It seemed like as soon as I pressed send on the last email there were more things to tell you and one I forgot.

More Cheese!
I thought I listed all our cheese suppliers, but I forgot the goat cheese from Mornington Dairy and C'est Bon that is available through Millbank and our newest cheese supplier: Primeridge Pure! http://primeridgepure.ca/. If you have experienced this yet, you can try some very tasty cheeses from their Holsteins in Markdale! Be sure to look for their Grey Rush cream cheese type spread (natural, or with herbs or hot chili peppers) which is lovely on a bagel, their Fresian Falls feta for your salads as well as curds for munching or extra tasty poutine. They are listed as fresh cow's milk cheeses! in the cheese section under 'dairy'.

Organic Chicken
In addition to the Nutrient Dense, GMO Free beef, pork and chicken from Traditional Foods, Gayl has arranged for Organic whole chickens and breast portions from Field Gate Farms.

A few more Love Bites
I just got an email from Toni at New Moon to say they have freshly baked Love Bites still available. We will be sure to have a limited amount for you! These are made with cocoa, chocolate chips, chipotle pepper, and cinnamon for a blend of spicy and sweet.

A Message from Rachael:
I've been thinking about writing this email for days. I just haven't taken time in front of the computer to write it down. So, while Daddy is reading to the older two and I have a six month old asleep on top of me. I'm not going anywhere, and now is the time to type.

Local Book Launch!
Speaking of writing, did you know that we have a writer in our midst? Carrie Snyder is a Bailey's member and her second book The Juliet Stories has just been released (and from the early reviews it's WONDERFUL)! Maybe she will come to a Bailey's pickup in Waterloo sometime soon so that she can chat and sign some books for us while she picks up her order! In the meantime, she's having a book launch this Saturday and she said I could invite you! It's Saturday night at the Starlight. She's even serving Luke's tortilla chips - yum! Carrots or Carats?
OK, Back to the food... So it seems like we're close to the end of the stored organic carrots. This would be a great time to store some for yourselves if you have room in your fridge or cold cellar. The juicer grade carrots from Pfennings should be available for a while longer and we'll do our best to bring you carrots if we can find them - sometimes it's like finding gold!

Cheeses Murphy!
I probably shouldn't use that title as it is the name of the midnight gourmet grilled cheese stand at the Princess Cafe on weekends, but with all the great cheese we have to offer you could make a pretty awesome grilled cheese sammy for yourself any time of the day or night. Cheese is addictive, so I apologize in advance if your are trying to kick the habit.

A regular favourite are the cheeses from Millbank Cheese. From mild to 6 year old cheddar, as well as lots of other varieties in conventional cheese as well as select organic offerings you can't go wrong. Do you prefer the ethnic cheeses from Local Dairy? Paneer, Halloumi, as well as Creme Fraiche, Crema La Vaquita and more! Don't forget Monforte Dairy and their artisinal cheeses from Stratford (Yes! We take Monforte vouchers for those of you who are CSA members!) They took a break from cheesemaking in January, but many of their cheeses are back now. If you are looking for something specific that we haven't yet offered, just ask!

Do you love the goodness of the cheese from Gordon's Goat Dairy? This would be a great month to stock up because their delivery dates will not allow us to order from them until May (email me if you are desperate and I'll see what we can do to help)! The awesome news is that their cheese will keep very well for months! (Yay cheese!) I asked Bethany to send a little note to add to this email and she sent that plus a couple of recipes for you! Thanks Bethany!

Hi all at Baileys.
Just wanted to remind you that our aged cheddar is aged naturally not chemically. It is aged to perfection under the watchful eye of the cheese maker (for the full year). People are really enjoying the Goatserella. It goes on pizza, making it a perfect choice for the health conscious and the dairy intolerant.

I am sharing a recipe and am encouraging you to send in yours using Gordon's Goat Cheese (Bethany's email is gordonsgoatdairy@gmail.com.)

Tomato Soup and Havarti
  1. 1 large tin of cubed tomatoes (or homemade canned/frozen)
    *Here is a great trick: Take vine ripened tomatoes from the garden or farmers market. Cut in smaller pieces put in a freezer container and freeze. I put them in homemade soup or stews.
    *I add no salt as I feel there is enough in the canned tomatoes. But adding herbs would be a nice touch and nutritional as well.

