Hello everyone,

Just a quick reminder that the order form is open until Tuesday at 8pm.

Today is lovely! I'm thankful for the sun and the puddles that the kids have been jumping in today. They think it's warm enough for some ice cream!

Last night's dinner was a real treat! Andrew found tamales in the freezer and we had a lovely and easy Mexican meal. The tamales are so easy to steam in the microwave or can be steamed on the stove also. I'll have to order more as well as cilantro and Creme Fraiche or Crema La Vaquita for the next Mexican night! We have lots of dried beans to make beans and rice (which was part of last night's meal) or refried beans. Mmmm!

We are running out of cheese here, so I took the opportunity to clean out the cheese drawer. My fridge has been neglected since having kids, so a quick wipe or cleaning one drawer is a big accomplishment some days!

A few notes:
  • Brenda had some garlic available. There will be heads on the spontaneous table too. March will bring fresh green garlic from Paul again
  • Next month we will be debuting Gluten Free grains milled locally from Jamestown Mills! http://jamestownmills.com/
  • Check out the new flavoured chocolate bars from Anna Tolazzi! I haven't tasted one that wasn't divine.
  • All the Goat Cheeses from Gordon's Goat Dairy are so great. Don't forget to get some!
  • 'Tis the season for popcorn! It's always a hit around here and you can get some from Ontario Popping corn or from Lester and Irene Brubacher.
  • Golden Hearth just increased the maximums on some of the breads that were sold out! More Spelt, Flax and Multigrain now available!
Bulk Organic Beef!
We are very excited to offer you Bulk Organic Beef directly from Vibrant Farms (http://www.vibrantfarms.com/). We're trying to make it easy for you to get a great deal on beef!

There are four bulk options available:
  1. Variety Starter Box - Approx. $50 - Try a variety (no custom orders, about 1-2 of each cut, half a grocery bag full)
  2. Intro Package - Approx. $150.00 ( no custom orders, several of each cut, 1 cubic ft of freezer space)
  3. Quarter Steer - Approx. $600 (limited custom orders , MANY of each cut, 4 cubic ft of freezer space)
  4. Half Steer - Approx. $1200 (full custom order, MANY MANY of each cut, 8 cubic ft of freezer space, suggested "meat swap" or splitting with family
HOW ORDERING WORKS - 3 Easy Steps
  1. Place order for whatever quantity you want through Bailey'€™s Local Foods
  2. Set up a time to chat with Melissa at Vibrant Farms about order specifics (cuts, etc.)
  3. Receive order at Bailey'€™s Local Foods on the specified date.
Questions you may have!
Why would you want to buy beef in bulk? Is it really better to buy frozen meat instead of buying fresh? These are questions that I asked Melissa to answer and she has sent these answers and more below:

How Freezer Beef works - choose to go FROZEN
  1. convenient - like a grocery store in your basement/garage/freezer
  2. sustainable - using the whole animal
  3. variety - you get various cuts of meat to use for various occasions
  4. save money and get THE BEST quality of food
  5. support local farmers who are farming properly
  6. just as nutritious - it flash frozen, (so it goes straight from Fresh to frozen) so it doesn'€™t lose any nutrition
  7. you KNOW the farmer its coming from - in meat shops you can never be certain and organic certification requires that you are able to trace the animals back to their source
  8. COST EFFECTIVE
  9. Certified Organic - while it sometimes is ok to have naturally raised or traditionally raised, there are no standards around this, and no third party inspector to verify these farming practices. Many times farmers are farming properly, but it requires a conversation and a farm visit to the farm to see for yourself (and know what your looking for)
  10. Above and beyond organic - we at Vibrant Farms treat with all homeopathics, no drugs of any sort, and we also ensure proper mineralization of the soil and the feed of the animals. When most of our food is lacking in nutrients these days, it is very valuable that we get all our micro nutrients when we can get them!
Tip Of the Day from The Farmers Daughter

When buying Organic Meat - be sure to know where you stand on vaccinations. The use of vaccinations is not banned in organic standards. Be sure to inquire about how your farmer deals with sickness in their herd. Ask about what preventative measures they are taking - for example if they are using mineral premixes, crop rotating, ensuring reduced mould of hay etc etc (there are different standards about Mineral pre-mixes, and often allow for 5% to be non-organic, so ask where they get their mineral from as well). If a farmer is not operating from a preventative paradigm they will at some point likely be forced to use less favourable practices to care for their animals.

Enjoy the rest of the weekend!

Hi Everyone!

It's been a lovely break, but we've missed you!

