicker flesh and few seeds. You can change your email settings at https://www.100milesystems.com/baileyslocalfoods.ca/account.php

A Message from Rachael:
Loooong weekend!!
Are you ready for the long weekend? Did you start a little early? I'm always amazed how easy it is to add a few things to my order on my phone when I'm on the go. We'd love to hear any tricks you have for ordering on the go!

I want to remind you again that there is no pickup on Friday, August 3rd and that the order form is open for pickup in Waterloo and Breslau on Friday August 10th.

Have you been enjoying the peaches? My family have eaten them straight, in smoothies on salads, fried in the frypan and served with eggs and bacon or grilled on the BBQ. Aren't they versatile? The next peaches we will be getting are freestone. I should be able to tell you the exact variety early next week but I have some info on the possible varieties below. As well, there should be plums and the lovely roses that have been grown in Niagara by Eva and Rene.

This is prime season for preserving. Do you have plans to put away the best of the season? I took a break last year, but I'm looking forward to restocking our pantry shelves in the coming weeks. If you are looking for any fruit or vegetable in bulk, just ask and we will try to find them!

We have about 3 weeks left before the canning/preserving season will be over! The free-stone peaches are in their glory and the pears will be soon. Knowing this you can plan your canning season according to your holidays.

HARSON PEACHES
Last year this was the most popular peach. All of our peaches are great but the Harson peach stands out with an amazing taste, aroma and texture. It got rave reviews from you too.

The Harson peach is a sweet, firm, medium to large size freestone peach of excellent quality. It stands up very well for canning and cooking. It is a great peach for dehydrating and freezing as well. Bred at the Harrow Station here in Canada it is considered to be the the Canadian Red Haven! Ever since the Red Havens were discovered back in the 30's in the United States, research stations have been trying to imitate, duplicate and create trees like the Red Haven that will survive in different climates. This is one of the varieties Agriculture Canada has developed....but of course, they cannot call it Red Haven.