  2. Rinse tin with goat milk, or soy, rice or other substitute. Add one full tin.
  3. Grate in Gordon's Goat Havarti - I use about 1 cup. (You can add less or more.)
  4. Heat on low till soup is warm and cheese is melting.
  5. Serve with homemade bread or rye croutons.
Here is a recipe shared from one of our happy customers:
Katrina used this recipe for her annual Christmas eve fondue, with goat's milk. It tasted AMAZING!! Also, the chili-flavoured cheese is great on pizza.

Fondue
Ingredients
  • 1 teaspoon (5 mL) olive oil
  • 3 strips bacon, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons (30 mL) flour
  • 1 1/2 cups (375 mL) milk
  • 3 cups (750 mL) grated goat's milk Mozzarella
  • 2 cups (500 mL) (450 g) fresh goat's cheese
  • Pinch nutmeg
  • Pinch cayenne pepper
  • Pinch sea salt and pepper
  • 2 tablespoons (30 mL) fresh chives, finely sliced
Directions
  1. Heat the oil in a medium-sized pot over medium heat and sauté bacon until golden and crisp. Transfer the bacon to paper towel to drain, leaving the tasty drippings in the pot. Add the garlic, sautéing in the bacon drippings for 1 minute until fragrant.
  2. Stir in the flour, forming a roux, and cook stirring constantly for about 1 minute. Slowly incorporate the milk while stirring to prevent lumps. Gently bring to a simmer. Season with the salt, pepper, cayenne pepper and nutmeg; then slowly incorporate the cheeses while stirring, waiting until each is melted before adding the next one in.
  3. Transfer to a pre-heated fondue pot and keep warm. Garnish with the crisp bacon and fresh chives and enjoy.

Come and learn more about planting seeds and caring for them, collecting them at harvest time to save for next year, and other topics related to seeds and gardening. There will be master gardeners available to answer questions, seed vendors, local community groups, other vendors, and yours truly. I hope to see you there if you can make it!

Hello Folks,

How are you enjoying our barely freezing winter? Rachael and I were chatting a couple of days ago and she mentioned her concern for the maple syrup this year. I wonder what other effect a winter like this will have on our local produce.

Speaking of maple syrup, we tried to make maple taffy (http://en.m.wikipedia.org/wiki/Maple_taffy) last week when we actually had some snow! It didn't completely work but it was delicious none the less. That reminds me, I need to replenish my maple syrup. I think I am going to order double so I can try to make the taffy again. Snyder Heritage Farms uses organic production standards (though they are not certified) to bring us Maple Syrup in Light, Amber and Medium grades. It can be found in the 'syrup' section under 'other'.

Believe it or not, I discovered a product I haven't tried before. I make it a point to try as many of our products as possible. I like to know first hand what we are offering. I for the most part am not a big fan of breakfast sausage. I have never ordered it before for that reason. There was a package left behind by Traditional Foods. I decided since there wouldn't be any bacon until the next batch of pork was ready, to give them a try. They were delicious. I am pretty sure they will be a standing item in order going forward. (Rachael's kids agree!)

My son Otis has decided the new nacho cheese flavoured corn chips from McKechnie are his current favourite item. I didn't even get any from the last order. He ate the whole bag. They were a great snack to send in his lunch. We eat a lot of quesadilla's, burritos and fajitas at our house. I don't know what we would do if we couldn't get the whole wheat tortillas from McKechnie. If you haven't tried them before I highly recommend them. We haven't looked back since. Every single product from McKechnie is absolutely amazing.

I am very excited to plant a garden this year. Last year I managed to get all the plants in the ground but that was about it. It became a casualty of my pregnancy. Sarah's Kitchen Gardens has seed starting kits in the plant section for anyone interested in starting their plants from seed. I don't have any windows with the proper exposure to sun. Thank goodness she will be selling seedlings too. Check out her 2012 catalogue here!

We are lucky enough to also have Rounds Beans back on the order form this month. I am not sure if we will be offering them again while we are on our Monday pick up days. For that reason I recommend everyone stock up while they can.

We still have some organic ground beef left. Again I am not sure when we will be getting more from Vibrant Farms, but you can always order a package that fits your freezer to get the best of organic, grass fed beef!

Golden Hearth is back on the order form too. Did you miss them? I know I did. I can't wait to get my hands back on their chocolate croissants. I love popping them in the microwave for 10 seconds. The chocolate becomes all melted and gooey.

Mmm... I am getting hungry writing this email. I think I need to go find a late night snack...