***
A special note to let you know that we are teaming up with Katharina from Anna Tolazzi to make it easy for you to get a chocolate fix before the next pickup day. Valentine's Day is on February 14th, so why not spoil yourself or a loved one with some AMAZING chocolate. Now, the chocolate is not local... sigh... but the love that goes into making these amazing bon bons and bars is! If you want to pick up a little something special, Katharina is taking pre-orders to be picked up at the Kitchener Market on Saturday February 12th from 7am until 2pm! You can find her on the raised section in the southeast corner. You can get to it by a few stairs or an accessible lift! Even if you don't pre-order, stop by on Saturday and say hi if you're already at the market! She usually has lots of amazing treats!
***

We are in full swing planning for the next growing season. We have been speaking to many of our farmers about what they want to grow and how much they can store for us over next winter so we can bring you local produce all year long. There is some talk about the possibility of early strawberries in Spring of 2012. I know this is a long way away but pretty exciting none the less.

We are always open to suggestions of what you want to see on the order form. Please tell us if we're missing something! We keep asking, but no one wants to grow bananas in Elmira yet...

Highlights for this order:
  • Organic Stewing Beef from Vibrant Farms on sale - $1.50 off per pound!
  • Brenda Knechtel is offering dried chili and habanero peppers
  • Kevin Snyder still has his amazing sale on Whole Turkey Necks and Backs - the BEST for soup! Kevin is also now offering Turkey Hearts, Gizzards and Livers too!
  • Cultured butter (Asli Makhni) from Local Dairy now available!
  • Soiled Reputation has 30 bags of greens available this month. Yay sunshine!
  • Shepherd's Pie from Green Table Foods is BACK! Lots of other new Green Table items too!
  • Golden Hearth is back from vacation and baking specially for us on Mondays. Your only source for 100 Mile Sourdough Spelt bread! I'm a big fan of their macaroons too.
  • Don't forget those lovely Goat Cheeses that Gordon and Bethany of Gordon's Goat Dairy were sampling in January. They are even better melted!

Things to look forward to:
  • A new crop of Maple Syrup in March - the first 'crop'!
  • Seedlings from Sarah's Kitchen Garden in May
  • Spring!!!!

Eat well,
Rachael and Maryrose,

Happy New Year Everyone!

It's been a lovely break and we're starting to work with farmers who are using their winter 'down time' to read through catalogs and buy seeds they plan to plant for the amazing food we will get to eat this summer and fall. If you have suggestions of what you want to eat, please email us and we can ask that is be grown for us!

Also, we are always looking for volunteers for pickup day. If you are interested, please let us know and we are happy to welcome your love of food, people and fun while we change our local food system.

This email will be a bit long to update you on all that is new so we'll start with a quick list and then go into detail if you want to read more about what is available this month.
OK - Now for the heavy reading!

Gordon's Goat Dairy
Bethany and Gordon Edgar started Gordon's Goat Dairy in Wroxeter, Ontario after having too much milk a few years back. All the milk comes from their own goats and are milked on the same farm where the cheese is made - improving the quality of the cheese. They were nice enough to bring samples and we enjoyed them and now want to share these cheeses with you! Our favourite was the C-Line Pro - a soft cheese with added probiotics! All of their cheeses come in three flavours - plain, chives and chile (a nice warmth). Bethany suggested melting the cheese on crackers or corn chips, but we enjoyed tasting the subtle differences between the Gouda, Cheddar and C-Line straight (we didn't try Havarti!) We hope that Bethany and Gordon will be at the January 17th pickup to let you sample their cheeses that are a little different than any goat cheese you have tried before.

Sarah's Kitchen Gardens (formerly Sarah's Seedlings)
Time to think about seedlings! Sarah wants to grow them for you again! She would love to know how many seeds to order. Please take the time to fill out her form. http://baileyslocalfoods.ca/seedlings. Sarah says:

On this form, you can pre-order naturally grown, chemical free vegetable seedlings that I've planned for. You will still need to order again through Bailey's Local Foods when the seedlings are posted in the appropriate weeks; this form will be used to give me an idea of how many seedlings I should grow for the Bailey's group.

The Nutty Bakers
Anna asked if we could handle offering a special on her meat pies this month - of course we said YES!! If you haven't tried these savoury pies already, this is your chance to try a tasty home made meal in one dish. Great for a quick lunch or dinner - sized individually or for sharing! Here is a note from Anna:

The Nutty Bakers would love to offer the members of Bailey's Local Foods our meat pies on special for the month of January. We have enjoyed our first year at Bailey's and would like to thank you for trying our products! You, the customers have also helped us to make a better product by thinking about our ingredients, where they come from and how we prepare them. For example, we used to use a MSG free soup base for the chicken pot pies but now we roast the free range chickens in the oven for 4 hours with lots of herbs and spices. It makes a pure, simple, healthy chicken pot pie. True comfort food!

We receive a lot of compliments on the homemade pastry also, it may have something to do with the butter making the pastry golden and smelling delicious when it comes out of the oven.

Try our chicken pot pie, beef stew, shepherd pie and french tourtière.

Thanks from Mary and Anna
Happy New Year!

Thank you from House of Friendship
We are so thankful that so many of you donated personal care items at the two December Pickups. We have also received two notes of thanks from House of Friendship staff that we want to pass on to all of our members!