A Message from Rachael:

Food is important and all, but people are more important. I want to let you all know that our dear Wendell - Nina's dad and our trusty right hand man who has been our delivery person and face to farmers and general awesome guy from the start of Bailey's Local Foods - is awaiting bypass surgery on Tuesday afternoon. Please keep him and his entire family in your thoughts and prayers. We can't wait to have Wendell back at Bailey's!

Now back to our regularly scheduled reminders...
You have one more week to order - well, except for the yummy goat cheese from Gordon's Goat Dairy. We need to send them the order by Wednesday morning.

Gordon and Bethany have two new types of cheese - Goat mozzarella and Goat parmesan! I asked Bethany for some more info on them and this is what she sent:

Our Goasterella is made with a mozzarella's recipe only using goats milk and a few tweaks from the cheese master to make it a light tasting cheese that strings when melted. Our Goatasan is made along the lines of Parmesans cheese only using goat milk. It is going to be an aged cheese to reach its full potential.
Cafe Crepe in Elora loves the Goasterella he cooks with it, as well as the C-line Pro, he adds it to his crepes.
Also the head chef at Beaver Valley Ski Resort is also adding our cheese to his menu for Jan. One is going into his salads. So we are waiting with excitement to get his reviews.

Spring Seedlings!
Along with so many of our farmers, Sarah's Kitchen Gardens is planning her seed plantings for this year. We will have Sarah grown seedlings available on May 15th and the first June Friday pickup!! If you want to see what was available last year check out sarahskitchengardens.com/plants/ and email her at sarahskitchengardens@gmail.com to make suggestions!

Speaking of choice, many of our farmers are asking what YOU want grown this year! What items do you want to buy at Bailey's this spring, summer and fall? Please respond ot this email if you have suggestions so we can pass them on to the farmers who grow amazing goodness for us!

These are events that are from the calendar of the Waterloo Region Food System Round Table Also, this weekend is the 2012 Guelph Organic Conference! There is a free ORGANIC EXPO in the Guelph University Centre - Main Level & Basement Level (known as Peter Clark Hall): Saturday, January 28, 2012 - 9.00 am - 5.30 pm and Sunday, January 29, 2012 - 10.00 am - 4.00 pm.

Hello everyone!

Ordering is now open for the February 13th pickup!

There are some items that you will need to order early if you want to be sure to get them. These include:
  • The amazing goat cheese from Gordon's Goat Dairy. We're hoping to introduce their "Goat"zarella (Goat mozzarella that Gordon has started making recently). Also, due to the amazing response to the cranberry havarti they will continue making it with one small change - they will add MORE organic cranberries from now on! Be sure to order before January 31!
  • New Moon Cookies - Order before January 30 to make sure we will have your favourites in stock. Did you know that New Moon bakes a special cookie only for the month of February? LoveBites are our Valentine's Day cookie. Made with cocoa, chocolate chips, chipotle pepper, and cinnamon - a blend of spicy and sweet. They are available for this pickup only! Like all the New Moon Cookies they are vegan and nut free!
  • Rounds Beans - Stock up on Dried Beans. Steve and Dianne like a bit more lead time to prepare your order so add them to your shopping cart sooner than later!
Maryrose found that there were so many preserved items she needed to restock this month. "Peaches were first on her list. They have been eating the delicious peaches we had canned from Orchard Hill as their late night snack. They are so good over yogurt."

Speaking of preserves, Tim Barrie of Barrie's Asparagus has some new items and is offering 10% off for this pickup!

Almost all of the veggies we are eating have been stored for us by our wonderful farmers. This means there are limited quantities of everything available. The warmer weather this winter is also affecting the supplies. If there is something you are interested in be sure to order it this month as we can not guarantee it will be available in March.

As the days get longer (yay!) we will be able to offer greens like arugula and spinach again in limited supply. Since greens are so limited we have Salad Greens and herbs in recyclable clamshells from Pfennings.

We are pleased to announce that our list of Sustainability Workshops for 2012 is now officially posted. Topics include permaculture, organic gardening, cheesemaking, soap making, wild fermentation, preserving, beekeeping, and practical herbalism! Please go to The Little City Farm website for a complete listing of topics, as well as costs and registration details.

This is now the 6th year that we have facilitated sustainability/urban homesteading workshops at Little City Farm. It's hard to believe that during this time we have hosted more than 75 workshops and hundreds upon hundreds of participants! It is so encouraging to see such interest locally in re-skilling ourselves, and building a resilient sustainable community. We hope you will find a topic (or more) that look interesting, and you will choose to join us - we look forward to sharing our space and these topics with you again this year.