From Linda:
Dear Friends at Bailey's Local Foods;
Thank you for the items you collected for the Sunnydale community. They were all distributed in gift bags at our community Winterfest celebration on Friday Evening (December 17). Seventy-five families received these bags and very much appreciated them.
Best wishes for peace and joy at Christmas and in the coming year.
Sincerely,
Linda K.

From Michelle:
I wanted to extend my deepest thanks to all of you that donated personal care items to the House of Friendship during the Bailey's pre holiday pick ups. It was amazing to donate so many items from people who responded to a need in their community. All of the donated items went to families in the Waterloo Region that live on limited incomes and who find the holiday season very challenging both financially and emotionally. Your kindness was truly a gift to many.
Thank you for your support. Please feel free to visit the House of Friendship web site if you have any questions or are curious about the on the many services and programs offered.
Michelle

You have come to the end of the email
Our farmers are not able to grow tender greens in this cold, so we are bringing back living greens from Slegers in Strathroy for tasty munchies. They offer herbs and microgreens as well, so let us know what you'd like to see on the order form!

See you in a couple of weeks,

Be sure to order enough for 4 weeks!

A Message from Maryrose:

Hello Local food friends,

Is it cold enough for you? We made a trip to the grocery store a few days ago for the first time in nearly a month. I found myself looking at the cut flowers and yearning for a beautiful bunch of flowers from Lena Burkhart. I then started to think back over the past six months and all the colourful fruits and veggies we had the pleasure to offer all of you. As you already know we are moving into our Winter schedule of one pick up day a month until spring. The good news is there are only four more pick ups until we are back to the weekly schedule. I hope it can go by as quickly as the summer seems to pass. Don't forget to stock up and order enough food for the month.

Can you believe that the Holidays are upon us. If you celebrate Christmas, it will be less than a week from pick up on Monday. Have you nailed down your menu yet? In my home we celebrate Christmas on the 24th with a seafood extravaganza. Maybe one day soon we will be able to offer local fish. If you are unlike me as most are and have Turkey for your Christmas feast, don't forget to order yours. We have a choice in frozen turkeys - Snyder Heritage Farms (natural) and Vibrant Farms (organic).

I am so excited to be able to have a cheese tray from Monforte to offer all the guest that will be over celebrating the season with us. I think I will serve the cheese with Evelyn's crackers and some delicious cranberry amaretto preserves from From these Roots. I might also serve Tourtiere at room temperature with the cheese tray. It was only a few years ago that I learned about it being a french tradition to serve tourtiere over the holidays. Oh and I almost forgot to order sparkling cider for those who do not drink spirits.

I started and finished my baking yesterday. I have been invited to a cookie exchange which means I only need to bake one type of cookie and come home with many others. If you are running out of time or just don't like to bake, we have many baked goods to choose from.
Karin from Little City Farm has changed the packaging for her teas. As part of the change there is a cost savings which is being passed onto you. Go have a look they are in the 'other' section under 'teas'. Speaking of teas, Miriam Gingrich has dried Mint and Balsam to offer. They are in the vegetable section.

Angie from Fertile Ground has unwashed beets to offer this week. We will also have unwashed carrots from her in the near future. Here is a note she has passed on to us about how to store unwashed root veggies:

Unwashed root vegetables can keep for months in cold storage or the fridge. The dirt on them helps maintain appropriate moisture levels so they don't so easily get either too dry & shrivel up, or too damp & rot.
Keep unwashed roots in a slightly damp medium (wood shavings, sand, soil or shredded newspaper can all work well) - as close to 0°C as possible without freezing. The medium should be just damp enough that no more than 1 drop of water could be squeezed out if you tried really hard. If you don't have any of these available, store in cloth or paper bags (not plastic) & even wrap in an extra layer or 2 of cloth to keep them from drying out but still allow them to breathe.

And a little something from Rachael:

When I read the email from Angie about storing unwashed root vegetables, it reminded me of a fermentation workshop that Sandor Katz (Wild Fermentation) gave in Guelph a few years back. He talked about Soil Based Organisms (SBOs) and how they are GOOD for us. In his book The Revolution Will Not Be Microwaved: Inside America's Underground Food Movements he writes about SBOs on Pages 116-117 and suggests that you taste a little dirt with your next carrot  - noting also that the most expensive probiotics on the market are SBOs! Since then I worry more about the chemicals in the dirt and less about washing all the dirt out of the cracks of my carrots.

We are very excited to let you know that Barrie Bros. Asparagus Tortilla Chips and Asparagus Dried Pasta are both back on the order form! If they are your favourites, then order away!

Also, descriptions for the cheeses from Monforte are in the works. If you are a dedicated fan of Monforte, you can send us descriptions of your favourites too!

Don't forget that we will have local artisans at Monday's pickup again and will be collecting toiletries for House of Friendship again. Thank you to all who brought toiletries and supported our Vendors at the last pickup!

Cheers!
